BACON LATTICE BREAKFAST PIE
All the creamy, eggy deliciousness of a quiche, but with a rustic look and simple preparation -- and did we mention the crispy bacon lattice topping?

Steps:
- Preheat the oven to 400 degrees F.
- Arrange 5 strips of the bacon in parallel rows on a baking sheet lined with parchment, the edges of the slices touching but not overlapping. Working with 1 strip at a time, arrange the remaining strips perpendicular to the first ones, weaving the strips over and under to form a lattice.
- Spray an 8-inch square baking dish with cooking spray. Roll the puff pastry into a 12-inch square and press into the bottom and up the sides of the prepared dish. Trim the edges that overhang with a paring knife. Whisk the eggs, half-and-half, cheese, 1 teaspoon salt and a few grinds of black pepper in a large bowl until well combined. Pour into the puff pastry shell. Bake the bacon lattice and the eggs until the bacon is just starting to crisp and the eggs are still jiggly in the center but slightly set, about 15 minutes.
- Use two spatulas to lift the bacon lattice and place it on top of the eggs. Continue baking until the bacon is golden brown and crisp and the eggs are set, about 25 minutes. The eggs will be very puffy (they will deflate as the pie rests). Let sit for 10 minutes before serving.

- Preheat the oven to 350°F (180°C)
- Add eggs to the bowl.
- In a medium-sized bowl, whisk the eggs, milk, salt, and pepper.
- Add in the green onions and cheddar, and mix again.
- Pour the egg mixture into the pie crust and bake for 35-40 minutes or until set.
- Increase the oven temperature to 400°F (200°C).
- Lay the bacon on top of the pie and weave to make a lattice top.
- Bake again for 20 minutes or until bacon is crispy. Broil for crispier bacon.

SAUSAGE, BACON BREAKFAST PIE
This is a great fill you up, stick to your ribs till lunch breakfast. Leftovers are great warmed up for late night snack. You need to make two crusts as this will be using a lid. crust recipe is from crisco. so much better than store bought in my opinion. Takes a little extra time, but hey who cares if the results are worth it.

Steps:
- Pie Crust:.
- Add flour and salt in bowl.
- Cut in shortening till flour resembles small peas.
- Add water and knead till dough is soft and pliable.
- Cover in plastic and chill in refrigerator for 30 minutes.
- Filling:.
- While crust is chilling cook bacon and sausage. Do not drain.
- Whisk eggs in bowel with spices till eggs are fluffy. Set aside.
- Putting it all together:.
- Roll out pie crust on floured surface. Should be thin 1/8 in to 1/4 in will do nicely. (I tend to stay on the 1/8 in side.).
- Roll dough up onto your rolling pin and roll out over 9in deep dish pie plate.
- Gently lift up edges and help crust down into the pie plate starting in the center and moving to the outer edges to remove air out from under crust.
- With a fork poke holes in bottom of pie crust. (this helps air escape so it doesn't bubble up in the middle.).
- Flute edges as desired.
- Whisk an egg yolk and brush over the crust. (this is to help seal crust so it doesn't get soggy while baking.).
- Mix sausage and bacon together and put in pie crust.
- Pour egg and spice mixture into the pie.
- Top with extra sharp cheddar cheese.
- Take the second pie crust and use as a lid on the pie.
- Press edges of both crusts together.
- Using a knife cut vent slices in center of crust in an x pattern.
- Brush lid with rest of whisked yolk.
- Bake at 350 degrees F for 30 min or until crust is golden brown.
- A toothpick inserted in center of pie should come out clean if eggs are done.

- 1. Preheat Oven To 425 Degrees F.
- 2. Spread 1 Tablespoon Softened Butter Onto Unbaked Pie Crust
- 3. Sprinkle (Part) Of the Bacon Crumbles & (Part) Cheese's onto crust. Press firmly.
- 4. Beat Eggs with rest of ingredients . Pour Into Crust.

- Preheat oven to 375 degrees F.
- In a small bowl, mix the three cheeses together, set aside until needed.
- Press the hash browns lightly into a greased 9 inch pie pan, to form a crust.
- Sprinkle a 1/2 cup of cheese mixture over the potatoes, top with mushrooms, onion, bacon and broccoli.
- In a large bowl beat the eggs, milk, thyme, salt and pepper together until well mixed and pour over vegetables.

- 1. Preheat oven to 350.
- 2. Brown, drain and crumble bacon.
- 3. Put in bottom of 10\" greased pie plate.
- 4. Top with onion and cheese.
- 5. Put rest in blender for 1 minute.
- 6. Pour into plate.
- 7. Bake at 350 until pie tests done with knife (35-45 minutes).

- Preheat oven to 350.
- Whisk eggs, milk salt and pepper together in large miing bowl.
- Add cheese, hash rowns, green onion and crumbled bacon and stir to combine.
- Lay pie crust in bottom of 9 inch pie dish.
- Pour egg mixture into pie pan.
- Bake for 35-40 minutes or until the quich is firm enough to lay the bacon on.
- remove pie and increase the temperature to 450.
- Weave bacon into a lattice on top of pie.
- Brush each strip of bacon with maple syrup.
- Cover the edges of pie with aluminum foil to prevent burning.
- NOTE: The bacon will shrink a lot, so it's fine that the bacon is hanging of the sides.
- Return pie to oven and bake for 10-15 minutes or until bacon is done.
- Tip pie dish carefully to drain any bacon grease.
- If you like extra crispy bacon, you could put pie under the broiler for a couple of minutes, or until bacon has reached your preferred doneness.
- Let pie sit for 5 minutes before serving.
