1 large grapefruit, peeled and sectioned
6 mint leaves
½ sprig fresh dill, stemmed
½ teaspoon Chinese rice vinegar
1 ½ tablespoons avocado oil
1 large ripe avocado, cut into 1-inch pieces
¼ cup Belgian endive, thinly sliced
2 teaspoons minced fresh jalapeno pepper
¼ teaspoon coarse ground black pepper
⅛ teaspoon hibiscus salt

Steps:

  • Place 1 grapefruit segment, mint leaves, dill, vinegar, and oil into a mini electric blender. Pulse a few times to create a vinaigrette.
  • Place remaining grapefruit sections into a large bowl. Add avocado and endive. Pour vinaigrette over the salad and toss to coat. Let rest in the refrigerator for 1 hour. Top with jalapeno, black pepper, and hibiscus salt before serving.

This simple, refreshing salad from Alice Waters, the founder and owner of Chez Panisse, the legendary Berkeley restaurant, can be served as a first course or to revive the palate between the main course and dessert. It came to The Times in 2010 when the Well blog featured a number of recipes from "The Food Network South Beach Wine & Food Festival Cookbook: Recipes and Behind-the-Scenes Stories from America's Hottest Chefs."

2 medium ruby grapefruit
1 teaspoon white wine vinegar
Salt
Freshly ground black pepper
2 tablespoons extra virgin olive oil
2 medium Hass avocados, cut in half and pits removed
Fresh chervil

Steps:

  • With a sharp knife, peel the grapefruit down to the flesh, removing all the rind and pith. Cut the sections free, slicing carefully along the partitioning membranes, and set them aside. Squeeze the juice from the membranes. Measure 2 tablespoons of the juice into a small bowl.
  • Stir the vinegar into the juice, and season with salt and pepper to taste. Whisk in the oil. Taste, and adjust the acid and salt.
  • Peel the avocado halves and cut them into 1/4-inch slices. Sprinkle lightly with salt. Arrange the grapefruit sections and avocado slices alternately on a plate, and spoon the vinaigrette over. Garnish with chervil, and serve.

4 ripe avocados
1/2 cup freshly squeezed lime juice (about 3 limes)
4 ruby-red grapefruits
1 tablespoon honey
1/2 cup extra-virgin olive oil
1/2 teaspoon crushed red-pepper flakes
Salt and freshly ground black pepper
3 heads red-leaf lettuce (2 pounds)

Steps:

  • Cut avocados in half lengthwise, working around pit; twist to open. Remove pits; peel. Cut avocados into 1-inch pieces; toss in bowl with 1/4 cup lime juice.
  • Using a sharp knife, cut away peel, pith, and outer membranes from grapefruits. Slice flesh crosswise into 1/4-inch-thick rounds; place in bowl.
  • Make vinaigrette: Combine remaining 1/4 cup lime juice and honey in small bowl. Whisk in olive oil and red-pepper flakes; season with salt and pepper.
  • Place lettuce in serving bowl. Season with salt and pepper; drizzle with a quarter of the vinaigrette. Toss well.
  • Drizzle avocado pieces with three-quarters of remaining vinaigrette. Season with salt and pepper; toss well. Scatter avocado and grapefruit slices over greens; drizzle salad with remaining vinaigrette.

1 tablespoon Dijon mustard
1/4 cup freshly squeezed lemon juice
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1/2 cup good olive oil
4 ripe Hass avocados
2 large red grapefruits

Steps:

  • Place the mustard, lemon juice, salt, and pepper in a small bowl. Slowly whisk in the olive oil until the vinaigrette is emulsified.
  • Before serving, cut the avocados in 1/2, remove the seeds, and carefully peel off the skin. Cut each half into 4 thick slices. Toss the avocado slices in the vinaigrette to prevent them from turning brown. Use a large, sharp knife to slice the peel off the grapefruits (be sure to remove all the white pith), then cut between the membranes to release the grapefruit segments.
  • Arrange the avocado slices around the edge of a large platter. Arrange the grapefruit segments in the center. Spoon the vinaigrette on top, sprinkle with salt and pepper, and serve.

1 small shallot, finely chopped
1 tablespoon white-wine vinegar or Champagne vinegar
1 teaspoon lemon juice
1 teaspoon orange juice
Coarse salt
1/3 cup extra-virgin olive oil
1/4 teaspoon lemon zest
1/4 teaspoon orange zest
2 grapefruits, peeled and segmented
3 Hass avocados, peeled and thinly sliced lengthwise
Chervil sprigs, for garnish

Steps:

  • In a small bowl, combine shallot, vinegar, juices, and a pinch of salt. Let sit for 15 minutes. Whisk in oil and zests.
  • Arrange grapefruit and avocado on a serving platter. Drizzle with dressing, and sprinkle with chervil.

1 large red grapefruit, peel and pith cut away and sections cut fre from membranes
1/4 cup lime juice
1 tablespoon honey
1/4 teaspoon red pepper flakes
1/4 teaspoon dry mustard
3 tablespoons sugar
1/2 cup vegetable oil
salt and pepper

Steps:

  • Salad: Distribute the lettuce, avocado and grapefruit amoungst 6 salad plates.
  • Dressing: Combine the lime juice, honey, red pepper flakes, dry mustard, sugar and vegetable oil.
  • To serve: sprinkle a little of the dressing over the salad and serve.

1/4 cup plus 2 teaspoons lemon juice (2 lemons)
2 avocados, preferably Hass, halved lengthwise and pitted
2 red grapefruit
3/4 teaspoon coarse salt
2 tablespoons chopped fresh tarragon, plus more for garnish
Freshly ground pepper
1/4 cup olive oil
Lime wedges, for serving

Steps:

  • Brush 2 teaspoons lemon juice over flesh of avocados; set aside.
  • Remove peel and pith from grapefruit using a sharp paring knife. Working over a medium bowl to catch the juice, carefully carve out segments from between membranes. Transfer grapefruit segments to a small bowl; set aside. Reserve juice in bowl.
  • Add 1/4 cup lemon juice, the salt, and tarragon to the grapefruit juice; season with pepper. Whisk in oil in a slow, steady stream. Add grapefruit sections; toss gently just to coat.
  • Place each avocado half on a plate. Top with grapefruit mixture, dividing evenly. Garnish with tarragon. Serve with lime wedges.
