INSTANT POT BABY LIMA BEANS



Instant Pot Baby Lima Beans image

Super simple meatless butterbeans that are tender and sweet. Vegetarian or vegan recipe (depending on the butter you choose).

28-30 oz. fresh frozen baby lima beans (*)
3 cups water (really just enough to cover beans)
1/2 tsp. black pepper
2 Tbsp. butter (can sub vegan butter)
1 bay leaf
1 tsp. salt

Steps:

  • Place beans, water, black pepper, butter, and bay leaf in IP. Lock lid, close vent, and set manual time for 7 minutes on high pressure.
  • Once cook time is complete, quick-release the pressure.
  • Open lid and add salt. Mix well, then allow to sit for at least 10 minutes on warm setting.
  • Serve and enjoy!

A good SOUTHERN DISH! This dish graces the table at buffets, potlucks and in homes in the south. Also known as "butter beans" and are grown in small home gardens. When purchasing a frozen bag or box of these wonderful beans be sure to buy the kind which say "tiny" or "baby" lima beans. These beans go well with any meat as well as fried chicken, ham or pork chops. The blended flavors of lima beans, corn and bacon drippings make anyone feel like they are seated at Grandma's table!

2 cups frozen baby lima beans
1 (10 ounce) can corn kernels, drained
2 tablespoons bacon drippings
5 cups water
1/2 teaspoon salt
black pepper

Steps:

  • In a medium size saucepan bring water to a boil.
  • Place frozen lima beans, bacon drippings, salt and pepper in water. Cover with a lid. Turn heat down to very low heat and let simmer for an hour and 15 minutes. Keep a watchful eye and do not let water boil out.
  • Pour drained can of corn kernels into bean mixture and simmer 15 more minutes.
  • Serve and enjoy!

1 cup frozen baby lima bean
1/4 teaspoon salt
1 tablespoon butter
1/8 teaspoon pepper, to taste (optional)

Steps:

  • Combine water, lima beans and salt in small saucepan. Bring to boil over medium-high heat.
  • Reduce heat; simmer covered for 20- 25 minutes until soft.
  • Drain; return to heat. Add butter and toss to combine until butter melted. Season with pepper, if desired.

½ medium onion, finely chopped
1 ½ cups chicken broth
1 (16 ounce) package frozen baby lima beans

Steps:

  • Heat a large saucepan over medium heat, and spray with cooking spray. Saute onions until soft and translucent. Pour in chicken broth, and bring to a boil. Add lima beans, and enough water just to cover. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, until beans are tender.
