This recipe is from an old community cookbook. It's perfect for chilly winter evenings.

1 lb. or less lean ground beef
1/2 lb. bacon cut into pieces
1 cup chopped onion
1 clove garlic, peeled and minced
1/2 cup ketchup
1 tsp. dry mustard
1 can pork and beans, undrained, 28 to 31 oz
1 can red kidney beans, undrained, 15 oz
1 can lima beans, undrained, 15 oz
1 can small butter beans, undrained, 15 oz
1/2 cup firmly packed light brown sugar
2 tbsp. vinegar
1 tsp. salt or to taste
1/4 tsp. ground black pepper

Steps:

  • 1. In large pot or Dutch oven, sauté ground beef, bacon, onion and garlic. Add ketchup, dry mustard, pork and beans, kidney beans, lima beans, butter beans, brown sugar, vinegar, salt and pepper; mix thoroughly. Pour mixture into a large bean pot or other casserole dish.

  • 3. Note: I make this in the slow cooker, with a little tweak to the recipe. I cook a full pound of bacon and don't use limas. I double the butter beans instead.

My Aunt's Green Beans image

1 pound green beans, trimmed
Kosher salt and freshly ground black pepper
1/4 cup hazelnut oil
1/4 cup white wine vinegar
1 teaspoon honey
1 cup chopped and toasted hazelnuts
Lemon zest, for garnish

Steps:

  • Fill a bowl with ice water. Cook the green beans in salted boiling water until tender but still bright green, about 5 minutes, then drain and chill in the ice water to stop the cooking. Remove from the ice water and pat dry.
  • In a large bowl, whisk together the hazelnut oil, vinegar and honey, and season to taste with salt and pepper. Add the green beans to the bowl with the dressing and toss to coat, adding more salt and pepper if needed. Transfer to a serving bowl or platter and top with the toasted nuts and lemon zest.

1 Tbsp butter
1 Tbsp flour
½ tsp salt
½ tsp sugar
pinch pepper to taste
½ small onion finely diced
¼ cup milk
½ cup sour cream
2 cans (~16 oz ea) green beans
1½ cups shredded Swiss cheese
½ cup corn flake crumbs mixed with 2 Tbsp melted butter

Steps:

  • In a medium skillet over medium-high heat melt butter and saute onion until translucent. Blend in flour, salt, sugar and pepper. Cook until bubbly and beginning to brown (about 2 minutes). Blend in milk. Remove from heat and stir in sour cream, then beans. Fold in cheese. Transfer to an oven-safe 1½ qt buttered casserole. Top with corn flakes. Bake in a 400°F oven for 20 minutes.

1 small onion, chopped
1 garlic clove, chopped
1/4 cup extra-virgin olive oil
1 1/2 cups tomato pulp
1 pound green beans, stem end snapped off
Freshly ground black pepper, fresh red hot pepper, or dried chili pepper flakes
Coarse sea salt
1/4 cup boiling water
2 tablespoons chopped basil

Steps:

  • Put the onion and the garlic in a heavy-bottomed 3-quart pot, drizzle with 2 tablespoons of extra virgin olive oil, and stir to coat the vegetables.
  • Place the pot over low heat and cook the onion and garlic for 10 minutes or until tender.
  • Add the tomato, green beans, and pepper (or hot pepper) and season with salt. Bring to a simmer and cover with a tight-fitting lid. Cooking time will depend on the quality and freshness of the beans, which should be tender and soft. Check after 10 minutes to make sure that cooking liquid is sufficient. Add 1/4 cup boiling water if necessary. If beans expel too much water, uncover and cook over high heat to thicken sauce.
  • Add the basil, cook for 2-3 minutes, remove from heat, and stir in remaining 2 tablespoons of extra-virgin olive oil.

This is my Aunt Ro's recipe for baked beans. It's closer to chili than baked beans, and it's great for a potluck or BBQ.

8 ounces bacon
1 pound ground beef
½ cup chopped onion
2 (12 ounce) cans pinto beans, drained and rinsed
2 (15.5 ounce) cans canned butter beans, drained and rinsed
2 (15 ounce) cans canned baked beans with pork
1 cup barbeque sauce
1 cup ketchup
1 cup brown sugar, packed

Steps:

  • Place the bacon in a large, deep skillet and cook over medium-high heat until evenly brown. Drain on paper towels, crumble, and set aside. Drain bacon fat from the skillet.
  • Using the same skillet, cook the ground beef and onion over medium heat, stirring until the meat is no longer pink, 5 to 7 minutes. Drain.
  • Transfer the ground beef to a slow cooker. Add the pinto beans, butter beans, baked beans with pork, barbeque sauce, ketchup, and brown sugar to the ground beef mixture; stir to blend well. Cover and cook for 4 hours on High. Top each serving with crumbled bacon.
