LEMONY PRAWNS & AVOCADO



Lemony prawns & avocado image

Make these starters up to two hours ahead and serve in glasses to show off the layers of colour

4 ripe avocados , chopped into small chunks
juice 2 lemons or 4 limes
12 cherry tomatoes , chopped
4 tbsp snipped chives
good dash Tabasco sauce
600g large peeled, cooked prawns , defrosted and patted dry if frozen
300g fromage frais
2 baguettes , sliced
olive oil for brushing

Steps:

  • Mix the avocado in a bowl with the lemon or lime juice. Add the tomatoes to the bowl with 2 tbsp chives and the Tabasco, then season to taste.
  • Divide the prawns between 12 glasses or glass dishes. Spoon over the avocado mixture. Mix the fromage frais with 1 tbsp chives, then season to taste. Spoon over, then sprinkle with the remaining chives. You can now chill for up to 2 hrs before serving. Brush the baguette slices with olive oil and toast on the barbecue to serve alongside.

2 avocados, halved with pits removed
½ lemon, zested
½ lemon, zested and juiced
½ teaspoon white sugar
1 tablespoon chopped Italian flat leaf parsley
1 ½ tablespoons olive oil
½ teaspoon chopped garlic
½ pound peeled and deveined prawns
1 teaspoon salt
1 pinch ground black pepper, to taste

Steps:

  • Mash the avocados, lemon zest, lemon juice, sugar, and parsley together in a bowl. Set aside.
  • Heat the olive oil in a skillet over medium-low heat; cook the garlic in the hot oil until slightly browned, about 5 minutes. Add the prawns and increase heat to medium. Season with salt and pepper. Cook and stir the prawns over medium heat until they begin to change color. Reduce heat to low. Stir the avocado mixture into the prawns; cook until the avocado is completely heated, about 2 minutes. Garnish with a little bit of black pepper to serve.

Spiced Prawns with Mexican Bean Stew & Avocado Salsa image

Prawns are great at soaking up all the spicy flavor of this zingy Mexican stew.

2 tablespoons olive oil
2 garlic cloves, crushed
1 to 2 tablespoons chipotle paste
Two 400-gram (14-ounce) cans mixed beans, drained and rinsed
One 400-gram (14-ounce) can chopped tomatoes
Two 150-grams (5-ounce) packets raw prawns
2 avocados, diced
1 small red onion, finely diced
Juice of 1 lime
2 tablespoons extra-virgin olive oil
Large handful of chopped cilantro

Steps:

  • Heat the olive oil in a frying pan over a medium heat and gently fry the garlic and chipotle paste for 1 minute, then add the beans, the tomatoes and 100 milliliters (1/2 cup) water. Season well with salt and pepper and bubble for 15 minutes until thickened and no longer raw-tasting.
  • Add the prawns and cook for 1 to 2 minutes until they are pink all over.
  • Meanwhile, mix the avocados with the onion and lime juice. Season well, drizzle over the extra-virgin olive oil and stir in half the cilantro.
  • Scatter the rest of the cilantro over the bean and prawn stew and serve with the salsa.

2 tsp wasabi paste
4 tbsp olive oil
2 tbsp lime juice, plus 6 wedges, to serve
1 tsp clear honey
2large ripe, but firm avocados
250g pack chilled large peeled prawns
2heads of chicory, red if possible, separated into leaves
few sprigs of watercress
prawn crackers, to serve

Steps:

  • In a large bowl, mix dressing ingredients until blended. Season with salt, then set aside.
  • To serve, halve and stone the avocados. Dice the flesh while it's still in the skin then scoop into a bowl. Add the prawns and toss in the dressing. Line six small serving bowls or tumblers with two or three chicory leaves. Pile in avocado and prawn mixture. Top with watercress and lime wedges. Serve with prawn crackers.

20 large prawns, peeled and deveined
2 -3 garlic cloves, minced
1 teaspoon paprika
1/2 teaspoon chili powder
1 tablespoon lime juice
salt
4 tomatoes, seeded and diced
1 avocado, diced
3 spring onions, finely chopped
1 fresh green chilies or 1 red chile, seeded and finely chopped
1 tablespoon finely chopped coriander
1 garlic clove, minced
4 tablespoons lime juice
3 tablespoons olive oil
salt & freshly ground black pepper

Steps:

  • For salsa, combine tomatoes, avocado, spring onion, chilli, coriander, garlic, lime juice and oil in a bowl and season with salt and pepper (you may make this upto 3 hours in advance. Cover tightly with cling film and refrigerate).
  • You will need 4 wooden skewers soaked in water for atleast 20 minutes to stop them from burning.
  • In a bowl, combine the minced garlic, paprika, chilli powder, lime juice and salt.
  • Add in the prawns and toss to coat evenly.
  • Thread 5 prawns onto each skewer, cover with clingfilm and refrigerate for 30 minutes (you may marinate the prawns upto 2 hours in advance).
  • Pre-heat indoor grill to medium-hot, or for outdoor grills, medium-hot coals.
  • Grill the prawns until they are pink and the flesh is opaque, about 3 minutes on each side.
  • Serve hot with salsa and/or grilled lime wedges.

190 g couscous
125 ml reduced-sodium chicken broth
125 ml water
2 teaspoons olive oil
2 small lebanese cucumbers, ends trimmed, finely chopped
2 carrots, peeled, finely chopped
1 small avocado, halved, stone removed, peeled, thinly sliced
400 g peeled cooked prawns, deveined
1/3 cup shredded of fresh mint
1 tablespoon finely grated lemon rind
60 ml fresh lemon juice
2 tablespoons olive oil

Steps:

  • Place the couscous in a heatproof bowl. Place the stock and water in a saucepan over medium heat. Bring to the boil. Stir in the oil. Pour the stock mixture over the couscous. Stir to combine. Set aside, covered, for 3 minutes or until the liquid is absorbed. Use a fork to separate grains. Set aside for 5 minutes to cool.
  • Meanwhile, to make the dressing, whisk together the lemon rind, lemon juice and oil in a small bowl. Season with salt and pepper.
  • Add the cucumber, carrot, avocado, prawns and mint to the couscous, and toss to combine.
  • Add the dressing and toss to combine. Divide among serving bowls and serve.

Steps:

  • melt the gelatine in a few spoons of the chicken stock in a bowl over some simmering water
  • add the gelatine stock and the rest of the stock to a magimix and add the avocado 'meat' and blend
  • and the garlic and lemon juice and blend until smooth and season to taste
  • pour the misture into an oiled or clingfilmed dish or individual ramekins and put into the fridge to set until serving time
  • to make the vinaigrette, mash the garlic with some salt and mix in some mustard and balsamic vinager. add the rest of the ingredients to your taste
  • to serve...place mousse on dish and scatter prawns on top. drizzle with vinaigrette. serve with toast
