This showstopper no-bake Jell-O cake is as delicious to eat as it is pretty to look at. Cubes of Jell-O are suspended in a creamy vanilla-flavored gelatin, and then set in a jello mold to create a stained glass effect.

5 (3 ounce) packages sweetened gelatin mix (such as Jell-O®), 5 different colors
3 ½ cups boiling water, divided
3 ½ cups cold water, divided
1 (1 ounce) package unflavored gelatin powder
1 (14.1 ounce) can sweetened condensed milk
1 ¼ cups double cream
1 teaspoon vanilla extract

Steps:

  • Place each gelatin mix in a separate bowl; stir 1/2 cup boiling water into each until completely dissolved, about 2 minutes. Stir 1/2 cup cold water into each gelatin mix; refrigerate until completely set, 4 hours to overnight.
  • Grease a 9-inch cake pan or use a silicone mold. Slice the chilled gelatin into cubes and gently toss together; tip into the prepared cake pan.
  • Pour 1 cup cold water into a bowl and sprinkle unflavored gelatin over water; let sit until dissolved, 2 to 3 minutes. Add 1 cup boiling water and stir until gelatin is dissolved.
  • Pour sweetened condensed milk into a blender or food processor. Add condensed milk, unflavored gelatin mixture and vanilla extract to the blender. Blend mixture until well combined; pour over gelatin cubes in the cake pan. Evenly distribute milk mixture using a spatula.
  • Refrigerate until set, 4 hours to overnight. Run a knife along the sides of the mold and invert cake onto a plate.

1 (3 ounce) package orange gelatin
1 (3 ounce) package lime Jell-O gelatin
1 (3 ounce) package strawberry gelatin
3 -4 1/2 cups hot water (1 - 1 1/2 cups for each package)
1 (1/4 ounce) envelope plain gelatin
1/4 cup cold water
1 cup hot pineapple juice
1 pint heavy sweet cream
1/2 cup sugar
1 tablespoon vanilla
2 (250 g) boxes ladyfingers

Steps:

  • Separately dissolve each package of Jello/Gelatin in HOT water.
  • Stir until completely dissolved.
  • Refrigerate until firm--- then cut into cubes.
  • Soften plain gelatin in 1/4 cup of COLD water and add HOT Pineapple Juice until dissolved.
  • Cool then fold into whipped cream to which you have added vanilla and cream to.
  • Line Spring pan with Lady Fingers (***HINT Trim tips so they stand***).
  • Add Jello/Gelatin cubes to cream mixture and pour into Spring pan.
  • Decorate top with tips of Lady Fingers you cut off.
  • Chill 6- 12 hours.
  • Remove sides from pan and serve in slices!
  • ENJOY!

This beautiful fruit cake looks best cut into thin slices to show off the colours of the fruits and nuts. This is great to serve at Christmas time- or any time with coffee and port after dinner! An Australian cup is 250mls and a tablespoon contains 4 teaspoons. Thanks to the reviewer who pointed out my typo in the intro :-)

250 g dessert dates, stoned
125 g glace pineapple
125 g glace apricot
125 g glace cherries
125 g glace green cherries
125 g whole blanched almonds
250 g shelled brazil nuts
125 g prunes, stoned and halved
2 eggs
1/2 cup brown sugar, lightly packed
1 teaspoon vanilla essence
2 tablespoons rum (40ml)
90 g butter
1/2 cup plain flour
1/2 teaspoon baking powder
1 pinch salt

Steps:

  • Chop the pineapple and apricots into fairly large pieces, and leave the remaining fruit and nuts whole.
  • Mix all these fruits and nuts together, then reserve a half cup of them for the topping.
  • Beat the eggs until light and fluffy, then add the sugar, vanilla essence, rum and softened butter.
  • Continue beating until well blended.
  • Sift the flour with the baking powder and salt and add with the fruit and nuts, mix thoroughly.
  • Grease a 20cm ring tin and line the base.
  • Spoon mixture evenly into the tin, arrange the reserved fruit and nuts over the top, pressing down gently.
  • Bake in a slow oven for about 1 1/2 hours or until cake is firm to touch.
  • Allow to cool for 10 minutes in the tin before turning out.
  • Store in an airtight container wrapped in foil.
  • To serve, cut into very thin slices with a very sharp knife-the thin slices show off the beautiful colours of the fruits.

1 pkg orange cake mix (no pudding in it) can sub lemon cake mix plus 1 tsp grated orange rind
3 oz package orange jello
4 eggs
3/4 c cooking oil
1 c water
GLAZE
1 c powdered confectioners sugar
1/3 c orange juice
1 Tbsp grand marnier (optional)

Steps:

  • 1. Preheat oven to 350 degrees Generously spray a 9 x 13 or 9 x 15 glass pan with cooking spray
  • 2. Mix all ingredients except those for the glaze until well moistened. Beat two to three minutes at medium speed.
  • 3. Bake 40 to 50 minutes
  • 4. While cake is baking, prepare glaze by thoroughly mixing the orange juice, powdered sugar and Grand Marnier if desired.
  • 5. As soon s cake is removed from oven, prick entire cake with large fork, thrusting through to the bottom. Immediately spoon the glaze over the hot cake.
  • 6. (Cake may be frozen) (Can sub in other types of jello, sugar free jello and lemon or lime juice to compliment the flavor you select ~)

1/2 cup butter, softened
1 cup sugar
2 large eggs
1 cup sour cream
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
TOPPING:
1/2 cup sugar
1/4 cup chopped walnuts
2 tablespoons sweetened shredded coconut
2 teaspoons ground cinnamon

Steps:

  • In a large bowl, cream the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in , sour cream and vanilla. Combine the flour, baking soda and salt; add to the creamed mixture and mix well. Spread half into a greased 9-in. square baking pan., Combine topping ingredients; sprinkle half over batter. Carefully spread remaining batter on top; sprinkle with remaining topping. Gently swirl topping through batter with a knife., Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes on a wire rack., Serve warm.
