This Coconut Pound Cake is the BEST with a sweet glaze & tropical coconut flavor! It's perfect right out of the oven with vanilla ice cream!

1 1/4 cup unsalted butter
3 cups sugar
8 ounces cream cheese (, softened)
6 eggs
1/4 teaspoon fine sea salt
1 tablespoons coconut extract
1 teaspoon almond extract
2 2/3 cups flour
1 cup sweetened shredded coconut
1 ½ cups powdered sugar
2 tablespoons butter
1 ½ teaspoon coconut extract
2-3 tablespoons whole milk
1-2 tablespoons sweetened shredded coconut

Steps:

  • Spray two 9-inch loaf pans with cooking spray or coat with butter and dust with flour, tapping out excess.
  • In a large bowl or stand mixer fitted with the paddle attachment, cream the butter, cream cheese and sugar until light and fluffy. Mix in the coconut and almond extract.
  • Sift together flour with salt. Set aside.
  • Add the eggs one at a time and alternate by adding the flour mixture until fully combined.
  • Add the flaked coconut by hand. Do not overmix.
  • Bake at 325°F degrees for 75-80 Minutes or until toothpick inserted into center comes out clean.
  • Allow the baked loaves to cool for 5-10 minutes before removing from pan and icing on a wire rack.
  • In a large bowl, combine the powdered sugar and softened butter using a fork or pastry cutter.
  • Add the coconut extract and milk, mixing to combine.
  • Pour the glaze over hot loaves and allow to drizzle down sides.
  • Sprinkle with additional flaked coconut, if desired.

5 large eggs, separated, room temperature
2 cups sugar
1/2 cup butter, softened
1/2 cup canola oil
2-1/4 cups cake flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
2 cups sweetened shredded coconut, chopped
1 teaspoon coconut extract
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon cream of tartar
FROSTING:
11 ounces cream cheese, softened
2/3 cup butter, softened
4-1/3 cups confectioners' sugar
1-1/4 teaspoons coconut extract
2 cups sweetened shredded coconut, toasted

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. , Preheat oven to 325°. In another large bowl, beat sugar, butter and oil until well blended. Add egg yolks, 1 at a time, beating well after each addition. , Combine flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Stir in coconut and extracts.. , Add cream of tartar to egg whites; with clean beaters, beat on medium until stiff peaks form. Fold a fourth of the egg whites into batter, then fold in remaining whites., Transfer to 3 greased and floured 9-in. round baking pans. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a small bowl, beat cream cheese and butter until fluffy. Add confectioners' sugar and extract; beat until smooth. , Place 1 cake layer on a serving plate; spread with 1/2 cup frosting and sprinkle with 1/3 cup coconut. Repeat. Top with remaining cake layer. Spread remaining frosting over top and sides of cake; sprinkle with remaining coconut. Refrigerate for 2 hours before cutting. Store in the refrigerator.

1/2 cup/120 milliliters neutral oil, such as grapeseed or canola, plus more for pan
3 lemons
1/2 cup/120 milliliters sour cream
1/4 cup/60 milliliters coconut milk
2 large eggs
1 1/2 cups/185 grams all-purpose flour
1 1/4 cups/250 grams granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 packed cup/50 grams shredded sweetened coconut
3 tablespoons coconut milk
1 tablespoon coconut oil, melted
Pinch of fine sea salt
2/3 cup/85 grams confectioners' sugar
Finely grated lemon zest, for garnish

Steps:

  • Heat oven to 350 degrees. Grease a 9-by-9-inch pan, and then line with parchment paper, letting the two long ends hang over the edge of the pan by at least 2 inches.
  • Grate 2 tablespoons of zest from the lemons. Juice the lemons so you have 1/4 cup/60 milliliters juice. Add juice and zest to a medium bowl, then whisk in oil, sour cream, coconut milk and eggs.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt. Whisk wet mixture into dry mixture until smooth.

Flour, for dusting pan
2 cups sugar
6 large eggs, room temperature
1 teaspoon vanilla extract
One 12-ounce box vanilla wafers, finely crushed
One 6-ounce package frozen or fresh grated coconut, thawed
1/2 cup chopped pecans
2 cups sugar
2 tablespoons cornstarch
Pinch of salt
Grated zest of 2 large lemons
1/4 cup fresh lemon juice (about 2 large lemons)
One 6-ounce package frozen or fresh grated coconut, thawed

Steps:

  • Preheat the oven to 325 degrees F.
  • For the cake: Grease and flour a 9-inch tube cake pan. Cream the butter and sugar until light and smooth. Add the eggs and vanilla extract, beating well. Mix in the vanilla wafer crumbs, coconut and pecans. Pour into the pan and bake for 1 hour and 15 minutes. Allow the cake to cool in the pan for 10 minutes before turning out onto a rack.
  • For the glaze: Mix the sugar, cornstarch, salt, lemon zest and juice, 1 1/2 cups of water and coconut in a medium saucepan. Cook over medium heat, stirring until thickened, for about 15 minutes. Let cool slightly, then using a toothpick, poke several holes in the top of the cake and drizzle the glaze over the cake.

3 c flour (plain)
1/2 tsp baking powder
1/2 tsp salt
1 c buttermilk
1 c coconut, flaked unsweetened

GLAZE
1/2 c water
2 Tbsp salted butter
1 c sugar
powdered sugar for dusting top of cake

Steps:

  • 1. FOR THE CAKE Preheat oven to 350 degrees Fahrenheit) In a large bowl, combine eggs, sugar and butter and beat with an electric mixer until light and fluffy, approximately 3 minutes

Slowly pour half the syrup over the cake, invert onto serving plate, and pour remaining syrup over top. Dust with powdered sugar, let sit for 10 minutes, and eat warm!
