I started developing this soup for a RecipeZaar cooking contest. Finally finished it, a bit too late for the contest! A hearty soup, add bread and you have dinner.

2 cups dry white beans, soaked
2 tablespoons olive oil
8 ounces smoked bacon, cut in half crosswise
2 garlic cloves, chopped
3/4 cup onion, diced
1/2 cup leek, diced
1 cup celery, 1/4-inch diced
2 apples, tart cooking, peeled and cubed
1/2 cup carrot, 1/4-inch diced
2 cups butternut squash, 1/4-inch diced
1 1/2 tablespoons fresh thyme, chopped
1 1/2 tablespoons fresh rosemary, chopped
5 cups vegetable stock
sea salt & white pepper

Steps:

  • Heat olive oil in a heavy bottomed soup pot and saute bacon for 3 minutes.
  • Pour off any excess fat.
  • Add onions and garlic continuing to cook until onions are softened.
  • Add leeks, celery, carrots, butternut squash and soaked white beans along with thyme and rosemary.
  • Saute for 2 more minutes. Pour in chicken stock and bring to a boil.
  • Turn down heat and simmer slowly for 1 1/2 hour or until beans are tender.
  • Adjust final seasoning.

1 teaspoon extra virgin olive oil
1/4 cup chopped sweet onion
1 cup canned solid-pack pumpkin
1 tomatoes, chopped and seeded
1 cup chicken broth
1 dash salt
fresh ground pepper
1/2 cup evaporated skim milk, warmed
1 dash nutmeg

Steps:

  • Heat the oil in-a small saucepan.
  • When moderately hot, add the onion and saute until tender.
  • Add the pumpkin, tomato, broth, salt, and pepper.
  • Cover and cook for 8 to 10 minutes, stirring frequently.
  • Carefully pour the hot mixture into a blender puree until smooth.
  • Gradually add the milk and blend well.
  • Return to heat to warm.
  • Sprinkle with nutmeg before serving.

1 tablespoon olive oil
1 small onion, chopped
¼ cup butter
¼ cup all-purpose flour
2 cups 2% milk
2 cups water
1 cube vegetable bouillon
3 small carrots, cut into matchsticks
2 stalks celery, chopped
3 small potatoes, cubed, or more to taste
1 large bunch kale, chopped
⅛ teaspoon cayenne pepper
¾ teaspoon ground black pepper
2 ½ cups shredded extra-sharp Cheddar cheese

Steps:

  • Heat oil in a skillet over medium-high heat; saute onion until translucent, about 5 minutes. Set aside.
  • Melt butter in a soup pot over medium heat and add flour. Cook until roux is bubbly and beginning to turn brown, 3 to 4 minutes. Pour milk in gradually while whisking constantly. Add water and vegetable bouillon cube. Add carrots, celery, cooked onion, potatoes, kale, black pepper, and cayenne. Simmer, stirring occasionally, until vegetables are tender, about 45 minutes.
  • Add shredded Cheddar cheese to soup and stir until melted.

A dear friend of mine hosted a soup swap in her home a couple of years ago. This was the soup she made and it was may favorite out of the 8 different soups I took home that year. I just had to have the recipe!

Number Of Ingredients 13

1 yellow squash
1 sweet potato
1 large onion
1 stalk(s) celery
2 clove garlic
2 carrots
1 white potato (optional)
1 1/2 tsp salt
1/4 tsp pepper
1 tsp 1 tsp. thyme
2 Tbsp fresh chopped parsley
2 Tbsp olive oil
2+ c chicken stock (as needed)

Steps:

  • 1. Chop up the veggies into large chunks. Pile into a roasting pan, drizzle olive oil over the top and sprinkle with salt and pepper as well as these or any other herbs you might prefer.
  • 2. Roast, covered, at 350 degrees until the veggies are completely soft and tender.
  • 3. Transfer the veggies and roasting juices to a blender or food processor. Puree until smooth, adding chicken stock to achieve your desired thickness. Puree in small batches if needed.

8 carrots, stalks
6 parsnips
1/2 curly cabbage
1 whole onion
4 celery ribs
1 small turnip
4 garlic cloves, chopped
24 ounces low sodium chicken broth
1 teaspoon paprika
1 1/2 teaspoons cumin
1 tablespoon olive oil

Steps:

  • Chop all vegetables to one inch cubes.
  • chop garlic very fine.
  • In large pot, add olive oil and garlic.
  • Sauté garlic until fragrant.
  • Add all vegetables, and saute until slightly soft.
  • Add all chicken broth.
  • Add paprika and cumin.
  • Cover and bring to low boil.
  • Lower heat and simmer for 45 minutes.

This is a recipe that I came up with before going out of town. I needed to get rid of some perishable ingredients and didn't want to have to go to the store to buy anything else. I started with a pear and sweet potato soup recipe and improvised from there. Please let me know your alterations and suggestions. I hope you enjoy this recipe!

1 1/2 tablespoons butter
1 large white onion, diced
2 garlic cloves, minced
4 medium sized pears, peeled and diced
1 sweet potato, peeled and diced
4 cups chicken broth
2 cups beef stock
1/3 cup cooking sherry
1/4 cup half-and-half
1 (29 ounce) can pumpkin
1/2 tablespoon cracked pepper (or to taste)
1 tablespoon garlic salt (or to taste)
sour cream or Greek yogurt

Steps:

  • Saute onions and garlic in butter over medium heat until soft, but don't let brown.
  • Add pears and yam and cover, cooking 5-8 mins until yam is soft.
  • Add chicken broth and beef stock and bring to boil. Once at a boil reduce to a simmer for 30 minutes.
  • Add cooking sherry and half and half in the last 10 minutes of cooking.
  • Remove from heat and add pumpkin. Stir until combined.
  • Allow to cool for 15-30 minutes.
  • Puree in food processor or blender.
  • Return to heat and serve, garnishing with sour cream or yogurt, or put into containers to freeze.

Please note that this recipes uses a 1 1/2 to 2 quart slow cooker*
2 cups water (475 g)
1 1/2 cup winter squash, diced (210 g)
1 cup brussels sprouts, shredded (88 g)
1/2 cup carrots, diced (65 g)
1/4 cup bell pepper, diced (38 g)
2 tablespoons cooked onion, (11 g)
1 clove garlic, minced
1 vegan bouillon cube
1 teaspoon dried sage
2 teaspoons dried thyme (2 g)
1 teaspoon apple cider vinegar
Salt & pepper, to taste
Toasted minced pecans for garnish, optional

Steps:

  • Add everything except the last three ingredients to your 1 1/2 to 2 quart slow cooker and cook on low for 7 to 9 hours. Before serving, add apple cider vinegar, salt, and pepper. Serve with a sprinkling of toasted pecans.
