4 slices crusty Italian bread
1/4 cup plus 1 tablespoon extra-virgin olive oil
2 ripe avocados
3 tablespoons minced fresh chives
3 tablespoons minced fresh parsley
2 teaspoons lemon juice
Kosher salt and freshly ground black pepper
1 large tomato, coarsely chopped
4 slices cooked bacon, chopped
Flaky sea salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Drizzle the bread slices with 1/4 cup of the olive oil. Place the bread on a baking sheet and bake until golden brown, 12 to 15 minutes.
  • Mash the avocados in a small bowl. Add 2 tablespoons each of the chives and parsley, the lemon juice, 1/2 teaspoon kosher salt and 1/2 teaspoon pepper; mix until fully combined.
  • Toss the tomatoes, the remaining 1 tablespoon each olive oil, chives and parsley, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a small bowl.
  • Spread each slice of bread with 1/2 cup of the avocado mixture and 1/8 cup of the tomato mixture. Sprinkle with the chopped bacon and flaky sea salt.

I first tried this from a recipe by I'mPat, but have come to see that to really add the little bit of umami, a tiny smear of vegemite on the bread is in order. But be warned- use vegemite in very small quantities because it is powerful schtuff.

1 ripe avocado
2 slice sourdough bread
4 slice bacon
1/4-1/2 tsp vegemite
2 Tbsp maple syrup

Steps:

  • 1. Cook bacon crisp and set aside.
  • 2. Pit avocado and mash with a fork until chunky-smooth..
  • 3. Toast the bread and spread a very small amount of vegemite on the toast, basically scraping it on.
  • 4. Top with a schmear of the mashed avocado and bacon.
  • 5. Drizzle with maple syrup.

  • Cut the avocado in half and carefully remove its stone, then scoop out the flesh into a bowl. Squeeze in the lemon juice then mash with a fork to your desired texture. Season to taste with sea salt, black pepper and chilli flakes. Toast your bread, drizzle over the oil then pile the avocado on top.

2 ripe avocados, halved, pitted and peeled
3 scallions, chopped
1 tablespoon lemon juice
Fine salt and freshly ground black pepper
4 slices smoked bacon
4 slices sourdough or crusty white bread, sliced 3/4-inch thick

Steps:

  • Preheat the oven broiler.
  • Mash the avocados in a medium bowl until slightly chunky. Stir in the scallions, lemon juice, 1/2 teaspoon salt and a few grinds of pepper and set aside.
  • Arrange the bacon in a large nonstick skillet over medium heat and cook until brown and crisp, about 4 minutes per side. Transfer to a paper towel-lined plate and reserve the drippings in the skillet. Brush each slice of bread with some bacon drippings. Arrange the bread on a baking sheet, bacon dripping side-up, and broil until lightly toasted.
  • Spread each toast with 1/4 of the mashed avocado, break each piece of bacon in half and top each toast with 2 halves.

4 rashers smoked bacon , streaky
6 cherry tomatoes , halved
1 small ripe avocado , peeled and stoned
squeeze lime juice
pinch dried chilli flakes
2 chunky slices granary bread

Steps:

  • Heat grill to high. Put the bacon and cherry tomatoes, cut side up, on a grill rack and grill for 10 mins, turning the bacon halfway through, until crisp. Meanwhile, roughly mash the avocado with a fork and stir in the lime juice, chilli flakes, some salt, if you like, and pepper.
  • Toast the bread until golden and spoon on the mashed avocado. Top with the tomatoes and bacon, then serve.
