The Best Tuna Salad image

While we love many kinds of tuna salad, this classic version tops them all. The crispy celery and red onion give add zest and crunch, while mayonnaise and touch of mustard marry it all together. The lemon juice is optional as it's not traditional, but we strongly recommend it to brighten up the flavors of the final dish.

Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole-grain mustard
Freshly ground black pepper
Freshly squeezed lemon juice (optional)

Steps:

  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion and parsley. Add the mayonnaise, mustard and season with pepper, to taste. Stir to combine. Add lemon juice, to taste, if using.

TUNA FISH SALAD

Serve a scoop on top of a green salad, or between two pieces of bread with fresh lettuce. Sprinkle a little paprika on top to add a little flavor and color.

1 tablespoon chopped fresh parsley
¼ cup chopped celery
½ cup mayonnaise
½ teaspoon lemon juice
¼ cup chopped onion
¼ teaspoon garlic powder
⅛ teaspoon salt
⅛ teaspoon ground black pepper
paprika to taste

Steps:

  • In a large bowl, combine the tuna, celery, onion, mayonnaise, lemon juice, parsley, garlic powder, salt and pepper. Mix well and refrigerate until chilled. Sprinkle with paprika if desired.

Could there be a more delightful dish to usher in the beginning of the warm weather season than a delicious, crispy salad? As an added bonus, this salad is as pretty as a picture and tastes as good as it looks! We have used both the Yellowfin tuna (also known as Ahi tuna) marinated in lemon dill and olive oil, and the one with roasted garlic in olive oil. Both are equally delicious. My husband and I have a newsletter publishing company and work from home. I came up with this recipe because I needed something crunchy and filling for a mid-day meal. And one that wasn't calorie laden.

1 (5 1/2 ounce) can yellowfin tuna fillets, drained and separated
1/2 cup celery, chopped
1/2 cup walnuts, chopped
1/3 cup red onion, chopped
1/2 cup apple, e.g. such as Red Delicious, chopped
1/3 cup red bell pepper, chopped (reserve 2 tablespoons for garnish)
1/3 cup reduced-calorie mayonnaise
3 cups lettuce leaves
3 cups baby spinach leaves
3 hard-boiled eggs, sliced
6 cherry tomatoes, sliced
fresh ground pepper
extra virgin olive oil, and
balsamic vinegar, to taste

Steps:

  • Toss together tuna, celery, walnuts, red onion, apple and red bell pepper until thoroughly mixed.
  • Stir in mayonnaise until ingredients are completed coated.
  • Tear lettuce/spinach leaves into bite sized pieces and divide equally among 4 salad bowls.
  • Place scoops of tuna mixture in center of lettuce/spinach leaves.
  • Arrange sliced eggs and tomatoes around edge of tuna mixture. Garnish with reserved bell pepper. Season with fresh ground pepper, to taste.
  • Serve with crackers or toasted bread rounds.
  • Optional: For an added boost of flavor, drizzle salad with extra virgin olive oil and balsamic vinegar.

SUMMER TUNA & PASTA SALAD



Summer Tuna & Pasta Salad image

This recipe is a combination of two other recipes with my own ideas incorportated into it to make it a salad that is also a meal in itself. Be sure to refrigerate overnight and serve it cold.

Number Of Ingredients 14

2/3 cup green bell pepper, chopped
2/3 cup yellow bell pepper, chopped
1/2 cup finely chopped celery
1/2 cup chopped red onions or 1/2 cup vidalia onion
3/4-1 cup shredded cheddar cheese
4 -5 hard-cooked eggs, coarsly chopped
3/4-1 cup frozen baby peas, slightly thawed
1/2 cup water chestnut, chopped (optional)
8 slices bacon, fried crisp and crumbled (optional)
12 ounces light chunk tuna in water, well drained and flaked into bite sized pieces (can use cooked chicken or ham also)
8 ounces tri-color spiral pasta, cooked 10 to 12 minutes, drain off and rinse in cold water, drain off again & add to bowl
3/4 cup salad dressing (not mayonnaise)
1/2 cup caesar salad dressing, and dip (comes in a jar, and is quite thick)
3 -4 tablespoons milk (Try 3 Tbsp. first, if still too thick, add one additional Tbsp.)

Steps:

  • Put all prepared ingredients into a very large bowl and mix well. Then pour dressing over salad and mix to coat the ingredients well. Refrigerate overnight before serving. Serve cold.
  • Note: For a different flavor change, try: about 1 cup Italian dressing, or 1 cup of Ranch dressing.
