SUMMER KALE, AVOCADO, MANGO, AND CHICKPEA SALAD WITH CITRUS POPPY SEED VINAIGRETTE

Summer Kale, Avocado, Mango, and Chickpea Salad with Citrus Poppy Seed Vinaigrette image

This is a delicious summer salad. Great as a dinner salad with some grilled chicken or fish, or as a side. This is my first experience with kale, and I'm hooked! Add nuts (walnuts, cashews, slivered almonds), sunflower seeds, or dried fruit (cranberries or cherries) for some added texture and deliciousness! I also like to add thinly sliced red bell peppers or Shepherd peppers; it is a salad, anything goes! The citrus vinaigrette is light and refreshing. Sometimes I want a sweeter vinaigrette, hence the addition of marmalade. Apricot would work well, too. A great summertime salad.

Number Of Ingredients 9

1 blood or Valencia orange, sliced 1/8" thick, seeds removed
1 Meyer or regular lemon, sliced 1/8" thick, seeds removed
4 tablespoons olive oil, divided
Kosher salt, freshly ground pepper
1/4 small red onion, thinly sliced

  • Meanwhile, combine onion and lemon juice in a large bowl; season with salt and pepper and let sit 5 minutes (onion will soften a bit and get slightly sweeter and less harsh).
  • Add roasted citrus to bowl with onion along with arugula and mint. Drizzle remaining 3 tablespoons oil over; season with salt and pepper and toss everything to combine and coat.
  • Add avocado and very gently toss until lightly dressed (you don't want to crush the avocado).

SEARED CHILEAN SEA BASS WITH CITRUS POACHED MUSSELS, CHAYOTE SQUASH, AVOCADO CILANTRO SALAD, AND BLUE CRAB ESSENCE

Seared Chilean Sea Bass with Citrus Poached Mussels, Chayote Squash, Avocado Cilantro Salad, and Blue Crab Essence image

Provided by Food Network

Categories     main-dish

Time 2h40m

Yield 4 servings

Number Of Ingredients 21

2 orange peels
2 tablespoons olive oil
1 onion, sliced
16 mussels
1 1/2 cups white wine
2 oranges, juiced
Reserved mussel liquid
1/2 pound butter, cut into small pieces
4 live blue crabs
1 quart fish fumet or water
1/2 cup heavy cream
1/2 pound butter
1 avocado, julienned and tossed in lemon juice
12 cilantro leaves
1 teaspoon extra-virgin olive oil
3 tablespoons butter
2 chayote squash*, cut into small dice (See Cook's Note)
2 tablespoons chopped cilantro leaves
2 tablespoons vegetable oil
2 tablespoons butter
4 (6 to 8-ounce) fillets Chilean sea bass, striped bass, or halibut

Steps:

  • Mussels: Toast orange peels in a large, dry skillet or saucepan (with a lid that fits) until fragrant. Add olive oil and then onions, and saute over high heat for 30 seconds. Add mussels and stir them around a little. Add wine and cover with the lid; cook until mussels have opened, approximately 3 minutes. Strain and reserve liquid. Remove mussels from shells, reserve mussels, and discard shells.
  • Citrus Emulsion: Combine orange juice and reserved mussel liquid in a small saucepan. Reduce liquid over medium-high heat until it takes on the consistency of a syrup. While still hot, add butter, 1 piece at a time, stirring constantly. Keep warm.
  • Blue Crab Essence: Carefully drop crabs into a pot of rapidly boiling water for 4 minutes. Prepare an ice water bath. Drain crabs and immediately plunge them into the ice bath to halt the cooking. Pull all of the meat out of the claws and set aside. Crack crabs in half, discard anything that looks funky, rinse them, and reserve the shells.
  • Bring fish fumet (or water) to a simmer in a saucepan. Add crab shells and simmer for 45 minutes. Strain liquid through a fine chinois into another saucepan, discarding crab shells. To the liquid, add cream and butter. Keep warm.
  • Avocado Salad: Toss all ingredients together in a small bowl. Cover and refrigerate until ready to serve. Bring to room temperature before serving.
  • Chayote Squash: Heat butter in a skillet over high heat. Add squash and cilantro and saute until tender. Keep warm until ready to serve.
  • Chilean Sea Bass: Heat oil and butter in a large skillet over high heat. When pan is very hot, add fish and sear on each side until fully cooked through in the middle. Cooking time will vary based on the thickness of your fillets, but it should not take more than a couple minutes on each side. You may have to sear the fish in 2 batches so as not to over-crowd the pan.
  • While fish is cooking, reheat mussels in the Citrus Emulsion and reheat the crabmeat in butter.
  • To serve, spoon the Citrus Emulsion onto the middle of the plate, in a circle and spoon chayote on top. Arrange fish on top of chayote, and top fish with the Avocado Salad. Garnish with 4 mussels tightly around the chayote. With an immersion blender, froth the Blue Crab Essence. Spoon about 3 tablespoons of the essence around the plate, and place the crabmeat next to the froth.

CITRUS SALAD WITH PEANUTS AND AVOCADO

Citrus Salad With Peanuts and Avocado image

There's really no need for leafy greens in a big, meaty citrus salad. The first step is to acquire a range of fruit - citrus of different colors, sizes and shapes, with varied levels of acidity and sweetness. Cutting the fruit so you don't lose too much juice is key: Cut the pith and peel with a knife, then slice the fruit horizontally with a sharp knife that doesn't crush and squeeze. A simple dressing of fish sauce, sweetened with a little brown sugar, works well, especially when it's offset with some fatty pieces of avocado and some fresh herbs.

Provided by Tejal Rao

Categories     brunch, dinner, lunch, quick, salads and dressings, side dish

Time 35m

Yield 4 servings

Number Of Ingredients 11

2 blood oranges
2 grapefruits
2 tangerines
1 ripe avocado
1/4 cup fish sauce
2 tablespoons packed light-brown sugar
1 tablespoon rice-wine vinegar
1 shallot, minced
1 handful mint leaves
1 handful cilantro leaves
1/2 cup roasted, salted peanuts, roughly chopped

Steps:

  • Slice off citrus tips on both sides using a sharp knife to create two flat surfaces. Setting the citrus on one flat surface, slice off the skin and pith, following the shape of the sphere. Once skins are fully removed, slice each fruit horizontally into 1/2-inch-thick rounds. Roughly dice the avocado.
  • Whisk the fish sauce, sugar and vinegar in a large bowl until the sugar dissolves, then stir in the shallot. Transfer the citrus segments, avocado, half the herbs and half the peanuts to the dressing bowl, and gently toss to coat. Tip into a serving plate, and garnish with remaining herbs and peanuts.

Extra virgin olive oil
1 large shallot, diced fine
2 tablespoons white wine vinegar
1 tablespoon lemon juice
1 tablespoon orange juice
1 tablespoon chopped chervil

Put them in a bowl, season generously with salt and pepper, add the red wine vinegar and 1 tablespoon of olive oil, and toss gently. Put the shallot in a bowl and add the white wine vinegar, lemon juice, orange juice, and a pinch of salt. Let macerate for 15 minutes. CITRUS AND AVOCADO SALAD WITH ORANGE WATER

Citrus and Avocado Salad with Orange Water image

Salting the citrus draws out some of the juice, which becomes part of the vinaigrette.

Provided by Andy Baraghani

Categories     Bon Appétit     Salad     Citrus     Orange     Fruit     Grapefruit     Kumquat     Tarragon     Avocado     Pistachio     Healthy     Quick and Healthy     Vegetarian     Vegan     Wheat/Gluten-Free

Yield 4 servings

Number Of Ingredients 9

2 1/2 pounds mixed citrus (such as oranges, blood oranges, and/or grapefruit)
1/2 cup kumquats, thinly sliced, seeds removed (optional)
2 tablespoons fresh lemon juice
2 teaspoons orange-flower or rose water
Large pinch of kosher salt
1 avocado, cut into large pieces
3 tablespoons salted or unsalted, roasted pistachios, finely crushed
3 tablespoons tarragon leaves
Extra-virgin olive oil (for drizzling)

Steps:

  • Using a paring knife, remove peel and white pith from citrus, being careful not to remove too much of the flesh. Slice citrus into 1/2"-thick rounds, then cut into 1 1/2" pieces (it looks cool and is less fussy if pieces aren't too exact in shape and size). Transfer to a medium bowl and add kumquats, if using, lemon juice, orange-flower water, and salt. Toss and let sit 5 minutes so citrus can release some of their juices.
  • Transfer citrus, leaving juice behind, to a large plate. Tuck avocado in between and around citrus.
  • Spoon citrus juice over salad, scatter pistachios and tarragon over, and drizzle with oil.

Time 30m

Yield 4 servings

Number Of Ingredients 11

Four 5-to-6-ounce center-cut salmon fillets, skin-on, patted dry
2 teaspoons finely grated mixed citrus zest, such as orange and grapefruit
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper
2 tangelos or Cara Cara oranges
2 blood oranges
2 ruby red grapefruits
3 tablespoons extra-virgin olive oil
1 Hass avocado, pitted, peeled and sliced into wedges
1/2 cup chopped herbs, such as parsley or mint
2 scallions, thinly sliced

Steps:

  • Season the flesh side of the salmon with the citrus zest, thyme, salt and pepper.
  • Remove the skin and white pith from the tangelos, oranges and grapefruits with a sharp knife. Working over a large bowl, cut between the membranes of the grapefruits to release the sections into the bowl. Squeeze the membranes to extract the juice. Slice the tangelos and oranges into rounds and add them to the bowl.
  • In a large nonstick skillet, heat 1 tablespoon olive oil until shimmering. Add the salmon, skin-side down, and cook over medium heat, pressing gently with a fish spatula to flatten, until the skin is browned and crisp, about 5 minutes. Flip the salmon and cook until medium, 1 to 2 minutes.
  • Meanwhile, add the avocado, herbs, scallions and remaining 2 tablespoons olive oil to the large bowl with the citrus. Season with salt and pepper, then gently toss to mix. Serve the salad with the crispy salmon.

SHRIMP AND AVOCADO SALAD WITH CITRUS VINAIGRETTE (CAMARONES A LA VINAGRETA)

Shrimp and Avocado Salad With Citrus Vinaigrette (Camarones a la Vinagreta) image

Versions of seafood "coctel" are found around the Caribbean, usually with ketchup as a base for the sauce. In this recipe adapted from Von Diaz's "Coconuts and Collards" cookbook, the tomato and onion are part of the salad, and the dressing is based on citrus and olive oil, plus a bit of mustard to make it creamy. It's a refreshing and satisfying dish for hot weather, perfect with a cold beer at the end of a long summer day. Diced avocado makes the dish more filling, but it is optional.
