In this salad of hearty autumn greens, sunflower seeds and oil provide a deep, nutty flavor and are packed with vitamin E. Cold-pressed sunflower oil is available at some health food and import stores.

1/3 cup raw sunflower seeds
1 tablespoon whole-grain mustard
3 tablespoons fresh lemon juice (1 large lemon)
3/4 teaspoon coarse salt
1 tablespoon plus 1 teaspoon pure maple syrup
2 tablespoons sunflower oil, preferably cold-pressed
1/2 pound brussels sprouts, very thinly sliced (3 cups)
4 to 6 leaves of leafy greens such as Swiss chard and kale (preferably lacinato), stemmed and thinly sliced (3 cups)

Steps:

  • Preheat oven to 375 degrees. Toast sunflower seeds on a rimmed baking sheet in a single layer until golden, stirring occasionally, about 10 minutes. Set aside to cool. Meanwhile, stir mustard, lemon juice, salt, and maple syrup together in a small bowl; whisk in oil until emulsified.
  • Toss brussels sprouts, chard, and kale together. Stir in sunflower seeds and pour in dressing; toss to coat. Serve immediately.

My mom began making this salad a few years ago and, as soon as I tried it, I just had to get the recipe. This is my version, but can be varied in many different ways because it's all about the dressing! So simple, yet so delicious that you are sure to get requests for the recipe whenever you make it! You can use pecans, almonds, or pine nuts in place of the walnuts.

3 cups torn romaine lettuce
½ cup blueberries
¼ cup dried cranberries
¼ cup sunflower seeds
¼ cup walnut pieces
¼ cup crumbled feta cheese
¼ cup crumbled goat cheese
¼ cup white balsamic vinegar, or to taste
¼ cup maple syrup, or to taste
¼ cup grapeseed oil, or to taste
salt, to taste

Steps:

  • Toss the romaine lettuce, blueberries, dried cranberries, sunflower seeds, walnut pieces, feta cheese, and goat cheese in a large bowl. Pour the vinegar, syrup, and grapeseed oil over the salad one at a time; toss until evenly coated. Season with salt.

2 tablespoons freshly squeezed lime juice
1 tablespoons plus 2 Teaspoons low-sodium soy sauce, or tamari
2 teaspoons honey
2 small red onions, sliced as thinly as possible into rounds
1 tablespoon plus 1 teaspoon extra-virgin olive oil
6 ounces mixed salad greens, such as arugula, mizuna, and watercress
4 teaspoons raw sunflower seeds
2 teaspoons sesame seeds

Steps:

  • In a medium bowl, combine 1 tablespoon lime juice, 1 tablespoon soy sauce, and 1 teaspoon honey. Add onion; toss to coat. Cover with plastic wrap; marinate at room temperature up to 2 hours or in the refrigerator up to 5 days.
  • When ready to serve, make dressing: In a small bowl, combine remaining tablespoon lime juice with remaining 2 teaspoons soy sauce and 1 teaspoon honey. Slowly add oil in a steady stream, whisking until emulsified. Place greens in a salad bowl. Using tongs or a slotted spoon, transfer onions to salad bowl, draining off excess marinade. Pour dressing over salad mixture in bowl. Add sunflower and sesame seeds; toss to combine. Serve immediately.

½ cup olive oil
1 ½ tablespoons red wine vinegar
1 ½ tablespoons balsamic vinegar
1 clove garlic, minced
1 tablespoon mayonnaise
2 heads Bibb lettuce - rinsed, dried and torn
⅓ cup sunflower seeds
2 avocados - peeled, pitted and sliced

Steps:

  • Whisk together the olive oil, red wine vinegar, balsamic vinegar, garlic and mayonnaise. Season with salt and pepper to taste.
  • In a salad bowl, combine the lettuce and sunflower seeds. Toss with enough dressing to coat. Top with sliced avocado and serve.

1/2 cup sugar
2 teaspoons finely chopped onion
1 teaspoon Dijon mustard

1 bunch romaine, torn
1 cup shredded Swiss cheese
1 cup unsalted cashews
1 medium apple, chopped

  • In a blender, combine the lemon juice, sugar, onion, mustard and salt. While processing, gradually add oil in a steady stream. Stir in poppy seeds. Transfer to a small pitcher or bowl. Cover and refrigerate for 1 hour or until chilled., In a large salad bowl, combine the romaine, cheese, cashews, apple, pear and cranberries. Drizzle with dressing and toss to coat.

1 cup flat leaf parsley, rinsed and spun dry (or Italian)
1 1/2 cups red seedless grapes, halved
1/4 cup shelled roasted sunflower seeds
