Strawberry Avocado Spinach Salad with Poppyseed Dressing image

This delicious Strawberry Avocado Spinach Salad is quick and easy to make, full of great fresh flavors, and tossed with a simple poppyseed dressing.

Number Of Ingredients 12

6 cups fresh baby spinach
1 pint strawberries, hulled and sliced
1 avocado, peeled, pitted and diced
4 ounces crumbled blue cheese (or goat cheese or feta)
1/3 cup sliced almonds, toasted
half a small red onion, thinly sliced
1/3 cup avocado oil (or olive oil)
3 tablespoons red wine vinegar
2 tablespoons honey
1 tablespoon poppy seeds
1 teaspoon Dijon mustard
fine sea salt and freshly-ground black pepper

Steps:

  • Whisk all ingredients together vigorously in a small bowl (or shake in a covered jar) until emulsified. Taste and season with a pinch of salt and a few twists of pepper, as needed.
  • Combine all of the salad ingredients in a large bowl. Drizzle evenly with the dressing then gently toss until combined.
  • Serve immediately and enjoy!

2 tablespoons white sugar
2 tablespoons olive oil
4 teaspoons honey
1 tablespoon cider vinegar
1 teaspoon lemon juice
2 cups torn salad greens
1 avocado - peeled, pitted and sliced
10 strawberries, sliced
½ cup chopped pecans

Steps:

  • In a small bowl, whisk together the sugar, olive oil, honey, vinegar, and lemon juice. Set aside.
  • Place the salad greens in a pretty bowl, and top with sliced avocado and strawberries. Drizzle dressing over everything, then sprinkle with pecans. Refrigerate for up to 2 hours before serving, or serve immediately.

1/3 cup Champagne or white wine vinegar
1/3 cup sugar or honey
1/2 small onion
1 teaspoon Dijon mustard
1 teaspoon salt
1 cup extra virgin olive oil
1 1/2 tablespoon poppy seeds
1 avocado, sliced into thick chunks
1 cup strawberries, thickly sliced
4 cup mixed greens, such as mizuna or arugula

Steps:

  • Place vinegar in small bowl. Add sugar, mustard and salt, mix well until sugar and salt dissolve. Place half onion in blender or food processor, add liquid and blend until mixed. Add oil in thin stream until emulsified. Return to bowl and stir in poppy seeds. Place mixed greens in bowl, toss lightly in dressing and plate. This is also a great dressing to make when you just have a small amount of dijon left in the jar. Just add the rest of the ingredients, shake vigorously and serve.

1/4 cup sugar
1/3 cup slivered almonds
1 bunch romaine, torn (about 8 cups)
1 small onion, halved and thinly sliced
2 cups halved fresh strawberries
DRESSING:
1/4 cup mayonnaise
2 tablespoons sugar
1 tablespoon sour cream
1 tablespoon 2% milk
2-1/4 teaspoons cider vinegar
1-1/2 teaspoons poppy seeds

Steps:

  • Place sugar in a small heavy skillet; cook and stir over medium-low heat until melted and caramel-colored, about 10 minutes. Stir in almonds until coated. Spread on foil to cool. , Place romaine, onion and strawberries in a large bowl. Whisk together dressing ingredients; toss with salad. Break candied almonds into pieces; sprinkle over salad. Serve immediately.
