1 lb ground beef (prefer 85/15 for flavor and less grease)
1 medium yellow or white onion (diced )
3 garlic cloves (chopped )
1 tsp kosher salt
2 tsp chili powder
1 tsp cumin
3 tbsp water
1/3 cup fresh cilantro **OPTIONAL (chopped )
2 10 oz cans red enchilada sauce (If you make your own sauce you will need about 2 1/4 cups.)
15 corn tortillas
8 oz block of cheddar cheese, shredded

Steps:

  • Preheat the oven to 350°
  • In a large skillet brown and crumble the ground beef, drain any excess grease.
  • Add the onions, garlic and salt saute for about 5 minutes until the onions are slightly softened. Stir in the 3 tbsp water, 2 tsp chili powder, 1 tsp cumin.
  • If using the cilantro, stir it in now. Remove the pan from the heat.

2 pounds ground beef
¼ onion, finely chopped
1 cup shredded Cheddar cheese
½ cup sour cream
1 tablespoon dried parsley
1 tablespoon taco seasoning
1 teaspoon dried oregano
½ teaspoon ground black pepper
2 ½ cups enchilada sauce
1 ½ teaspoons chili powder
1 clove garlic, minced
½ teaspoon salt
8 flour tortillas
1 (15 ounce) can black beans, rinsed and drained
1 (4 ounce) can sliced black olives, drained
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef with onion in a skillet over medium heat until meat is crumbly and no longer pink, about 10 minutes. Drain grease. Stir 1 cup Cheddar cheese, sour cream, parsley, taco seasoning, oregano, and black pepper into the ground beef until cheese has melted. Mix in enchilada sauce, chili powder, garlic, and salt; bring to a simmer, reduce heat to low, and simmer until meat sauce is slightly thickened, about 5 minutes.
  • Lay a tortilla onto a work surface and spoon about 1/4 cup of meat sauce down the center of the tortilla. Top meat sauce with 1 tablespoon black beans and a sprinkling of black olives. Roll the tortilla up, enclosing the filling, and lay seam-side down into a 9x13-inch baking dish. Repeat with remaining tortillas. Spoon any remaining meat sauce over the enchiladas and scatter any remaining black beans and black olives over the top. Sprinkle tortillas with 1/4 cup Cheddar cheese.
  • Bake in the preheated oven until cheese topping is melted and enchiladas and sauce are bubbling, 20 to 22 minutes. Let stand 5 minutes before serving.

1 can (10 ounces) enchilada sauce
1 cup salsa
6 flour tortillas (10 inch)
2 cups fresh or frozen corn
4 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook ground beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in enchilada sauce and salsa; set aside. , Place 2 tortillas, overlapping as necessary, in the bottom of a greased 13x9-in. baking dish. Cover with a third of the meat mixture. Top with 1 cup corn; sprinkle with 1-1/3 cups cheese. 1 lb lean ground beef
1 lb ground pork
salt, pepper, cumin and garlic to taste
1 yellow onion, diced
16 oz medium cheddar cheese
16 oz Monterey pepper jack cheese
8 oz small curd cottage cheese
8 oz sour cream
1 can(s) sliced black olives
12 fresh corn tortillas
1 can(s) Las Palmas Enchilada sauce
Frying oil for tortillas

Steps:

  • 1. Brown the ground beef and ground pork with diced onion. Season with the spices. Drain off any fat and set aside.
  • 2. Fry the corn tortillas whole and flat until crispy. Drain on paper.
  • 3. Grate the two kinds of cheese and set aside about 1/4 for the top. Combine the sour cream and cottage cheese to the large amount of cheddar and jack cheeses in a bowl.

1 pound ground beef
½ cup diced onion
2 cloves garlic, minced
1 (15 ounce) can Tex Mex-style diced tomatoes
1 (4 ounce) can chopped green chilies

1 (1 ounce) packet taco seasoning mix
1 (20 ounce) can refried black beans
2 (10 ounce) cans red enchilada sauce (such as Old El Paso®)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cook and stir ground beef and onions in a large skillet over medium-high heat until meat is browned and crumbly, 7 to 10 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in diced tomatoes, green chiles, cilantro, and taco seasoning mix. Remove from heat.

I have made this for many years and still enjoy it! It's from an old Mexican cookbook that I've had for so long, the pages are all yellowed and about worn out. If you will measure all of your ingredients and get everything ready, this can be made in 30 minutes.I usually double this and it comes out fine.

1 lb ground beef
1 onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chili powder
1 (8 ounce) can tomato sauce
6 corn tortillas (your own or purchased)
butter or margarine
1 (4 1/2 ounce) can tomato sauce
1/2 cup water
1 1/2 cups about 6 oz. sharp cheddar cheese, shredded

Steps:

  • In a wide frying pan over medium-high heat, brown the beef and onions. Add salt, pepper, chili powder and tomato sauce.
  • Spread each tortilla with butter.
  • In a 2-qt. casserole, alternate layers of buttered tortillas, meat sauce,olives and cheese.
  • Mix together the water and the last tomato sauce,pour it over all, cover, and bake in a 400°F oven for 20 minutes.
