AUTHENTIC AND EASY CHICKEN FAJITAS
My kids' favorite meal. I make these on my BBQ with a cast iron grill insert. I fell in love with the flavor of chiles (fresh and powdered) from Hatch, NM during a trip to AZ a few years ago, and they are now the staple in all my Mexican cooking. Note this recipe is made with 'mild' chile powder and is not spicy - which works...

Steps:
- 1. Combine marinade ingredients in a zip lock bag or plastic container
- 2. Add Chicken, toss to coat and refridgerate for 2 hours
- 3. Heat 2 tbsp of Olive Oil in cast iron skillet or regular frying pan
- 4. Add Peppers and Onions and sprinkle with Cumin, Chile Powder and Salt
- 5. Begin heating Tortillas in a dry frying pan on medium heat - about 30 seconds per side. Keep warm in foil or tortilla warmer
- 6. Saute until tender, turning frequently to mix seasoning with veggies - about 5 mins
- 7. Remove veggies and set aside
- 8. Add remaining 1 tbsp of olive oil to skillet/pan and heat for a few seconds
- 9. Add marinaded chicken and cook until meat is 'white' all the way through - about 3-4 mins per side, depending on thickness
- 10. Chop cooked chicken breasts into bite sized pieces, serve and enjoy with your favorite Mexican condiments!!
EASY CHICKEN FAJITAS

- Cut onion into slivers & slice peppers.
- In a separate bowl, combine 1 tablespoon olive oil, juice of ½ lime, chili powder, paprika, onion powder, pepper, cumin and salt. Cut chicken into strips and toss with the spice mixture.
- Preheat 1 tablespoon olive oil over medium high. Add ½ of the chicken and cook until just cooked, about 3-5 minutes. Remove from pan and set aside. Repeat with remaining chicken.
- Set chicken aside and add 1 tablespoon oil to the pan. Drain onions well (if soaking per note below) and cook 2 minutes. Add in sliced peppers and cook an additional 2 minutes or just until hot. Add chicken back to the pan and stir to combine.
- Squeeze additional lime overtop and serve over tortillas.

HOMEMADE CHICKEN FAJITAS
Making homemade fajita seasoning is a lot easier than you might think, and you probably already have the ingredients in your spice cabinet. Simply combine a mixture of chili powder, cumin, paprika, cayenne pepper, garlic powder, salt, and black pepper, and voila, you're ready to make fajitas. Brighten up this dish with a mixture of red, orange, yellow, and green peppers. Top with your favorite garnishes. We use sour cream, pico de gallo, and guacamole.

- Whisk chili powder, paprika, salt, pepper, cayenne pepper, and garlic powder for fajita seasoning together in a small bowl.
- Trim chicken of any excess fat and place in a large, lidded bowl. Add 2 tablespoons olive oil and sprinkle with about 3/4 of the fajita seasoning. Toss, adding more oil if necessary, until coated. Poke chicken with a knife to allow penetration of seasoning and oil. Place the lid on the bowl and shake until chicken is thoroughly coated. Marinate in the refrigerator, shaking every couple of hours, for 4 to 6 hours.
- Remove the marinating bowl from the refrigerator and let sit on the counter until chicken is room temperature, about 1 hour.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Preheat the oven to 350 degrees F (175 degrees C). Make 2 stacks of 4 tortillas, and wrap each one in aluminum foil.
- Heat remaining 2 tablespoons olive oil in a large skillet over medium heat. Add peppers and onion. Stir in remaining fajita seasoning and cook, stirring occasionally, until vegetables are soft, 8 to 10 minutes.
- While vegetables are cooking, place tortillas in the oven to warm. At the same time, grill chicken, turning halfway through, until no longer pink in the center and the juices run clear, 2 to 3 minutes per side.
- To assemble fajitas, fill warmed tortillas with chicken, peppers, and onions.

EASY CHICKEN FAJITA MARINADE
This is a simple fajita marinade that has been bounced around in my family for at least 15 years. It's simple, tasty, easily altered for a twist on the taste, and can be easily prepared in under 15 minutes. Serve with other fajita elements and enjoy! Some ideas: sauteed green bell pepper with white or yellow onions, jalapeno slaw, homemade salsa (tomato or mango), etc.

- Whisk vegetable oil, chili powder, lime juice, honey, garlic powder, paprika, and black pepper in a bowl to make a marinade.
