BACARDI MOJITO

12 fresh spearmint leaves
1/2 lime
2 tablespoons simple syrup (equal amounts sugar and water heated until sugar dissolves, cooled) or 4 teaspoons sugar
Ice
1 1/2 ounces light rum (recommended: Bacardi)
Club soda
Lime wedge and mint sprig, for garnish

Steps:

  • In a tall glass, muddle or mash together the mint leaves and lime. Add the simple syrup or sugar and fill the glass with ice. Add the rum and top with club soda, stir well. Garnish with a lime wedge and a sprig of mint.

I am not a great fan of the true mojitos but when you add some Bacardi Peach Rum I can drink them all night.

1 tablespoon simple syrup
6 large mint leaves
3 ounces Bacardi peach red rum
1 dash lime juice
1 dash sour mix

Steps:

  • Muddle mint leaves with simple syrup in cocktail shaker.
  • Add peach rum, lime juice and sour mix.
  • Add ice cubes and shake until blended.
  • Serve in martini glass and garnish with slice of fresh peach.

9 Parts Bacardi Limon Rum
15 Parts Club Soda
8 Sprigs of Fresh Mint Leaves
3 Limes
12 Parts Simple Syrup (or 4 Parts Sugar)

Steps:

  • Muddle mint leaves and lime in a large pitcher. Cover with simple syrup and fill pitcher with ice. Add Bacardi Limon Rum and club soda, stir well. Add crushed ice to tall glasses when ready to serve. Garnish glasses with lime wedge or lemon wheel and sprigs of mint
