The Aussie version of bacon & eggs is interesting because it's served with a side of baked beans. We were skeptical at first but really enjoyed the compliment they afforded the eggs & bacon. We used Bush's baked beans in original style for this recipe. Very delicious & we felt like it was a heartier breakfast than with just bacon & eggs. Recipe from Syrie Wongkaew on About.com. 4 large eggs
6 slices smoked bacon
4 slices whole wheat bread
1 (14 1/2 ounce) can baked beans
butter (for toast)

Steps:

  • Put baked beans in a medium pot, over medium heat and bring to a boil; reduce heat and simmer til serving time.
  • Meanwhile, fry the bacon until desired crispness and drain on paper towels.
  • Fry the eggs in the same pan used to fry the bacon.
  • Toast the bread and spread with butter.
  • Place one egg on top of each slice of toast and serve with bacon and beans on the side.

These are honestly my favorite thing on the menu. I would really hate to count the times, were my family has had these for dinner. Keep in mind when you fry French fries, you need your oil nice and hot, do not cook many fries at once.

Yield 1-2 pounds of fries with cheese, 4-6 serving(s)

Number Of Ingredients 3

1 (2 lb) bag of frozen French fries
1 cup shredded colby-monterey jack cheese (An excellent suggestion is to use the cheese that is labeled as "Taco Cheese", cheese for Tacos.)
6 pieces bacon, cooked

Steps:

  • Divide the fries into half, and use the other half later.
  • Heat oil to 350degrees.
  • If you do not have a thermostat, make sure the oil is hot enough, so that when you set a French fry in there it will cook immediately.
  • If the French fry sinks to the bottom, and barely bubbles, it is not hot enough.
  • Fry the potatoes in small batches, they are done when they are golden brown, and float to the top of the skillet.
  • Be sure to drain the potatoes on paper towels.
  • You can keep them warm in the oven while the other fries are done.
  • When all French fries are done cooking, and drained place them onto a platter.
  • Salt the French fries if you like, and sprinkle on cheese and cooked bacon.
  • Pop these back into a warm oven until the cheese begins to melt.

Not quite Steak and Eggs as a Full Aussie Brekkie (Breakfast) often is, but another great Australian export - Lamb! This is a full breakfast that can be eaten all day or will set you up for the day, if eaten in the morning! My Dad's Aussie colleagues introduced us to this, when we lived in Hong Kong.......a vertitable meat feast!

Yield 2 Bushman's Breakfasts, 2 serving(s)

Number Of Ingredients 8

2 lamb loin chops
2 thick sausages
2 slices bacon
100 g mushrooms
1 large tomatoes (cut in half)
2 tablespoons grated cheddar cheese
1 tablespoon oil
2 eggs

Steps:

  • Trim chops of excess fat, pierce sausages with a fork. Place chops and sausages on oiled grill tray, cook under high heat for 2 minutes, turn, cook 2 minutes, continue cooking chops and sausages until they are done to your liking.
  • In a pan, fry bacon until crisp, remove, keep warm.
  • Add mushrooms, cook until browned, remove and keep warm.
  • Then place tomato, cut side down on grill tray, cook for 2 minutes, turn, sprinkle with cheese on top, cook until tender.
  • About 3 minutes before serving, heat oil in frying pan, cook eggs over low heat, serve with cooked meat, tomato, bacon and mushrooms.
  • Serve with toast if you wish & hot, strong tea!
