ONE-POT BACON CHEESEBURGER PASTA



One-Pot Bacon Cheeseburger Pasta image

When the weather's too chilly to grill burgers, I whip up a big pot of this cheesy pasta. Believe it or not, it tastes just like a bacon cheeseburger, and it's much easier for my young children to enjoy. -Carly Terrell, Granbury Texas

8 bacon strips, chopped
2 pounds ground beef
1/2 large red onion, chopped
12 ounces uncooked spiral pasta
4 cups chicken broth
2 cans (15 ounces each) crushed tomatoes
1 can (8 ounces) tomato sauce
1 cup water
1/4 cup ketchup
3 tablespoons prepared mustard
2 tablespoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese, divided
1/3 cup chopped dill pickle
Optional: Chopped tomatoes, shredded lettuce, sliced pickles and sliced red onion

Steps:

  • In a 6-quart stockpot, cook bacon over medium heat, stirring occasionally, until crisp, 6-8 minutes. Remove with a slotted spoon; drain on paper towels. Discard drippings. , In the same pot, cook ground beef and onion over medium heat until meat is no longer pink, breaking into crumbles, 6-8 minutes; drain. Add the next 10 ingredients; bring to a boil. Reduce heat; simmer, covered, until pasta is al dente, stirring occasionally, about 10 minutes. , Stir in 1 cup cheese, pickle and bacon; cook and stir until cheese is melted. Serve with remaining cheese and, if desired, tomatoes, lettuce, pickles and red onions.

Once you smash your burgers this way, you'll never go back! We top them with all the fixings, including our perfectly balanced special sauce. It's what we consider an iconic burger.

1/4 cup mayonnaise
2 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons pickle relish
1 tablespoon apple cider vinegar
8 slices thick-cut bacon
4 sesame seed hamburger buns, split
2 pounds ground beef (80-percent lean)
Kosher salt
4 thin slices sharp white Cheddar
4 thin slices red onion
8 thin slices tomato
1/4 head iceberg lettuce, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
  • Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
  • Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
  • Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.

5 strips bacon
4 oz cream cheese, at room temperature
¼ cup green onion, thinly sliced
1 cup shredded sharp cheddar cheese
1 lb ground beef
salt, to taste
pepper, to taste
4 slices cheddar cheese
4 hamburger buns, toasted

Steps:

  • In a pan over medium-high heat, add the bacon, and cook until crispy. Transfer to a cutting board and roughly chop.
  • In a bowl, add the bacon, cream cheese, green onions, and shredded cheddar. Mix well.
  • Divide the ground beef into four even portions and shape into balls. Form a well into the center of each, large enough for the cheese mixture.
  • Place a quarter of the cheese mixture into the center of each ball, and enclose inside the ground beef. Gently press each ball into a patty shape, and season both sides generously with salt and pepper.
  • Heat a cast-iron pan over medium-high heat. Once hot, add the burgers and cook for 4-5 minutes on one side.
  • Flip the burgers, and cook for 2 minutes. Add a slice of cheese on each burger and cook for an additional 2 minutes, until the burger is cooked through and the cheese is melted.
  • Remove burgers from pan, and place on top a toasted burger bun. Top with condiments of your choice.

8 oz elbow macaroni pasta
1 lb lean ground beef
6 strips bacon (cooked and cut into pieces)
1 1/2 cup beef broth
1/2 teaspoon Worcestershire sauce
3 tablespoons ketchup
2 tablespoons cornstarch (may use less)
4 ounces shredded cheddar cheese (1 cup)
2 ounces shredded mozzarella cheese (1/2 cup)

Steps:

  • Cook the bacon first, I prefer to cook it on a sheet pan in the oven until it's crispy but you can cook it whatever way you prefer. Drain it on paper towels and cut it or break it into small pieces and set aside.
  • Cook your macaroni according to directions on the pack, then drain.
  • While the macaroni is cooking brown the beef in a large skillet until fully cooked. If after cooking the beef has a lot of fat/liquid/juice left you can pour some of that off, I prefer to use lean beef and keep some of the juice as I think it adds to the flavor.
  • Measure the beef broth,Worcestershire sauce, ketchup, and cornstarch into a small bowl or measuring jug and mix well to combine the cornstarch.
  • Add cooked pasta to the skillet along with the beef broth mixture, stir well to combine beef, pasta, bacon, and sauce.
  • Cook on a medium heat until the sauce bubbles and thickens. If it's too thick for you, thin it out with a little more beef broth.
  • Sprinkle shredded cheeses over the top of the skillet cheeseburger mixture.
  • Cover and cook on very low heat until cheese has melted, about 2-3 minutes.
  • Serve hot.

1 pound sliced bacon, diced
5 pounds ground beef chuck
1 large onion, chopped
¼ cup steak sauce
salt and pepper to taste
1 pound American cheese slices

Steps:

  • Preheat a grill for high heat.
  • Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
  • Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

10 ounces wide egg noodles, as much as you like, I use about 10 oz. dry
1 lb ground chuck
1 lb bacon
1 1/2 cups sharp cheddar cheese
10 ounces tomato soup
salt and pepper
Lea & Perrins Worcestershire Sauce
yellow mustard

Steps:

  • Dice bacon while still partly frozen (cuts easier).
  • Fry until crisp; drain.
  • Fry hamburger meat; drain.
  • Boil noodles; drain.
  • Mix meat and noodles together in pan and season with salt and pepper.
  • In separate bowl mix tomato soup, about 2 tablespoons of mustard and 1 tablespoon Lea and Perrins together. After well mixed pour sauce of meat/noodle mixture and stir.
  • After well mixed pour cheese over the top and cover. Cook on med-low for 10 minutes. Enjoy!
