POTATO CHIP BACON BROWNIES

Nonstick cooking spray, for the parchment
8 slices bacon
2 sticks (1 cup) unsalted butter
2 cups sugar
3/4 cup unsweetened cocoa powder
2 teaspoons vanilla extract
1 teaspoon baking powder
1/2 teaspoon salt
4 large eggs
1 1/4 cups all-purpose flour
1 1/2 cups semisweet chocolate chips
2 1/2 cups lightly crushed potato chips with ridges

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with parchment, leaving a 3-inch overhang on all sides. Spray the parchment with cooking spray.
  • Put the bacon in a cold, medium skillet, then turn the heat to medium high and cook, stirring often, until very crispy, about 10 minutes. Drain on paper towels and crumble. Reserve the fat in the skillet.
  • Melt the butter in the skillet with the bacon fat over medium heat. Add the sugar and stir until starting to dissolve, about 1 minute.
  • Beat together the cocoa powder, vanilla, baking powder, salt and eggs in a large bowl until smooth, then beat in the butter mixture. Add the flour and stir until just incorporated. Stir in the chocolate chips, half of the bacon and 1 cup of the potato chips. Scoop into the prepared baking pan and smooth with an offset spatula. Sprinkle with the remaining bacon and chips, pressing them lightly onto the surface of the batter.
  • Bake until a toothpick inserted in the center of the brownies comes out with a few crumbs adhering, 25 to 30 minutes. Cool in the pan, then transfer to a cutting board and cut into 16 squares.

BOURBON BACON BROWNIES

1 (20 ounce) box brownie mix (Betty Crocker Dark Chocolate)
water (amt on box)
vegetable oil (amt on box)
1 egg
1/2 cup bacon, cooked crumbled
3 tablespoons Bourbon
1/4 cup Bourbon (reserve for end)

Steps:

  • Follow directions on back of brownie box regarding baking using an 8 x 8-inch pan.
  • Prepare brownie mix according to package instructions. Fold in crumbled bacon and stir in 3 tbsp bourbon.
  • Pour brownie batter into a lightly greased 8 x 8-inch pan. Bake as directed on package or until a toothpick inserted two inches from the edge of the pan comes out mostly clean.
  • Remove brownies from oven and immediately pour 1/4 cup bourbon on them. Cool in refrigerator completely before slicing and serving.

½ cup melted butter
1 cup brown sugar
¼ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Fry bacon in a skillet over medium-high heat until nearly crisp, about 5 minutes. Add honey and stir until the foaming subsides. Remove the bacon with a slotted spoon to a plate to cool.
  • Mix melted butter, brown sugar, white sugar, and vanilla extract in a large bowl; mix in eggs.
  • Sift flour, cocoa powder, and salt together in a bowl; add to the egg mixture. Fold bacon and chocolate chips into the mixture; pour into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 35 minutes. Allow brownies to cool for 20 minutes before cutting into squares.

1 package (18-1/2 ounces) caramel swirl brownie mix (8-inch square pan size), such as Ghirardelli
1/4 cup water
3 tablespoons canola oil
1 large egg, room temperature
1/4 teaspoon ground chipotle pepper
1/2 cup semisweet chocolate chips
1 cup marshmallow creme
1 cup hot caramel ice cream topping
6 whole graham crackers, coarsely chopped

Steps:

  • Preheat oven to 425°. Place a wire rack in a 15×10x1-inch baking pan. Place bacon strips in a single layer on rack. Bake until crisp, about 20 minutes. When cool enough to handle, chop bacon; set aside. Reserve 2 tablespoons drippings., Reduce oven setting to 325°. Line an 8-in. square baking pan with foil, letting ends extend up sides; grease foil. In a large bowl, combine brownie mix, water, oil, egg, chipotle powder and reserved bacon drippings. Stir in chocolate chips and half the chopped bacon. Transfer to prepared pan. 1 cup butter
12 strips bacon, chopped

1/2 cup unsweetened cocoa powder
2 cups sugar
1 tablespoon vanilla bourbon extract
1/3 cup all-purpose flour
1/2 teaspoon salt
2 1/2 ounces bittersweet chocolate, chopped
1/3 cup diced and cooked bacon
1/3 cup pecans, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- by 9-inch pan with butter.
  • Whisk together the sugar and eggs in a large bowl. Whisk in the butter, cocoa and vanilla. Stir in the flour and salt. Add the chopped semisweet and bittersweet chocolates, bacon and pecans and stir to combine.
  • Spread the batter into the pan.

200g dried sour cherries
100ml bourbon
1 tsp cinnamon
50ml maple syrup
6 rashers smoked streaky bacon
your favourite brownie mixture (see Goes well with for our Best-ever brownies recipe)
a little cocoa powder , for dusting

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a small pan, warm (don't boil) the cherries in the bourbon, then leave to infuse for at least 20 mins.
  • Meanwhile, mix the cinnamon with the maple syrup and brush both sides of the bacon with it. Lay the rashers on a rack set over a roasting tin covered in foil and roast, basting occasionally with the syrup, for about 20 mins until they look nicely browned. Take them out and leave to cool completely on the rack while you make the brownie mixture.
  • Follow your chosen recipe to make the brownie mixture and heat oven to the required temperature. Drain the bourbon-soaked cherries and add them to the brownie mixture. Chop the bacon into little pieces (it will crumble very easily) and add to the mixture too, stirring everything together. Bake as per the recipe, then leave to cool completely before dusting with cocoa and slicing into squares.

I created this recipe using whole grain pastry flour from Bobs Red Mill and Olive Oil from California Olive Ranch for a promo I was doing for them on my website 30A EATS. It was a big hit! Any Bacon or Maple Syrup will do, and if you want to leave out the Bacon you can. I love the sweet and salty flavor it gave to the brownies.

1/3 cup extra virgin olive oil
2 large eggs, at room temperature

  • Preparation:.
  • Preheat the oven to 350F Line an 8-inch (20cm) square baking pan with foil and spray foil with cooking spray.
  • Melt the chocolate in the microwave or in a bowl set over a pan of barely simmering water. Whisk in the COR olive oil and set aside to cool slightly.

My friend Cindy told about these brownies late one night. She had seen a similar dessert on the television show Bacon Paradise. So I decided to fool around with the idea a bit. With many trial and error recipes,this is the final product, try it! Bacon + Chocolate= Yum-O!

4 oz unsweetened chocolate
8 tbsp butter
1 1/2 cup sugar
1/4 teaspoon salt
2 teaspoons vanilla extract
2 large eggs
1 cup flour

6 strips of bacon
1/2 cup brown sugar

Steps:

  • 1. Preheat oven to 400 degrees. Put the brown sugar in a medium size bowl. Doing one strip of bacon at a time, put bacon in the bowl and totally coat with the brown sugar. Place the bacon flat on parchment lined baking sheet. Repeat until all are done. Bake for about 12 minutes. Turn each piece of bacon over and return to the oven and bake an additional 12 minutes or until the bacon is well cooked and crisp. Remove from oven and set on rack to cool. Do not use paper towels, ect. the bacon will stick. Chop the bacon into small pieces.
  • 2. Preheat the oven to 350 degrees. Grease a 8" x 8" or 9" x 9" metal pan with cooking spray. Chop chocolate and butter and place in a microwave safe dish. Carefully microwave for approximately 1 minute. Keep checking and stirring because everyone's microwaves are different.Let the chocolate-butter mixture cool slightly then whisk in the sugar, salt, and vanilla. Add the eggs one at a time. Sift the flour and cocoa into the bowl and combine. Sprinkle in bacon bits, stir again, and add to your prepared pan. Bake 30-40 minutes. They're finished when a tooth pick inserted in the middle comes out free of anything but brownie crumbs. Cool, cut, and serve.

BEER, BACON, ESPRESSO CHIPOTLE "LOVE" BROWNIES



Beer, Bacon, Espresso Chipotle

I originally found these brownies @thebeerwench some time back and decided to spice them up with a little Tex-Mex flavor and they have quickly become a big hit. I have served hundreds upon hundreds of them at my salsa demos. They are the perfect guy/girl Valentine treat and when you make them with Cherries on top...well...they are "Tops" in my book.

1/3 cup(s) dark stout beer (guinness), let stand 15 minutes
1 box(es) pillsbury mocha fudge brownie mix
10 ounce(s) package of bacon, fried and ground fine
3 package(s) 1.5 oz. reese's peanut butter cups, chilled or frozen
2 teaspoon(s) unsalted butter
1 teaspoon(s) chipotle chili powder (can sub with regular chili powder)
2 teaspoon(s) espresso powder, instant
1/4 cup(s) canola oil
2 - eggs
1/3 cup(s) texas brew honey roasted chipotle salsa, any heat

Steps:

  • Preheat oven to 350 degrees. Spray a 9 x 11 baking dish with cooking spray and set aside. Using a 9 x 13 will make for thinner brownies.
  • Pour beer into measuring cup and let stand until ready to add to recipe.
  • Cook the entire package of bacon until crispy. Cool and grind to a very fine chop. Melt the butter and simmer the ground bacon in the butter. Be patient and all the bacon will be absorbed in the butter. Set aside to cool. Fine chop the peanut-butter cups; set aside.
  • In a large bowl, mix brownie mix with chipotle chili powder and espresso. With a spoon hollow out a well in the middle of the brownie mix. Whisk oil,eggs, salsa and beer until well mixed. Pour mixture into the well. Stir liquid mixture with brownie mix until well blended.
  • Fold bacon/butter mixture and chopped peanut-butter cups into the brownie mix and stir until well blended.
  • Pour brownies into baking dish and spread evenly. Bake for 30 to 35 minutes. Be careful to not over bake. These brownies will be rich and very fudge like.
  • Serve warm with ice cream and a chocolate glaze or top with a little cherry pie filling drizzled with a chocolate glaze. Try making these in mini Bunt pans and fill with cherry pie filling or glaze with some Valentine Red colored icing.

1/2 cup(s) packed light brown sugar

Steps:

  • For the bacon: Preheat oven to 375ºF. Add bacon brown sugar to a large Ziploc bag and toss until bacon is coated. Line a baking sheet with a wire rack and lay bacon on the rack. Put the baking sheet on the top rack of the oven and bake until crisp, about 15 minutes. Remove from the oven. Let cool, and then chop into large chunks
  • For the brownies: Preheat the oven to 350ºF. Butter the sides and bottom of a 9×13-inch baking pan. Line the pan with parchment paper and grease. In a medium bowl, whisk the flour, salt, and cocoa powder together. Put the chocolate and butter in a large microwavable bowl and microwave in 30 second increments, stirring each 30 seconds, until the chocolate and butter are completely melted and smooth. Add the sugars. Whisk until completely combined. The mixture should be room temperature. Add 3 eggs to the chocolate mixture and whisk until combined. Add the remaining eggs and whisk until combined. Add the vanilla and stir in. Sprinkle the flour mixture over the chocolate mixture. Using a rubber spatula (not a whisk), fold the flour mixture into the chocolate until just a bit of the flour mixture is visible.
  • Pour half the batter into the prepared pan and smooth out into an even layer. Drizzle half of the caramel sauce or dulce de leche around the brownie batter. Sprinkle half of the bacon bits evenly over the batter. Spread the remaining batter on top, and repeat with remaining caramel and bacon. Bake in the center of the oven for 30 minutes, rotating the pan halfway through the baking time, until a toothpick inserted into the center of the brownies comes out with a few moist crumbs sticking to it. Let the brownies cool completely, then lift them out of the pan using the parchment paper. Cut into squares and serve. Store at room temperature in an airtight container or wrap with plastic wrap for up to 3 days.
