Spice-Rubbed Baby Back Ribs With Chipotle-Bourbon Barbecue Sauce image

The baby back (sometimes called top loin) is the perfect rib for neophytes. Cut from high on the hog - literally, it abuts the backbone - it's intrinsically tender and generously marbled, which keeps it moist during smoking. Thanks to these attributes, you can cook it at a higher temperature than the low-and-slow heat favored in the American barbecue belt. This shortens the cooking time and lets you cook the ribs on a common charcoal kettle grill. (However, you can certainly smoke these ribs low and slow at 250 degrees, in which case, you'll need 3 1/2 to 4 hours of cooking time - and a smoker.) The higher heat and shorter cooking time produce ribs with a firmer, meatier consistency. Add a chile-stung spice rub and a sweet, spicy chipotle-bourbon barbecue sauce, and you wind up with textbook barbecued ribs with a distinctive sweet, hot, smoky finish.

2 racks baby back ribs (2 to 2 1/2 pounds each)
2 tablespoons Dijon mustard
1 tablespoon chile powder
1 tablespoon dark brown sugar
2 teaspoons kosher salt
2 teaspoons black pepper
1/4 teaspoon celery seeds
2 large or 4 small hardwood chunks or 3 cups hardwood chips (if using the latter, soak in water to cover for 30 minutes, then drain)
1/2 cup apple cider in a spray bottle (optional)
1 1/4 cups ketchup
1/3 cup Thai sweet chile sauce
1/4 cup bourbon
3 tablespoons dark brown sugar
3 tablespoons molasses
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 to 2 canned chipotle chiles en adobo, minced, plus 1 to 2 teaspoons sauce
1 teaspoon finely grated lemon zest, plus 1 tablespoon lemon juice
1/2 teaspoon liquid smoke
Sea salt and freshly ground black pepper

Steps:

  • Place the ribs on a rimmed baking sheet. If the concave side of your ribs still has its papery membrane intact, remove it: Pry it up at the end of the bones using the tip of a meat thermometer or butter knife, then pull it off with a paper towel. Lightly brush the ribs on both sides with the mustard.
  • Prepare the rub: In a small bowl, combine the chile powder, brown sugar, salt, pepper and celery seeds. Reserve 1 1/2 teaspoons rub for serving, then sprinkle the remaining rub on the ribs, coating both sides.
  • Set up your charcoal grill for indirect grilling and heat to 300 degrees.
  • Once the grill comes to temperature, add half the wood chunks or chips to the coals. Arrange the ribs meat (rounded) side up on the grate away from the heat, then cover the grill. Grill the ribs over indirect heat for 1 hour.
  • After the ribs have grilled for 1 hour, spray on both sides with apple cider (if using), turning the ribs with tongs. Add the remaining wood chunks or chips to the fire and close the grill again.
  • While the ribs grill, prepare the barbecue sauce: Place all the sauce ingredients, along with 1/4 teaspoon salt and 1/2 teaspoon pepper, in a heavy saucepan and whisk to mix. Bring to a boil over medium-high heat, whisking often. Reduce the heat and gently simmer the sauce, uncovered, until thick and richly flavored, 6 to 8 minutes. Correct the seasoning, adding more salt and pepper to taste; set aside. (Makes about 2 cups.)
  • Continue grilling the ribs over indirect heat, rounded side up, until sizzling, browned, tender, and the meat has shrunk back from the ends of the bones by 1/4 to 1/2 inch. This normally takes 2 to 2 1/2 hours in all, but sometimes you'll need a full 3 hours. The last 20 minutes, brush the ribs on both sides with some of the barbecue sauce. When ready, the meat should be tender enough so you can pull the individual ribs apart with your fingers.
  • Brush each rack on both sides with more barbecue sauce. Move each rack directly over the fire and direct grill to sizzle the sauce into the meat, 2 to 4 minutes per side.
  • Transfer the ribs to a platter for serving. Brush once more with barbecue sauce and sprinkle the ribs with the remaining rub. Serve the remaining sauce in a bowl on the side.

  • Preheat oven to 400°F. Whisk chili powder, paprika, cumin, salt, and pepper in small bowl to blend. Rub spice mixture all over ribs. Place ribs in heavy large roasting pan.
  • Boil beer in medium saucepan until reduced to 1 cup, about 5 minutes. Pour beer around ribs. Cover pan tightly with foil. Bake ribs until fork-tender, about 1 hour 30 minutes.
  • Combine barbecue sauce, 1/2 cup water, brown sugar, and espresso powder in heavy medium saucepan. Simmer until flavors blend and sauce thickens slightly, stirring occasionally, about 10 minutes. (Ribs and barbecue sauce can be prepared 1 day ahead. Cool slightly, then cover separately and refrigerate.)
  • Prepare barbecue (medium heat). Brush ribs with some barbecue sauce. Grill ribs just until heated through, about 3 minutes per side. Transfer ribs to platter. Bring remaining sauce to simmer. Brush ribs with more barbecue sauce. Serve ribs, passing remaining barbecue sauce separately.

For the best taste prepare the sauce a day ahead to blend flavors --- although I have 6 servings listed for these ribs, my DS and DS could eat the whole thing just between themselves they are that delicious! I have made this recipe using side ribs also but I suggest to boil them first for about 20 minutes before cooking them in the oven for side ribs, I have to say that back ribs are better --- I always most always serve these ribs with my recipe#102617 --- you will *love* these ribs!

3 racks of baby-back pork ribs
salt and pepper (can use seasoning salt)
2 cups of prepared barbecue sauce (recipe below)
2 cups ketchup
1 small onion, minced
1 tablespoon minced fresh garlic
4 cups water
1 cup cider vinegar
2 tablespoons paprika
1 tablespoon honey
1/4 cup dark brown sugar
1/4 cup chili powder
1/4 cup fresh lemon juice
3 tablespoons Worcestershire sauce
1 -2 teaspoon liquid smoke (to taste) (optional)

Steps:

  • Prepare this sauce a day ahead and chill overnight.
  • In a saucepan combine all ingredients and bring to a slow boil, stirring occasionally to prevent from scorching (about 30-35 minutes).
  • You can strain the sauce if desired to remove the onion and garlic, that is optional.
  • Cool to about room temperature; cover and chill overnight or up to 2 days.
  • Sprinkle ribs with salt and pepper, then let the ribs sit out for 30 minutes at room temperature before baking.
  • Set oven to 350 degrees.
  • Grease a large baking sheet/s.
  • Place the ribs (meat side up) on baking sheet.
  • Bake the ribs for 30 minutes.
  • Remove the ribs and brush on about 1/4 cup prepared sauce over each rack of ribs; return to oven and continue to bake for 20 minutes longer.
  • After 20 minutes, remove and brush another 1/4 cup over each rack, place back in the oven for another 20 minuters.
  • Repeat again using 1/4 cup sauce this time for about 25-30 minutes (100 minutes baking time in total).
  • Cut the ribs into thirds and arrange on a serving platter; rub a bit more sauce over the top of the ribs and serve!

1 teaspoon salt
1 teaspoon pepper
1 cup ketchup
1/2 cup water
1/3 cup packed brown sugar

1/2 teaspoon liquid smoke, if desired

Steps:

  • Heat oven to 325°F. Cut ribs into serving pieces; sprinkle with salt and pepper. Place ribs in 15x10x1-inch pan. Cover with foil; bake about 2 hours 30 minutes or until tender.
  • Meanwhile, in 2-quart saucepan, mix sauce ingredients. Heat to boiling over medium heat, stirring frequently. Reduce heat to low; simmer uncovered 15 minutes, stirring occasionally.
  • Heat gas or charcoal grill for indirect cooking as directed by manufacturer.

6 baby back pork rib racks
1 cup bourbon
3 tablespoons coarse salt
3 tablespoons (packed) dark brown sugar
3 tablespoons paprika
2 tablespoons ground black pepper
1 tablespoon garlic powder
1 teaspoon ground cumin
2 cups hickory wood chips
2 cups beer
Bourbon Barbecue Sauce

Steps:

  • Arrange ribs in large roasting pan. Pour bourbon over. Chill 30 minutes, turning ribs often. Pour off and discard bourbon.
  • Whisk salt and next 5 ingredients in medium bowl. Sprinkle spice mixture on both sides of ribs. Let stand 1 hour.
  • Place wood chips in medium bowl. Pour beer over; let stand 1 hour. Place handful of torn newspaper in bottom of charcoal chimney. Top newspaper with 25 charcoal briquettes. Remove upper rack from barbecue. Place chimney on lower grill rack. Light newspaper and let charcoal burn until ash is gray, about 30 minutes.
  • Open 1 bottom grill vent. Turn out hot charcoal onto 1 side of lower rack. Using metal spatula, spread charcoal to cover approximately 1/3 of rack. Remove 1 cup wood chips from beer and drain (keep remaining chips in beer). Scatter drained chips over coals (avoid using too many wet chips, which may douse the fire). Fill foil loaf pan halfway with water and place opposite the coals on lower grill rack.
  • Place upper grill rack on barbecue. Arrange ribs on upper grill rack above loaf pan. Cover barbecue with lid, positioning top vent directly over ribs. Place stem of candy thermometer through top vent, with gauge on outside and tip near ribs (thermometer should not touch meat or grill rack); leave in place during cooking. Check temperature after 5 minutes. Use top and bottom vents to maintain temperature between 275°F and 325°F, opening vents wider to increase heat and closing to decrease heat. Leave any other vents closed.
  • After 45 minutes, use technique described earlier to light an additional 15 charcoal briquettes in same charcoal chimney set atop nonflammable surface.
  • When temperature of barbecue falls below 275°F, use oven mitts to lift off upper rack with ribs; place rack with ribs on heatproof surface. Using tongs, add hot gray charcoal from chimney to bottom rack. Drain remaining 1 cup wood chips; sprinkle over charcoal. Reposition upper rack on barbecue, placing ribs above loaf pan. Cover with lid. Grill until ribs are very tender and meat pulls away from bones, about 45 minutes longer, brushing with 3/4 cup Bourbon Barbecue Sauce the last 15 minutes of cooking.
  • Transfer ribs to platter. Brush with 3/4 cup more barbecue sauce. Serve, passing remaining sauce separately, if desired.

JACK DANIEL’S BARBECUE BABY BACK RIBS

1 bottle of either Jack Daniel's Smokey Sweet Glaze or Jack Daniel's Hot Chilli Barbecue Sauce
Two sides/racks Baby Back Ribs approx 500 -600grms each
2 Tablespoons olive oil
20 ml salt
10 ml freshly ground black pepper
10 ml lemon pepper
20 ml cayenne pepper
20 ml mild chilli powder
10 ml dry mustard
10 ml brown sugar
5 ml garlic powder
5 ml cinnamon

Steps:

  • Ask your butcher to prep and remove the membrane on the rack of ribs. Thoroughly combine all the dry ingredients in a mixing bowl to make Barbecue rib rub. Apply a very small amount of olive oil to both sides of the ribs. Season the ribs lightly on both sides with Barbecue rib rub mix. Place in baking tray and leave covered with foil in fridge for 1hr or overnight to infuse. Pre-heat the oven to 180oC. Place tray of foiled ribs in middle oven shelf for 2hrs. The ribs are done when the meat begins to shrink back from the bones a little. They should be nearly tender enough to tear apart with your fingers. Drain the ribs and allow to cool. The ribs can be oven baked the day before and stored in fridge for use the next day. Place the ribs with the meat side down directly over the coals if using charcoal or if you are using a gas grill over the burner for three to four minutes to sear the ribs. Turn the ribs over with the meat side up for an additional two to three minutes. Gently heat either the Jack Daniel's Smokey Sweet Glaze or the Jack Daniel's Hot Chilli BBQ sauce in a pan and allow to reduce and thicken to form a glaze. Brush glaze on to the grilling ribs and continue to grill for a few minutes. Remove from the grill and wait for 1 to 2 minutes. Brush one more time with the warmed Jack Daniel's Sauce and cut into portions of two bones each and place on a platter with a dipping bowl of the warm Jack Daniels's Smokey Sweet Glaze or Hot Chilli Barbecue Sauce. Note: Adjust the Barbecue rib rub amounts of spices to you suit your taste. It can be made in advance and stored in an airtight container for up to one year.

Sliced fresh tomatoes, accompaniment
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
2 pounds new potatoes, scrubbed and cut into 1/2-inch pieces
2 teaspoons salt
1/2 cup minced yellow onions
3 hard-boiled eggs, chopped
1 teaspoon minced garlic
1/2 to 3/4 cup mayonnaise or store bought mayonnaise
1/4 cup Dijon mustard
2 tablespoons fresh lemon juice
1 tablespoon light brown sugar
1/2 teaspoon hot pepper sauce (recommended: Emeril's Red Pepper Sauce)
1/2 teaspoon Worcestershire sauce
1 teaspoon freshly ground black pepper

Steps:

  • Rub the ribs on both sides with Essence or rib rub. Place in a large sealable bag or on a large sheet of aluminum foil placed in a large roasting pan. Cover with the beer and seal. Marinate in the refrigerator 8 hours or overnight. Remove the ribs from the bag and bring to room temperature. Preheat the oven to 325 degrees F. Line a large baking sheet with heavy aluminum foil, lay the ribs on top, and tightly cover with foil. Roast for 2 hours. Preheat the grill. Meanwhile, to make the sauce, combine the ketchup, onions, cane syrup, red wine, lemon juice, mustard, brown sugar, garlic, jalapenos, Worcestershire, hot pepper sauce, salt, and cayenne in a large mixing bowl. Stir to mix well. Use immediately, or store in an airtight container in the refrigerator for up to 3 days. Remove the ribs from the oven and uncover. Transfer to the hot grill, cover, and cook over indirect heat for 30 minutes. Brush the ribs with the sauce, and baste and turn every 10 minutes, for an additional 30 minutes. Remove ribs from the grill. Serve with the potato salad and sliced tomatoes, and pass additional sauce on the side.

  • In a large saucepan, place the potatoes with enough cold water to cover and 1 teaspoon of the salt. Bring to a boil over high heat. Reduce the heat to medium-low and simmer until fork-tender, about 10 minutes. Drain. In a large mixing bowl, mash the potatoes with a hand-held masher or a heavy fork. (They should still be very lumpy.) Mix in the onions, eggs, and garlic. In a small bowl, combine 1/2 cup of the mayonnaise, the mustard, lemon juice, and brown sugar, stirring to dissolve the sugar. Season with the pepper sauce, Worcestershire, the remaining 1 teaspoon salt, and the pepper. Serve warm or chilled. Yield: 4 servings

Steps:

  • Heat oven to 350°F.
  • Combine sugar and dry seasonings; rub evenly onto both sides of ribs. Wrap in foil; place on baking sheet.
  • Bake 1-1/2 hours.
  • Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 350ºF.
  • Remove ribs from foil; discard foil. Place ribs, meat sides down, on grill grate over unlit area. Grill 10 min., turn ribs. Brush with half the barbecue sauce; grill 10 min., turning and brushing with remaining barbecue sauce after 5 min.

3 lbs pork baby back ribs
1 tablespoon brown sugar, packed
1 tablespoon paprika
2 teaspoons garlic powder
1 1/2 teaspoons pepper
1/2 cup water
1 1/2 cups barbecue sauce

Steps:

  • PREHEAT grill to medium OR oven to 450°F.
  • CENTER half of ribs in single layer on each sheet of Reynolds Wrap Heavy Duty Aluminum Foil. Combine brown sugar and seasonings; rub over ribs, turning to coat evenly.
  • BRING up foil sides. Double fold top and one end to seal packet. Through open end, add 1/4 cup water. Double fold remaining end, leaving room for heat circulation inside. Repeat to make two packets.
  • TO GRILL: Place rib packets in covered grill and grill 45 to 60 minutes. Remove foil; place ribs on grill
  • BRUSH ribs with barbecue sauce. CONTINUE GRILLING 10 to 15 minutes, brushing with sauce and turning every 5 minutes.
  • TO BAKE: Place rib packets on a cookie sheet and bake in oven 45 to 60 minutes. Remove foil; place ribs on broiler pan. BRUSH ribs with barbecue sauce. BROIL 4 to 5 inches from broiler, 10 to 15 minutes, brushing with sauce and turning every 5 minutes.

1 cup coarsely chopped onion
1 1/2 tablespoons coarsely chopped garlic (2 cloves)
1 1/2 cups ketchup
1/4 cup molasses (not blackstrap)
1 1/2 tablespoons cider vinegar
1 tablespoon light brown sugar
2 teaspoons salt
2 teaspoons black pepper
4 lb baby back ribs (4 racks)

Steps:

  • Put oven rack in lower third of oven and preheat oven to 350°F. Line a 17- by 12- by 1-inch shallow baking pan with foil.
  • Stir together all sauce ingredients in a 2-quart heavy saucepan and bring to a boil over moderate heat. Reduce heat and simmer, covered, 15 minutes.
  • Transfer sauce to a food processor and purée until smooth.
  • Coat both sides of ribs with sauce. Arrange ribs, meaty side up, in 1 layer in baking pan, overlapping if necessary. Cover pan tightly with foil and bake ribs 1 hour. Remove foil (from top) and bake ribs 1 hour more.

For the rub:
4 tablespoons coarse salt (kosher or sea)
2 tablespoons light brown sugar
2 teaspoons freshly ground black pepper
1 teaspoon granulated garlic
1 teaspoon onion powder
1 teaspoon ground allspice
1 teaspoon chili powder or paprika
1/2 teaspoon ground cinnamon
3 racks baby back pork ribs (4 to 5 pounds, total)
For the pineapple spray:
2 cups pineapple juice
1/2 cup rum
2 tablespoons Worcestershire sauce
Pineapple Barbecue Sauce (recipe follows)
Other Items Needed:
20 whole allspice berries (optional);
1-1/2 cups wood chips or chunks (preferably apple or other fruitwood),
soaked for 1 hour to cover, then drained; a clean spray bottle.

Steps:

  • Make the rub: Place the 2 tablespoons of coarse salt, brown sugar, black pepper, granulated garlic, onion powder, allspice, chili powder, and cinnamon in a small bowl and mix with your fingers, breaking up any lumps.
  • Prepare the ribs: Place a rack of ribs meat-side down on a baking sheet. Remove the thin, papery membrane from the back of the rack by inserting a slender implement, such as a butter knife or the tip of a meat thermometer probe, under it. The best place to start is on one of the middle bones. Using a dishcloth, paper towel, or pliers to gain a secure grip, peel off the membrane. Repeat with the remaining rack.
  • Sprinkle the rub over both sides of the ribs, rubbing it onto the meat. Cover the ribs with plastic wrap and let cure in the refrigerator for at least 1 hour or as long as 4. The longer the ribs cure, the richer the flavor will be.
  • Meanwhile, make the pineapple spray. Combine the 1 cup of pineapple juice, wine, distilled white vinegar, and Worcestershire sauce in a clean spray bottle and shake to mix.
  • Set up the grill for indirect grilling and preheat to medium (325 degrees F). Place a large drip pan in the center of the grill.
  • When ready to cook, brush and oil the grill grate. Place the ribs bone-side down in the center of the grate over the drip pan and away from the heat. (If your grill has limited space, stand the racks of ribs upright in a rib rack.) If cooking on a charcoal grill and using wood chips, toss half of them on each mound of coals. Toss the allspice berries (if using) on the chips. Cover the grill and cook the ribs for 45 minutes.
  • Spray the ribs on both sides with some of the pineapple spray. Re-cover the grill and continue cooking the ribs until well browned, cooked through, and tender enough to pull apart with your fingers, 30 to 45 minutes longer, 1-1/4 to 1-1/2 hours in all. When the ribs are done, the meat will have shrunk back from the ends of the bones about 1/2 inch. Spray the ribs once or twice more, and, if using a charcoal grill, replenish the coals as needed.
  • Just before serving, brush both sides of the ribs with the Pineapple Barbecue Sauce. Move the ribs directly over the fire and grill until the sauce is sizzling and browned, 1 to 3 minutes per side. Be careful not to let the ribs burn.
  • Transfer the ribs to a platter or cutting board. Let the ribs rest for 3 minutes, then cut the racks in half or into individual ribs. Serve at once with the remaining Pineapple Barbecue Sauce.

  • tablespoon vegetable oil
  • medium onion, diced (about 1 cup)
  • cloves garlic, minced
  • teaspoons fresh ginger, minced
  • to 2 scotch bonnet chiles, seeded and minced
  • cups pineapple juice, plus additional if needed
  • 4 cup white wine
  • 4 cup dark rum
  • 3 cup dark brown sugar, or to taste
  • 4 cup distilled white vinegar
  • tablespoon Worcestershire sauce
  • 2 teaspoon coarse salt (kosher or sea), or to taste
  • 2 teaspoon freshly ground black pepper
  • 4 teaspoon ground allspice, or to taste
  • cup finely diced fresh or canned pineapple
  • tablespoons fresh cilantro leaves
  • Directions:
  • In a large nonreactive saucepan over medium heat, saut the onion, garlic, ginger, and chiles until soft, about 5 minutes. Do not let brown.
  • Add the pineapple juice, rum, wine, brown sugar, vinegar, and Worcestershire sauce. Increase heat to medium-high, and reduce the mixture by one-third. Add the salt, pepper, allspice, and pineapple and cook over low heat for about 20 minutes.
  • Remove the sauce from the heat. Place 1 cup of the sauce in the jar of a blender along with the cilantro. Pulse until blended. Return the pulsed mixture to the saucepan, and cook for 5 more minutes over low heat. If the mixture seems too thick, add more pineapple juice. Adjust the seasoning, adding salt or allspice to taste.
  • Cover and refrigerate if not using immediately. Sauce can be made up to 3 days ahead.
