1 box Betty Crocker™ Suddenly Pasta Salad™ Caesar
1/4 cup olive or vegetable oil
1 tablespoon water
1 tablespoon balsamic vinegar
2 tablespoons chopped fresh basil leaves
1 cup cherry tomatoes, halved
1 cup drained fresh mozzarella cheese pearls
1 cup fresh baby arugula leaves
8 slices bacon, crisply cooked, coarsely chopped
1 medium avocado, peeled, pitted, cut into 1/2-inch cubes

Steps:

  • Cook pasta as directed on box. Meanwhile, in large bowl, stir together seasoning mix (from salad box), oil, water and balsamic vinegar.
  • Drain pasta; rinse with cold water. Shake to drain well.
  • Add drained pasta, basil, tomatoes, mozzarella pearls, arugula, bacon and avocado to balsamic vinegar mixture; toss to coat. Serve immediately.

This will be one of the tastiest pasta salads you've tried! It's packed with mini pasta, fresh mozzarella pears, fresh tomatoes, fresh basil, fresh avocados and a tasty balsamic glaze. In other words lots of fresh exciting flavors here!

10 oz. (2 3/4 cups) mini penne pasta shells
Salt and freshly ground black pepper
1 pint cherry or grape tomatoes, (halved)
2 small avocados, (diced (they should be fairly firm but ripe))
8 oz. fresh mozzarella pearls
1/4 cup chopped fresh basil leaves
1 1/2 Tbsp balsamic vinegar, then more for serving to taste ((use white balsamic vinegar for better coloring if desired))
1 cup (18g) slightly packed fresh basil leaves
1 cloves garlic, (peeled)
1/4 cup olive oil
2 Tbsp finely shredded parmesan, (plus more for serving if desired)
1 Tbsp pine nuts or chopped walnuts

Steps:

  • Cook pasta in boiling salted water according to directions on package. Drain and let cool completely.
  • In a food processor pulse 1 cup basil leaves, parmesan, pine nuts, and garlic until minced. Pour in olive oil and process until everything is finely minced. Season with salt and pepper to taste.
  • Add pasta and tomatoes to a salad bowl. Pour basil (pesto) mixture over pasta and tomatoes and toss to evenly coat.
  • Add in avocados, mozzarella, basil (set some aside to garnish over top if desired), and pour in balsamic vinegar and toss just lightly.
  • Serve immediately with more balsamic vinegar and parmesan if desired.

3/4 cup extra virgin olive oil
1/4 cup red wine vinegar
4 teaspoons sugar
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon Dijon mustard
SALAD:
1 bunch romaine, chopped (about 12 cups)
3/4 pound bacon strips, cooked and crumbled
3 medium tomatoes, chopped
1 medium red onion, halved and thinly sliced
3 medium ripe avocados, peeled and cubed
2 tablespoons lemon juice
1 cup crumbled Gorgonzola or feta cheese

Steps:

  • Place first 6 ingredients in a jar with a tight-fitting lid; shake well until blended. Refrigerate until serving., In a large bowl, combine romaine, bacon, tomatoes and onion. Toss avocados with lemon juice and add to salad. Sprinkle with cheese. Serve with dressing, shaking the jar to blend again if needed.

1 pound bacon
½ (16 ounce) package rotini pasta
1 ripe avocado, chopped
2 tablespoons lemon juice
1 (8 ounce) bottle creamy Italian salad dressing (such as Marie's®)
1 cup shredded Monterey Jack cheese
½ cup diced green onions
1 (4 ounce) can sliced black olives
1 medium tomato, diced

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, 10 to 12 minutes. Drain bacon slices on paper towels and chop when cool enough to handle.
  • Meanwhile, bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes.
  • While pasta is cooking, place chopped avocado in a small bowl. Drizzle with lemon juice and toss gently to coat.

1 pound fresh mozzarella cheese, cut into 1/4-inch slices
3 plum tomatoes, cut into 1/4-inch slices
1-1/2 cups fresh baby spinach
8 bacon strips, cooked and crumbled
1/2 cup minced fresh basil
2 green onions, chopped
1/4 cup balsamic vinaigrette
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper

Steps:

  • Arrange cheese, tomatoes and spinach on a large serving platter; top with bacon, basil and green onions. Just before serving, drizzle with vinaigrette; sprinkle with salt and pepper.
