BABY'S FIRST HEALTHY SMASH CAKE (NO SUGAR BANANA CAKE)
Four 1st birthdays later and we still love this healthy smash cake recipe! This no sugar added first birthday cake recipe is sweetened with bananas and reminds me of banana bread. The fruit juice sweetened cream frosting is one of my favorite parts, making this healthy smash cake for 1-year-old kiddos the perfect healthy first birthday cake alternative!

Steps:
- Mash the bananas in a medium bowl.
- In a separate large bowl, mix the flours, baking soda, and cinnamon.
- Add the mashed bananas, applesauce, coconut oil, and vanilla to the flour mixture. Mix just until incorporated.
- Coat your 4 mini tart pans (these are the mini tart pans I use) + 6-8 muffin pans (or use two 8 or 9″round pans) with oil.
- Spread the batter into the bottom of the pans.
- Bake at 375° for 20-23 minutes. Check with a toothpick for doneness.
- Cool the cakes before frosting. If you used the 8″ or 9″ pan, then use an overturned smaller bowl to cut out small cake rounds.
- While the healthy smash cake cools, soften the cream cheese.
- Whisk the cream cheese with the apple juice concentrate and vanilla extract until creamy.

I wanted to feed Lucy cake on her first birthday but didn't want to introduce her to new foods on her big day. I also baked it ahead of time so she could sample the cake two to three days in advance in case of a reaction (I didn't actually decorate it until the day of her party). Recipe adapted from a blog called greenparenting (I reduced the egg white, and left out the walnuts/raisins suggested)

Steps:
- Grease and flour a 9 X 13 inch pan.
- Beat banana and butter until creamy.
- Beat in water.
- In a separate bowl, beat eggs until very foamy.
- Beat into mixture.
- Blend in dry ingredients.
- Beat until smooth.
- Spread batter evenly in pan.
- Bake at 350°F for 20 minutes or until knife comes out clean.
- Draw a cat head onto a piece of paper (approx 4 by 5 inches).
- Use cat stencil to cut out two cat heads.
- Frost top of one layer and place second cat head on top of first.
- Frost cake (use a sugarless cream cheese or sour cream filling).
- Decorate with cat face.
- Remove candy before allowing baby to attack cake.
