Nothing screams 4th of July more than fireworks and macaroni salad! Growing up in a large extended family, it was common to expect certain things when coming together. On the table one would always find: 1) fresh veggies like granddad's peas or beans, sliced tomatoes and cucumbers from his garden 2) a big bowl of home canned peaches, pears or apricots and 3) an obscenely huge bowl of Aunt Tony's Macaroni Salad. The celery seed is the ingredient that pushes this recipe over the top wow! This creamy, easy to make salad is the best! I am sure your family will love it just as much as ours.

Number Of Ingredients 8

1/2 pound(s) macaroni, elbow
1 cup(s) mayonnaise
4 small hard boiled eggs
1 tablespoon(s) celery seed (more if you like)
1 4 oz jar(s) diced pimentos
1 tablespoon(s) cream (optional)
- salt and pepper to taste
dash(es) paprika (optional)

Steps:

  • Hard boil peel and dice eggs.
  • Boil 1/2 lb. elbow macaroni 8 to 10 minutes (1/2 lb. will feed 6-8). (Note: a full 1 lb. box will make enough for 16-20 people)
  • Drain macaroni in a colander and rinse under cold water. Allow the macaroni to cool completely before adding the other ingredients. I don't know why but my cousin Judy said this makes a big difference so I did it.
  • Add chopped eggs, pimentos, celery seed and mayo. Mix together. It should be creamy. Add a tablespoon of cream at a time if needed to make moist to your taste.
  • Add salt and pepper to taste. Optional: Pour into a pretty dish and top with a light shake of paprika to give color.

Number Of Ingredients 9

1 lb creamette macaroni ( or any type of pasta, cavatappi pictured)
3/4-1 c real mayonnaise ( may need a little more depending how your pasta absorbs)
3/4-1 c sour cream (lite works as well as real) ( if you increase mayo also increase sour cream)
1 cup finely diced celery
1 cup finely diced cucumber
1/2-1 cup finely sliced green onion(more or less to taste and strength of onions)
1-2 diced firm body tomatoes (if not firm squeeze water out before adding and allow to drain slightly on paper towel)
salt to taste
pepper to taste

Steps:

  • 1. Cook macaroni to package directions. (do not overcook it will flatten the macaroni)
  • 2. While that is happening, prepare all the vegetables.
  • 3. Cool the macaroni. When the macaroni is finished cooking, pour off the hot water and immediately add very cold water to macaroni to stop the cooking process. You can either add some ice to the pot and stir the macaroni until chilled or you can pour off again and add more cold water. I find adding ice cubes the best method.
  • 4. When the macaroni is cool and drained, mix all the ingredients, except tomatoes, in a large bowl.
  • 5. When you have finished mixing thoroughly and have added the correct amount of salt and pepper. Add the tomatoes and fold them in gently so you do not end up with pink salad. Or you can sprinkle them over the top for a decorative touch.

1 small red bell pepper chopped
1 small yellow bell pepper chopped
1 small green bell pepper chopped
1/2 small red onion chopped fine
1 can(s) black olives , sliced
1/2 c dill pickle relish with juice
4 small roma tomatoes chopped
6 large boiled eggs peeled and chopped
16 oz large elbow macaroni
MACARONI SALAD DRESSING
1 c mayonnaise
1/2 c sour cream
4 Tbsp dijon mustard
2 Tbsp apple cider vinegar
2 Tbsp sugar
1/2 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
1/4 tsp red crushed pepper ( optional )

Steps:

  • 1. Boil Elbows , chop all tomatoes, peppers and slice olives and mix well
  • 2. Mix together dressing and toss with macaroni mixture.

2 c raw elbow macaroni, cooked
1 onion, chopped
3/4 c chopped celery
1/3 c grated carrots
3 hard-boiled eggs, chopped
1/4 c green pepper, chopped
1/4 c diced pimentos
DRESSING
1 c Best Foods/Hellmans mayonnaise
1/4 c white vinegar
2/3 c sugar
1/2 tsp prepared, yellow mustard
salt and pepper, to taste

Steps:

  • 1. Cook and cool the macaroni. Place in a mixing bowl. Add the chopped vegetables and eggs to the bowl.
  • 2. Mix the macaroni and vegetables.
  • 3. Mix the sauce in a separate bowl.
  • 4. Add to the macaroni/vegetable mixture. Cover and chill.
  • 5. Cooks note: Using all the sauce will make the salad very moist, but remember macaroni salad absorbs the dressing.

AUNT WOOFIE'S MACARONI SALAD

I have been making my Macaroni Salad like this for years. . The juice from the green olives and pickles really add to the flavor of the salad. Slice the olives and pickles before measuring them. This is really good if you make it the night before you are going to serve it. It gives the different flavors and juices a chance to blend really well. I don't like my pasta salads with a lot of mustard so I use horseradish sauce. You can replace it with more mustard if you want. I use the mustard for color only. Prep time is approximate. Cook time is the refrigeration time. This recipe can easily be doubled.

1 cup uncooked salad macaroni (or any kind of macaroni)
2 quarts water, in a pan
1 1/4 cups mayonnaise or 1 1/4 cups Miracle Whip
2 tablespoons horseradish sauce (optional)
1 tablespoon brine, from green olives
1 tablespoon brine, from pickles
1/2 tablespoon sugar
1 teaspoon prepared mustard (for color, you can add more if you want.)
1/4 cup milk (if needed)
2 tablespoons sliced green olives
2 tablespoons sliced black olives
4 tablespoons chopped hamburger dill pickle slices
2 tablespoons chopped green onions
2 hard-boiled eggs, diced
1 hard-boiled egg, sliced
paprika (optional)

Steps:

  • Bring water to a boil and add macaroni.
  • Cook until macaroni is done.
  • Drain, rinse and set aside.
  • In a medium sized bowl mix next 6 ingredients together until well blended.
  • If the mixture is too thick add the milk a little at a time until desired consistency is reached.
  • Add the sliced black and green olives, chopped pickles, chopped onion and chopped egg.
  • Stir until well blended.
  • Add the macaroni and mix well until the macaroni is covered with the mixture.
  • You may need to add a little bit more milk to make it easier to mix together.
  • Add a tablespoon or so at a time.
  • Garnish with the egg slices.
  • Sprinkle with Paprika if desired.
  • Refrigerate for at least one hour or overnight before serving.
