Avocado and kiwi salad recipe - For lemon dressing, whisk ingredients in a bowl, season to taste.

Number Of Ingredients 8

3 kiwifruit, peeled and cut into bite-sized pieces
1 ripe avocado, cut into bite-sized pieces
110 gm green olives, such as Sicilian, pitted (½ cup)
1 tbsp salted capers, rinsed well and drained
2 heaped tbsp mixed (loosely packed) small lemon verbena leaves and marigold petals (optional; see note)
1½ tbsp olive oil
2 tsp lemon juice
1-2 tsp finely grated lemon rind

Steps:

  • For lemon dressing, whisk ingredients in a bowl, season to taste.
  • Combine salad ingredients except lemon verbena and petals in a bowl. Add dressing, season to taste and toss gently to coat. Transfer to a platter or serving plates, scatter with lemon verbena and petals, and serve.

3 medium kiwifruit, peeled and sliced
1/4 cup chopped pecans, toasted
2 tablespoons vanilla yogurt
2 tablespoons lemon juice
1 tablespoon olive oil
1 tablespoon honey

Steps:

  • Combine lettuce, kiwi and pecans. In a separate bowl, mix yogurt, lemon juice, oil and honey until smooth. Pour over salad and toss; serve immediately.

2 large avocados, diced
4 kiwi fruits, peeled and sliced
1 tablespoon parsley, finely chopped
1 tablespoon chives, snipped
6 tablespoons vinaigrette dressing
1/2 small cucumber, cut into julienne strips
2 celery ribs, cut into julienne strips
1 head boston lettuce
2 ounces watercress, cleaned and picked away from stems

Steps:

  • Toss the avocados and kiwi fruit with the berbs and half the vinaigrette dressing.
  • Toss the julienne of cucumber and celery in the remaining vinaigrette dressing.
  • To serve, arrange the lettuce leaves and watercress in a dish.
  • Pile on the avocado and kiwi fruit and arrange the cucumber and celery on top.
