- In a large bowl, beat cream cheese and sour cream until smooth. Stir in shredded cheeses, 1/2 cup bacon, 1/4 cup pecans, onion, pimientos, pickle relish, salt and pepper. Refrigerate, covered, at least 1 hour., In a small bowl, mix parsley, poppy seeds and remaining bacon and pecans. Spread half the parsley mixture on a large plate. Shape half the cheese mixture into a ball; roll in parsley mixture to coat evenly. Cover. Repeat. Refrigerate at least 1 hour. Serve with crackers.

- Take 2 packages of cream cheese (softened) and mix till slightly whipped.
- Add packet of ranch dressing and mix till incorporated.
- Fold in 1 cup shredded cheese.
- Pour bacon bits in a plate or pie tin.
- Form cream cheese mixture into a ball with your hands.
- Roll ball in bacon bits till covered. Wrap cheese ball in plastic wrap and place in the fridge.
- When cheese ball feels firm, remove and serve with crackers.

A zesty bleu-cheese, bacon, and onion cheese ball. Best served with multi-grain crackers. The recipe I reworked for this cheese ball called for 1 pound of bacon fried, drained, and crumbled. I didn't have time for all that, so used the bacon bits and found them at least as good and less mess. Make sure your cream cheese is really soft, or else it is a little hard to mix well. - Cook the bacon in a large skillet set over medium heat until crispy. Transfer to a paper towel-lined plate. Allow to cool slightly, then crumble and divide in half. - In a large skillet cook the bacon until crisp. Set aside to cool and drain on paper towels. Chop when cool. Drain all but 1 tablespoon bacon grease from the skillet. Add the spinach and cook over medium heat until wilted and cooked through. Sprinkle the spinach with salt and set aside on a cutting board to cool. Chop finely when cooled. Add the onion to the skillet and cook until it's translucent and a tiny bit golden at the edges. Add the garlic to the skillet and cook for 1 minute. Remove from heat. I got it originally from organizedhome.com, but have modified it (because studding a cheese ball with almonds to make it look like a pine cone definitely gets the wow factor, but is a pain in the patootie!).
