DEEP-DISH FRITO PIE



Deep-Dish Frito Pie image

Three words: fancy Frito® pie. We love eating the classic out of the bag (who doesn't?) but this deep-dish version is packed with Frito® flavor -- in the crust, chili and topping.

6 ounces Fritos® (4 1/2 cups), plus more for serving
1 cup all-purpose flour (see Cook's Note)
1 large egg, lightly beaten
8 ounces sharp Cheddar, shredded
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
1 pound ground beef (80/20)
4 cloves garlic, finely chopped
1 red bell pepper, stemmed and seeded, chopped
1/2 medium onion, chopped
1/4 cup chili powder
1 tablespoon tomato paste
1 teaspoon ground cumin
1 cup low-sodium chicken broth
1 tablespoon cornstarch
For Serving: Sour cream, guacamole, pico de gallo, shredded iceberg lettuce, pickled jalapeno slices, chopped onion and fresh cilantro leaves

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F.
  • Pulse 4 ounces (3 cups) of Fritos® in a food processor until finely ground. Remove and reserve half of the Frito® crumbs. Add the flour, egg, 2 ounces (1/2 cup) Cheddar, 2 to 3 tablespoons of water and 1 teaspoon salt to the crumbs in the food processor. Pulse until a uniform dough forms, add an additional tablespoon of water if needed.
  • Transfer the dough to a 9-inch pie pan and use the bottom of a measuring cup to press evenly across the bottom and up the side of the pan. Prick holes in the bottom of the dough with a fork. Bake until lightly browned, 15 to 20 minutes. Set aside while making the chili.
  • Meanwhile, heat the oil in a large skillet over high heat. Add the beef and cook, breaking it up with a wooden spoon, until browned but not completely cooked through, 6 to 8 minutes. Transfer to a medium bowl with a slotted spoon, leaving behind as much fat in the skillet as possible. Reduce the heat to medium, add the garlic, bell pepper and onion and cook, stirring, until tender but not browned, 6 to 8 minutes. Add the chili powder, tomato paste and cumin and cook, stirring, until fragrant, about 1 minute. Add the chicken broth and reserved beef along with any accumulated juices to skillet. Bring to a simmer and cook, stirring and scraping up any brown bits from the skillet, until the liquid is almost evaporated, 6 to 8 minutes. Season to taste with salt and pepper. Add the cornstarch, reserved Frito crumbs and 2 ounces (1/2 cup) Cheddar and stir until combined.
  • Transfer the chili to the pie crust, top with the remaining 4 ounces (1 cup) Cheddar, cover with foil and bake until the cheese is melted and the filling is bubbly, 15 to 20 minutes. Remove the foil and bake, uncovered, for 5 minutes more. Let cool 15 minutes then top with a layer of sour cream, guacamole and pico de gallo. Mound iceberg lettuce on top and sprinkle with pickled jalapeno slices, chopped onion, remaining Fritos and fresh cilantro leaves.

1 pound ground beef
1 medium onion, chopped
2 cans (15 ounces each) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 package (9-1/4 ounces) Frito corn chips
2 cans (10 ounces each) enchilada sauce
2 cups shredded cheddar cheese
Thinly sliced green onions, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain. Stir in beans; heat through., Reserve 1 cup corn chips for topping. Place remaining corn chips in a greased 13x9-in. baking dish. Layer with meat mixture, enchilada sauce and cheese; top with reserved chips., Bake, uncovered, 15-20 minutes or until cheese is melted. If desired, sprinkle with green onions.

1 lb ground beef
1 large can green enchilada sauce
2 can(s) black olives, sliced
1 can(s) mushrooms, sliced (optional)
1 pkg mexican blend shredded cheese
1 large bag of frito's corn chips, crushed
sour cream, for topping

Steps:

  • 1. Brown the ground beef in a skillet, Add the green enchilada, black olives and mushrooms to the ground beef and simmer until the sauce is bubbly.
  • 2. Crush the Frito's into small pieces and layer half of the bag at the bottom of a pan (I used a glass pan) Pour the meat mixture on top of the layer of chips.
  • 3. Spread the rest of the chips on top of the meat mixture and sprinkle the cheese on top. Bake the pie in the oven on 400 degrees until cheese is melted. Cut the "pie" into 8 squares and place a dollup of sour cream on top of each square. Enjoy!

SHEET PAN FRITO PIE

A classic Frito pie is served right out of the bag but this family-size version is assembled on a baking sheet for easy serving. A quick stove-top chili is spooned over the chips and topped with sharp Cheddar, then broiled until nicely gooey. Even better, the homemade chili comes together in the time it takes to prepare your favorite toppings.

3 tablespoons extra-virgin olive oil
1 large white onion, finely chopped
1 jalapeño, stemmed, seeded and minced
6 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 pound lean ground beef
1/4 cup tomato paste
2 tablespoons chili powder
1 teaspoon ground cumin
1 cup strained tomatoes
1 cup chicken broth
One 15-ounce can pink or pinto beans, rinsed and drained
4 ounces sharp yellow Cheddar
One 9 1/4-ounce bag Fritos corn chips
Sour cream
Diced tomatoes
Diced avocado
Cilantro leaves
Sliced jalapeños
Hot Sauce

Steps:

  • In a large, deep skillet, heat the olive oil over medium heat. Add three-fourths of the onion and cook, stirring occasionally, until just starting to soften, about 3 minutes. Add the jalapeño and garlic and cook, stirring occasionally, until the onion is softened and the vegetables are just starting to brown, about 5 minutes.
  • Add the beef and a generous pinch of salt to the skillet. Cook over medium-high heat, breaking up the meat with a wooden spoon or potato masher, until cooked through, 6 to 8 minutes. Add the tomato paste, chili powder and cumin and cook until fragrant and the meat is coated, 1 to 2 minutes. Add the strained tomatoes, chicken broth and beans. Bring to a simmer, then stir in the beans and simmer over medium-low heat until thickened, 10 to 15 minutes; season with salt and pepper.
  • While the chili simmers, shred the cheese and prepare your desired toppings.
  • Position the oven rack 6 to 8 inches from the heat source and preheat the broiler to high. Spread the Fritos on a large rimmed baking sheet. Spoon the chili evenly over the chips, then sprinkle the cheese on top. Broil for 1 to 3 minutes, until the cheese is bubbling. Top with the remaining diced onion and your choice of toppings.

EZ BAKED FRITO PIE

This is great for times when you don't want to cook, but still want a hot meal. My Dad has always made it, and over the years I have tweaked his recipe a bit. It is very easy to make, takes very little time, and the leftovers are great. It is a meal in itself, though I sometimes enjoy it with a couple of warm flour tortillas.

2 cans hormel chili (hot or mild, with or without beans)
1 small diced onion (optional)
sliced jalapeno (optional)
diced green chili (optional)
1 bag Fritos corn chips
3 cups shredded cheese

Steps:

  • Pre-heat oven to 350 degrees Heat the canned chili and any optional ingredients on the stove.
  • Spread a thin layer of Fritos along the bottom of an 8x8 or 9x9 baking dish.
  • Pour about half of the heated chili evenly over the bottom layer of Fritos.
  • Completely cover the chili layer with a thicker layer of Fritos.
  • Sprinkle about half the shredded cheese atop the Fritos.
  • Pour the remainder of the chili atop the Frito/cheese layer.
  • Completely cover the top chili layer with another thick layer of Fritos, then sprinkle on the remaining cheese.
  • Bake in 350 oven for about 25-30 minutes, or until bubbly around edges and top cheese is melted.
  • Allow to cool for about 5 minutes before serving.
