From one of my favorite cocktail websites, Tommy Bahama. This is an unusual and awesome tasting drink... think of a Margarita on steroids!!! I agree that this tasty little drink will have you saying "Ay, Caramba!" from the very first sip!

Number Of Ingredients 6

2 ounces tequila
1/2 ounce Cointreau liqueur
2 ounces sour mix
2 slices fresh jalapenos (one red, one green)
10 cilantro leaves
1/2 lime

Steps:

  • Run the lime half over the rim of a glass and salt the rim.
  • Squeeze the lime into a cocktail shaker, add the jalapeno slices and cilantro leaves. Muddle lightly.
  • NOTE: I didn't muddle at all - I thought it would be too spicy. The way I made it had a kick but didn't burn your mouth.
  • Add remaining ingredients.
  • Add ice and shake for 20 seconds until ice crystals form.
  • Pour into glass and serve.

This amazing nacho recipe is a family favorite. It calls for medium chipotle salsa, though you can experiment with it as you like. Muy riquisimo!

Number Of Ingredients 10

1 lb extra lean ground beef
8 ounces chipotle chili sauce (Ortega brand)
2 cups shredded lettuce
3 medium tomatoes
1/4 cup chopped green onion
1/4 cup sliced black olives
2 1/2 cups shredded sargento taco and nacho cheese
6 cups bite sized corn chips
1 1/2 cups carlita medium chipotle salsa
sour cream, if preferred

Steps:

  • Brown the hamburger until no pink remains and add chipotle seasoning sauce. Reduce heat to low.
  • Layer six tin pie dishes or one glass 9 by 13 inch cake pan with the chips.
  • Evenly distribute the seasoned meat, olives, tomatoes, and green onions over the chips. Sprinkle with the cheese.
  • Bake at 350°F for 10 minutes or until cheese is melted.
  • Top with shredded lettuce, salsa and sour cream.
  • Serve hot and enjoy.
