- Heat butter in a saucepan over medium-high heat; whisk flour into melted butter until smooth. Slowly pour milk into flour mixture; bring to a boil. Reduce heat to low and stir in onion powder and garlic powder; simmer for 2 minutes. Add Monterey Jack cheese while stirring constantly until melted, about 5 more minutes.

MONTEREY JACK CHEESE DIP
Steps:
- Melt butter in large saucepan over medium high heat. Add jalapeño pepper and minced garlic and cook for 1 minute.
- Add grated cheese and keep stirring until cheese is completely melted.
- Add cumin, onion powder, salt and pepper and stir until combined.
- Pour dip into large bowl. Top with fresh carrots and peppers.
- Serve warm with tortilla chips!

- Melt butter in a heavy skillet over medium-high heat.
- Sauté red and yellow pepper, jalapeño, and garlic for about 5 minutes or until peppers are tender.
- In a large saucepan, bring chicken stock and cream to a boil.
- Add grits in a thin stream, whisking constantly.
- Whisk for about 6 minutes or until grits are cooked and mixture thickens.
- Add sautéed pepper mixture and cheese.
- Stir until cheese melts.

- In a large saucepan, bring the beer to a boil.
- Reduce the heat to low and add cheese gradually, at about 1/2 cupful at a time, constantly stirring.

SPINACH MONTEREY JACK DIP
We love this dip and make it all of the time because it is so simple and tastes great. I can usually have this from refrigerator to table within 10 minutes. You might want to start with less garlic and adjust according to your taste. We love garlic.

- Prepare spinach according to package directions. I usually cook it in the microwave about 3-4 minutes. Drain or blot with paper towels to absorb some of the excess water.
- Add monterey jack cheese, cream cheese and garlic. Continue cooking until cheese is melted.

Excellent dip!! Got this recipe from a male friend who is a great cook and does alot of entertaining and this is always requested by guests that have had it before. Not sure on prep or heating times (since microwaves differ the cheese may melt quicker in some than others).

- Mix together all ingredients in a microwavable safe serving dish (a quiche dish works well for this).
- Microwave on HIGH for 3 minutes; stir.
- Continue to microwave for 30 seconds each time-stirring well after each 30 seconds-until cheese melts.
- Serve hot with tortilla and/or corn chips.
