1 large eggplant
1/4 cup tahini, plus more as needed
3 garlic cloves, minced
1/4 cup fresh lemon juice, plus more as needed
1 pinch ground cumin
salt, to taste
1 tablespoon extra virgin olive oil
1 tablespoon chopped fresh flat-leaf parsley
1/4 cup brine-cured black olives, such as kalamata

Steps:

  • Prepare a medium-hot fire in a charcoal grill.
  • Preheat an oven to 375°F.
  • Prick the eggplant with a fork in several places and place on the grill rack 4 to 5 inches from the fire.
  • Grill, turning frequently, until the skin blackens and blisters and the flesh just begins to feel soft, 10 to 15 minutes.
  • Transfer the eggplant to a baking sheet and bake until very soft, 15 to 20 minutes.
  • Remove from the oven, let cool slightly, and peel off and discard the skin.
  • Place the eggplant flesh in a bowl.
  • Using a fork, mash the eggplant to a paste.
  • Add the 1/4 cup tahini, the garlic, the 1/4 cup lemon juice and the cumin and mix well.
  • Season with salt, then taste and add more tahini and/or lemon juice, if needed.
  • Transfer the mixture to a serving bowl and spread with the back of a spoon to form a shallow well.
  • Drizzle the olive oil over the top and sprinkle with the parsley.
  • Place the olives around the sides.
  • Serve at room temperature.

2 medium aubergines
40ml extra virgin olive oil
¼ tsp ground coriander
¼ tsp ground cumin
2 tbsp tahini
1 large lemon , juiced
½ small bunch parsley , finely chopped
flatbreads or pitta bread , to serve

Steps:

  • Heat the grill to its highest setting. Put the aubergines on a baking sheet and grill for 35-40 mins or until completely softened, blackened and blistered, turning them halfway through with a pair of tongs. Set aside and leave to cool completely.
  • Once your aubergines are cool enough to handle, gently peel off the charred skin and discard. Transfer the flesh to the large bowl of a food processor along with 30ml of the oil, the coriander, cumin, tahini, lemon and half the parsley. Season and pulse the flesh three or four times to create a chunky textured dip.
  • Transfer the dip to a bowl and drizzle with the remaining oil, scatter over any leftover parsley and serve with warm flatbreads or pitta.

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Using a fork, poke holes in the eggplant so steam will be able to release during cooking.

2 tablespoons lemon juice
2 tablespoons tahini
2 cloves garlic

  • Preheat the oven to 450 degrees F (230 degrees C). Lightly oil a baking sheet.
  • Halve eggplants and brush cut sides with olive oil. Place face-down onto the prepared baking sheet.

Steps:

  • Grill the whole eggplants over the flame of a gas stove or on a rack set over an electric cooktop until the skin is charred all over, a couple minutes each side. Put the eggplants in a large bowl and cover tightly with plastic wrap to steam for 8 to 10 minutes. When cool enough to handle, remove the charred skin and discard, reserving any liquid in the bowl.
  • Roughly chop the eggplant flesh and put in the bowl along with any reserved eggplant liquid. Add the tahini, lemon juice, yogurt and garlic, then season with salt. Mash with a fork until thoroughly combined. The dip can be stored in an airtight container in the refrigerator up to 3 days.
  • Transfer the dip to a serving dish and top with pomegranate seeds, crushed walnuts, parsley leaves and a drizzle of olive oil. Serve with pita bread for dipping.

4 large aubergines (about 1.2kg), pricked all over with a fork
zest and juice of 1 lemon
2 fat garlic cloves , chopped
3 tbsp tahini
4 tbsp extra virgin olive oil , plus a little extra for drizzling
4 large carrots , ends trimmed and spiralized into thick noodles
1 large cucumber , ends trimmed, spiralized into thick ribbons and patted dry to remove excess water
1 large courgette (about 145g), ends trimmed and spiralized into thick noodles
150g pack mixed radishes , cut into random shapes

Steps:

  • Cover the hob in tin foil for ease of cleaning then put each aubergine on a single gas hob and cook, turning occasionally with tongs until the aubergines are completely charred and collapsed, this will take 10-15 mins. Alternatively, heat the grill to its highest setting, lay the aubergines on a baking tray and cook, turning occasionally, for 30 mins to achieve the same effect. While the aubergine is cooking, prep the vegetables if using.
  • Allow the aubergines to cool slightly then scoop out the soft flesh into a colander. Leave to drain for 30 mins to remove any excess water then blitz the aubergine along with the other baba ganoush ingredients and some seasoning in a food processor to however smooth or chunky you like.
  • Spoon the dip into a bowl and serve in the centre of the vegetable crudités.

Baba ganoush is a classic Levantine eggplant and tahini dip that is beloved throughout the Middle East. The main variations are whether yogurt is included (it's generally added to smooth out the flavor of the garlic) and how the eggplant is cooked. Our version calls for grilling the eggplant and skipping the yogurt to allow the charred smoky flavor to really shine.

2 tablespoons olive oil, plus more for the grill grates
2 pounds eggplant (about 4)
1/4 cup tahini
3 tablespoons lemon juice (from about 1 lemon)
3 cloves garlic, minced
Kosher salt
Sumac, for sprinkling, optional
Fresh pita, for serving

Steps:

  • Preheat a grill to medium high and brush the grates with olive oil.
  • Pierce each eggplant all over 5 to 6 times to prevent splitting and help the interior cook all the way through. Place on the grill and cook, turning them every 5 minutes to make sure they're charred equally on all sides, until the flesh is very soft when pierced with the tip of a paring knife, 25 to 35 minutes (see Cook's Note). Transfer to a cutting board and let cool for 5 minutes.
  • Peel each eggplant under cold running water, then return it to the cutting board. Finely chop the flesh and transfer it to a large bowl. Add the tahini, lemon juice, garlic and 1 teaspoon salt and mix well. Taste and add more salt, if needed.

4 aubergines
1 garlic clove , crushed
1 lemon , juiced
2 tbsp mint leaves
1 tsp ground coriander
½ tsp cumin seeds
1 tbsp extra virgin olive oil
2 tbsp Greek yogurt
2 tsp Turkish chilli flakes or 1 tsp chilli flakes
6 large pitta breads
3 tbsp extra virgin olive oil
2 tbsp dukkah spice mix
1 tbsp sumac
1 tbsp black sesame seeds

Steps:

  • To char the aubergines, use a barbecue, grill on its highest setting, or cook directly on the hob. Prick the aubergines all over with a fork and grill until charred. This will take about 10 mins over an open flame or 20 mins under the grill - remember to turn them halfway. Remove and put in a sieve to drain any excess water for 10 mins.
  • Heat oven to 220C/200C fan/gas 7. Use scissors to cut through the seam of the pittas, gently separate the two pieces and cut into triangles. Spread out on a large baking tray, or two smaller ones. Drizzle the oil over, and sprinkle with salt, the spices and seeds. Bake for 10-12 mins until golden, swapping the trays halfway through. Remove and leave to cool. Will keep for up to two days in an airtight container.
  • Put the aubergine flesh in a food processor or blender, adding two to three pieces of the charred skin too. Add the garlic to the aubergines along with the lemon, mint, coriander, cumin, oil, yogurt and some seasoning. Blend until smooth, scrape into a serving dish, cover and chill in the fridge. Will keep for two days. Just before serving, sprinkle with the chilli flakes.

1 1/2 pounds (2 to 3 small) firm eggplant, halved lengthwise
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
2 cloves garlic, minced
1 lemon
1/4 cup, a generous handful, flat-leaf parsley
3 tablespoons tahini paste
1/4 cup pine nuts, lightly toasted
2 bags pita crisps, any flavor (recommended: Stacy's)

Steps:

  • Turn broiler on high.
  • Brush cut eggplant with olive oil on flesh side, drizzle over skin side. Season the eggplant with salt and pepper. Place flesh side down on nonstick baking sheet and leave under broiler 4 to 5-inches from heat until skin is charred and flesh is very tender, 15 to 20 minutes. Cool for 5 minutes.
  • Scoop out eggplant flesh into food processor. Paste garlic with some salt mashing it with the side of your knife. Add garlic and the juice of 1 lemon to processor. Add parsley and tahini to processor and process until smooth. Adjust salt then transfer dip to a bowl and stir in half the pine nuts, garnish with remaining nuts. Surround the dip with pita crisps and serve.

LOIN OF LAMB WITH BABA GANOUSH



Loin of lamb with baba ganoush image

Baba ganoush is a gutsy aubergine-based dip that twins well with tender sweet lamb

400g boned and rolled lamb loin, with fat on and tied (see 'Try')
1 tbsp each finely chopped fresh mint , rosemary and parsley
1 tbsp olive oil
2 aubergines
1small lemon , juice only
1 garlic clove , roughly chopped
a handful of fresh flatleaf parsley , chopped
a pinch of chilli powder , mild or hot - it's up to you
about 2 tbsp tahini paste
100g runner bean , trimmed and sliced diagonally
25g unsalted butter
a handful of flaked almonds
1small garlic clove , roughly chopped

Steps:

  • Preheat the oven to 220C/gas 7/fan 200C, then roast the aubergines on a baking sheet for 30 minutes until the skins are well blistered, turning them halfway. Leave the oven on (for the lamb) and tip the aubergines into a colander over a bowl. Leave until cool and to let the juices drain off, then peel and put the flesh back in the colander to drain again for a few minutes.
  • Put the aubergine flesh and the rest of the baba ganoush ingredients into a food processor. Whizz until smooth, then taste, add salt and pepper, plus more tahini paste if you like it. Set aside.
  • Cut the lamb in half widthways, sprinkle with salt and pepper and roll it in the chopped herbs. Heat the olive oil in an ovenproof pan until very hot, put the lamb in and brown well on all sides, even the ends. This should take about 7 minutes in total.
  • Transfer the pan to the oven and roast for 8 minutes to cook the lamb to just medium - leave it for longer if you want it a little more cooked. While the lamb is cooking, blanch the runner beans in boiling salted water for 3-4 minutes and drain them well.
  • Once cooked, remove the lamb from the oven and leave to rest. Melt the butter in a saucepan, add the almonds and cook on a medium heat for 2 minutes until toasted. Tip in the garlic and beans and cook on a low heat for 3 minutes. To serve, spoon a little baba on each plate, slice the lamb into medallions and nestle next to the beans.

Baba ganoush is a delicious eggplant puree that can be used in much the same way as hummus. It is a must-have on any Middle Eastern meze platter where it is delicious accompanied by brine-cured black olives and warm pita wedges. This version has mint which complements the roasted eggplant sweetness perfectly.

2 medium sized eggplants
2 garlic cloves, slivered
1/3 cup tahini (good quality, organic for the best flavour)
1 lemon, juice of
1 tablespoon extra virgin olive oil
salt
2 tablespoons of fresh mint, minced

Steps:

  • Preheat the oven to 190C (375F). Using a sharp knife, make several deep cuts in the eggplant and place the garlic pieces inside. Place on a baking sheet and bake until soft, about 40 minutes. Allow to cool. Remove the eggplant skin and discard.
  • Transfer the eggplant flesh and garlic to a food processors. Add the tahini, lemon juice, olive oil and salt to taste and process until smooth.
  • Transfer to a serving bowl and sprinkle with the mint. Serve at room temperature.

This is something my mother loves making, especially during the summer when she can put the eggplants on the grill. The best taste is when the skin of the eggplants char because that's when you get that smokey taste from the inside. I originally asked if I can post this but she thinks it's not much of a recipe because it requires only three ingredients and there's really any prep time invovled.

3 medium eggplants
1/2 cup mayonnaise
1 1/2 tablespoons garlic powder

Steps:

  • Put the barbeque on high and place the three eggplants on the grill. Make sure the heat is evenly distributed, so the eggplants can be cooked at the same pace. Cook for 30 minutes.
  • Once cooked, scoop out the meat of the eggplant (I call it the meat but it's not meat, it's just that I can't find another word for it). Let cool completely.
  • Once cooled, place it in the food processor and pulse three times. If you have a small food processor like I do. split it in half.
  • After pulsing, put it in a small bowl add mayonaise and mix thoroughly. Add the garlic powder and mix again. This refrigerates very well, and lasts for a good few days.

FOR THE BABA GANOUSH
2 pounds eggplant, preferably small eggplants
¼ cup freshly squeezed lemon juice (more to taste)
¼ cup sesame tahini stirred if oil has separated out
1 to 2 tablespoons plain low-fat yogurt, as needed, or mayonnaise
2 garlic cloves, cut in half, green shoots removed
Salt to taste
FOR THE GARNISH
Extra-virgin olive oil
Chopped flat-leaf parsley

Steps:

  • PREPARATION FOR THE BABA GANOUSH Prepare a hot gas or charcoal grill. Pierce the eggplants in several places with a fork or the tip of a knife, and place over the hot coals. Grill, turning regularly, until soft and blackened all over. If you don’t have a grill but do have a gas stove, preheat the oven to 425 degrees. Cover the top of your stove under the burner grates with foil to facilitate cleaning. Turn on your oven fan (so the smoke alarm won’t go off), and roast the eggplants directly over the flame, turning often until charred and softened. Small, thin eggplants will cook through this way, but larger eggplants must be finished in the oven. Wrap in foil, and place in the hot oven for 20 minutes until thoroughly softened. You can also roast the eggplant under a broiler until charred and softened. The flavor of the baba ganoush will not be as smoky. Place the grilled eggplant in a colander in the sink, and allow to cool and drain. Peel and discard the black skins, cut off the stems, and let the eggplants sit in the colander to drain for another 15 to 30 minutes. Puree the eggplant in a food processor fitted with the steel blade. Add the lemon juice, yogurt and tahini. In a mortar and pestle, pound the garlic to a paste with a generous pinch of salt. Add to the food processor, and blend with the eggplant. Add salt to taste. Mound the puree in a bowl or on a platter, and drizzle with olive oil. Sprinkle with parsley. Serve with pita bread. Advance preparation: This dish can be made several hours ahead. The flavors are best on the day it’s made, as the garlic, lemon juice and eggplant become more pungent over time.

  • Preheat oven to 450 degrees Toss zucchini with 2 Tbsp. olive oil and kosher salt Roast zucchini cut-side up on a baking sheet until golden brown and tender, 10-15 minutes; remove and let cool Roughly chop zucchini Add half of zucchini and remaining ingredients to a blender and puree until smooth To serve, top baba ganoush with remaining zucchini Garnish with a drizzle of argan oil and a sprinkle of black Cyprus sea salt.

ARTICHOKE BABA GANOUSH

280g jar chargrilled artichokes in oil
3 tbsp tahini
1 lemon , juiced (approx 50 ml)
2 garlic cloves
2 tsp smoked paprika
25g feta
flatbreads or stuffed vine leaves, olives and falafel

Steps:

  • Pour 50ml of the oil from the artichokes into a food processor. Add the artichokes and discard the remaining oil. Pour in the tahini and lemon juice, add the garlic and smoked paprika, then blitz until very smooth.
  • Spoon into a bowl and crumble the feta over the top with a few twists of black pepper. Serve with warm flatbreads, or as part of a meze with stuffed vine leaves, olives and falafel.
