- Preheat a grill for high heat.
- Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. - Place the beef into a medium mixing bowl. Add the cream, hot sauce, Worcestershire, salt and pepper. With clean hands, mix the meat well. Set aside.
- Next, slice the rolls in half and spread each half with some softened butter. Place the rolls face-down on a skillet over medium heat. Lightly grill the rolls so they're nice and golden. Let the rolls cool on a plate until you need them.
- Heat a skillet over medium-high heat and add the butter. Form the beef mixture into 6 patties and place in the skillet, in batches if needed. Allow each to cook about 4 minutes on the first side, flip them and place a slice of Cheddar on to melt.
- When the patties are done in the middle, place them on the base of the halved buns. Top each with 2 pieces of the bacon and top with the other half of the rolls.
STUFFED BACON CHEESEBURGERS
Steps:
- Combine the jack cheese and chopped bacon in a bowl. Put the beef in another bowl and season with salt and pepper; use a rubber spatula to mix it in. Flatten 1/4 of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; put it in the center of the ground beef. Bring up the sides of the patty over the filling, making sure the cheese is completely covered by the meat. Flatten slightly for a nice patty shape. Set them side by side on a platter in the refrigerator while preparing the grill.
- Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Brush the grates with oil to keep the burgers from sticking. Grill the burgers for 8 minutes per side for medium. (The USDA recommends cooking ground beef until it is no longer pink and the internal temperature is 160 degrees F.) Remove the burgers to a clean side plate while you toast the buns.
- Rub the grill rack with more oil and place the buns cut-side down, toast for 1 minute. Serve the burgers with your favorite condiment and any garnish you like, such as lettuce, sliced tomato, onion, and/or avocado.

- For glaze:

- Preheat broiler to high.
- Place bacon on slotted broiler pan. Cook bacon 10 inches from the heat and cook 3 to 4 minutes on each side until crisp then adjust oven to bake setting for temperature recommended on fries packaging.
- While bacon cooks, make the burgers. Preheat a large nonstick skillet over medium high heat. Mix beef with diced dogs, chili powder, grill seasoning, Worcestershire, 1 teaspoon of hot sauce and ketchup. Form 4 large patties. Add a drizzle of oil, 1 turn of the pan and add the patties. - Place bacon in a large skillet and cook over medium-low heat, turning occasionally, until evenly browned, about 5 minutes. Drain bacon bits on paper towels.

- In a large skillet, cook bacon over medium heat until crisp. One day I planned on cooking burgers for dinner. When time came to make dinner, I didn't feel like a regular burger, go figure. So i came up with this. It went from boring to WOW!

- In a frying pan, start cooking the bacon. While the bacon is frying, cut up the onion and set aside. Finish cooking the bacon and remove and put on paper towels.
- Butter the buns and set aside.
- Drain the skillet that has the bacon grease into a bowl and set aside. (you will use this pan for the burgers).
- Make 5 patties out of the ground beef and place in the skillet. Fry on medium heat until cooked thoroughly.
- In the meantime in another skillet, lightly toast the buns. Set aside.
- By this time the burgers should be ¾ of the way done, add cheese to the top of the burgers to melt. Put the burgers on a paper towel whenever finished.
- In the meantime, pour a little bacon grease in the same skillet used for the buns and add the onions and burger seasoning and saute for up to 3 minutes. Add the BBQ sauce directly to the onions and heat for about 1 minute.
- Dress your burgers, add the patty and cross the bacon on top then add the BBQ onion mixture. Serve right away.

- In a small bowl, mix together curry powder, cayenne pepper, and 2 tablespoons salt until well combined; set spice mixture aside.
- Preheat a grill: If using a charcoal grill, make a fire in your grill. When the charcoals are completely covered in gray ash, hold your hand about 5 inches above the grill grid; count how many seconds you can comfortably leave it there. When you can hold your hand above the grill for 1 to 2 seconds, you have high heat and are ready to grill. If you are using a gas grill, heat the grill for 15 minutes with the lid closed. Before beginning to cook, make sure the knobs are turned to high.
- In a large bowl, using clean hands, mix together brisket and sirloin until well combined; season with salt and pepper. Divide meat equally into 6 balls, and flatten each into a patty about 3/4 inch thick. Sprinkle both sides of each patty with spice mixture, reserving any remaining spice mixture for another use.
- Place burger on grill, directly over heat, cooking for about 3 minutes on each side for medium-rare; top burgers with bacon and cover with cheese during the last minute of cooking.
