AUTUMN SQUASH SOUP

Autumn Squash Soup image

If you've never tried a butternut squash soup or pumpkin soup, then you're missing out...especially if you're a lover of sweets. Squash soup is one of my favorite things to eat in the fall and winter. When cooked, winter squashes turn soft and sweet, making them extremely versatile and comforting to eat when the weather is cool. Winter squashes like acorn and butternut squash can be hard to cut, so I like to slice them in half vertically, bake them, and then scoop out the flesh to use in a recipe. This way I don't have to kill my arm trying to cut up the squash when it's still hard as a rock.

Categories     Vegetable

Time 2h

Yield 6-8 serving(s)

Number Of Ingredients 12

2 acorn squash
1 medium butternut squash
1 large yellow onion
3 garlic cloves
2 jalapenos
1 (12 ounce) can coconut milk
1 tablespoon fresh sage
1 tablespoon fresh thyme
2 tablespoons extra virgin olive oil
1 quart vegetable stock
1/4 cup maple syrup (optional)
salt & pepper

Steps:

  • Cut the squashes in half vertically and arrange them face-up on a sheet pan. Drizzle 1 tablespoon of olive oil on top of the squash and bake in the oven at 400 degrees for about an hour. Remove the squash when it's tender and soft. Set aside to cool.
  • Chop up the onion, garlic, and jalapeño and put them in a big soup pot with the other tablespoon of olive oil over medium heat. Saute for about 10 minutes until the vegetables begin to soften, stirring frequently. Add in the vegetable stock, coconut milk, and a sprinkle of salt and pepper. Chop up the sage and thyme and add it to the pot and stir. Remove the squashes from their skins by either scooping out the flesh or cutting into big moons and slicing like a cantaloupe. Drop the cooked squash into the soup. Pour in the maple syrup (optional) and stir.
  • Puree the soup with an immersion blender or with your food processor or blender. When the soup is smooth, it's ready to eat. Adjust seasonings to your taste.
  • Tip 1: Try adding a little curry powder to this recipe for an extra kick of flavor. I love curry seasonings in squash soup, and I bet it would be a nice addition if you're a curry lover.
  • Tip 2: This makes a pretty thick soup. If you like it a little thinner, you can always increase the amount of vegetable stock in the recipe.

AUTUMN PUMPKIN AND SQUASH SOUP

Autumn Pumpkin and Squash Soup image

This hearty soup makes a great fall meal, served with a salad and some warm crusty bread (we usually have a whole wheat baguette), or use it as a first course. It is derived from a Pumpkin Soup recipe I found several years ago in The Wine Spectator. For a dressy presentation garnish with a bit of Creme Fraiche and some julienned prosciutto. I've made this recipe using brown sugar and also substituting Spenda and my family has not noticed a difference. I have also substituted low fat evaporated milk for the heavy cream with no issues in the final result. This soup can be prepared up to 24 hours before serving. re-heat over very low heat prior to serving.

  • Remove the pumpkin and squash from the oven and cool until easy to handle.

AUTUMN BUTTERNUT SQUASH SOUP

AUTUMN BUTTERNUT SQUASH SOUP image

Categories     Soup/Stew     Vegetable     Thanksgiving     Vegan

Yield 8 bowls

Number Of Ingredients 15

1 butternut squash
2-3 tablespoons butter
1 small red onion, chopped
2 garlic cloves, chopped
3-4 cups water (vegetable or chicken broth optional)
1 bay leaf
2-4 whole peppercorns, crushed
1/2 teaspoon coarse salt, or to taste
3 celery stalks, sliced
3 carrots peeled and sliced
1 red bell pepper, chopped
optional:
Serve with Cilantro Cashew 'Creme' (separate recipe)
OR
Creme fraiche/half & half

Steps:

  • Preheat oven 400 degrees. Wash butternut squash. Wrap in foil. Place squash in baking dish large enough to catch juices that may seep out while baking. Bake squash for about 40-50 min., depending on how big the squash is. Use a toothpick after 40 min., every 10 min. to test the firmness of the center of the squash. The toothpick should go in easily, without pushing too hard. If you feel resistance, add another 10 min. baking time and try the toothpick test again in 10 min. (This step can be done a day ahead of time.) Wait for squash to cool. Slice butternut squash in half. Spoon out seeds and seed pulp and discard. Using a serrated tool or a spoon, scoop out the 'meat' of the squash and place aside in a bowl. Heat a thick bottomed pot under medium high heat. Add butter. Once butter has melted, add onions. After about 2 min. add garlic and stir with a wooden spoon. Once the onion and garlic have browned a bit, add 1 to 2 cups of water (or broth). Keep water simmering. Add celery, carrots and stir. Add pepper and salt and stire. Add another cup of water so as to cover the vegetables. If at any time the pot gets too dry, add another cup of water (or broth). There should always be water boiling. After 5 min. add bell pepper and stir. After another 5 min. add the butternut squash 'meat' that was set aside earlier. Stir well. If too thick, add more water (or broth) to create the thickness you desire. (If you will be serving it with cream or soy milk, leave the soup a bit on the thick side so as to thin with the cream.) Set aside to cool. With a food processor (or blender) puree the soup. Add a little water (or broth) if too thick to blend. The soup can be stored in the refridgerator to be reheated at a later time. Or you can server immediately at room temperature! If reheating, use same thick bottomed pot.

AUTUMN SQUASH SOUP WITH PUFF PASTRY

Autumn Squash Soup with Puff Pastry image

Categories     Side     Bake     Squash     Kosher     Pastry     Simmer

Yield serves 6

Number Of Ingredients 12

1/2 acorn squash (about 3/4 pound), seeded
1 large orange-fleshed sweet potato, such as a Garnet yam (about 3/4 pound)
2 tablespoons unsalted butter
1 yellow onion, halved and thinly sliced
1/3 cup brandy
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1 quart chicken stock (page 190) or vegetable stock (page 191), plus more as needed
1/4 cup heavy cream
Kosher salt and freshly ground black pepper
1/2 pound frozen puff pastry, thawed but cold
Egg wash: 1 whole egg beaten with 1 tablespoon milk

Steps:

  • Preheat the oven to 400°F. Place the squash half, cut side down, in a pie tin or small baking dish with 1/2 inch of water. Bake, uncovered, until the flesh can be easily pierced with the tip of a paring knife, about 40 minutes, adding a little more water if necessary. When cool, scoop the flesh out of the skin. You should have about 1 cup.
  • Pierce the sweet potato in several places with a fork. Place it in a pie tin or on a baking sheet and bake alongside the squash until tender when pierced, about 1 hour. When cool enough to handle, scoop the flesh out of the skin. You should have about 1 cup.
  • Melt the butter in a large pot over medium heat. Add the onion and sauté until soft, about 5 minutes. Add the brandy and simmer for 1 to 2 minutes to burn off the alcohol. Add the squash, sweet potato, ginger, cinnamon, and stock. Bring to a simmer and cook gently for about 5 minutes to blend the flavors.
  • In a blender or food processor, puree the contents of the pot until smooth. Pour into a clean pot. Whisk in the cream. Thin with additional stock if needed to achieve a pleasing soup consistency. Season to taste with salt and pepper. Let cool to room temperature.
  • Preheat the oven to 425°F. On a lightly floured work surface, roll the puff pastry to a 1/8-inch thickness. Cut 6 rounds, each 2 inches larger in diameter than the top of the soup bowl (for a 5-inch bowl, cut a 7-inch round). To guide you, invert a bowl onto the flattened pastry and cut around it. You can gather and reroll the scraps once. Put the rounds on a baking sheet and refrigerate for 20 minutes.
  • Divide the soup among 6 ovenproof bowls. Brush the rim of each bowl with egg wash. Cover with a round of pastry and press the pastry firmly around the sides so the top is taut, like a drum. Make sure there are no cracks in the pastry. Brush the tops lightly with egg wash.
  • Bake until the pastry is puffed and golden brown, about 25 minutes. Serve immediately.
  • Enjoy with Cakebread Cellars Chardonnay Reserve or another full-bodied, oak-aged white wine.

PANERA AUTUMN SQUASH SOUP

PANERA AUTUMN SQUASH SOUP image

Categories     Soup/Stew     Squash     Fall

Number Of Ingredients 12

1 large butternut squash, peeled, seeded and chopped (or 20 oz package precut)
1 tablespoon canola oil
salt and pepper to taste
1 15 oz can pumpkin
1 cup vegetable broth
1 cup apple cider
1 cup half and half
1 1/2 tablespoon honey
1/4 teaspoon curry
1/2 teaspoon cinnamon
1 1/2 teaspoons salt
1/4 teaspoon black pepper

Steps:

  • Heat oven to 450. Toss chopped butternut squash with canola oil and salt and pepper. Roast for 25 minutes. Let cool 5 minutes. Using a potato ricer, press squash through ricer. (Or puree in blender if you don't have a ricer). In a large food processor, blend pureed squash and pumpkin, pouring vegetable broth, apple cider and half and half through the top while blending. Pour into sauce pan and heat over medium to a gentle boil. Add honey and spices. Simmer on low for 10 minutes and serve with roasted pumpkin seeds. ADDITIONAL NOTES: I've had a great response to this post and wanted to make a couple of notes based on comments and feedback I've received. Some people have felt the consistency was too thick, if you are using a whole butternut squash it may be difficult to use the right amount without weighting your cut up squash. Not to worry - just add additional broth and/or apple cider after you have pureed the squash until you reach your preferred consistency. I used a mild yellow curry, which blends nicely with the other spices, feel free to add more spice to your preference! Hope you enjoy!
