ALMOST FAMOUS COLESLAW

Here's our take on the coleslaw served at KFC. It's sweet and cooling and a perfect pairing for salty fried chicken or any barbecue sandwich.

One 14-ounce bag coleslaw mix (traditional mix of green cabbage and carrots)
1/2 small onion
2 tablespoons plus 2 teaspoons sugar
1/4 cup plus 2 tablespoons mayonnaise
2 teaspoons apple cider vinegar
1/8 teaspoon dry mustard powder
Pinch paprika
Kosher salt

Steps:

  • Working with half of the bag at a time, chop the coleslaw mix into 1/8-inch pieces (about the width of the carrots). Transfer to a large bowl. Dice enough of the onion into 1/8-inch pieces to yield 1/4 cup. Transfer to a fine-mesh strainer and rinse with cold water for 1 minute to soften the flavor. Gently wring out the onions in a paper towel and then stir into the coleslaw mix.
  • In a pint jar or other container with a tight-fitting lid, stir together the sugar and 3 tablespoons water until the sugar dissolves a bit. Add the mayonnaise, vinegar, mustard powder, paprika and 1/2 teaspoon salt, put on the lid and shake vigorously until completely combined. Stir the dressing into the coleslaw, then set aside for 10 minutes to marinate and soften, stirring a few times. Add more salt, if needed. The coleslaw will keep, covered in the refrigerator, for up to 1 day.

1 cup mayonnaise
1/3 cup crushed pineapple
1 tablespoon milk
1 tablespoon ketchup
1 teaspoon sugar
1 teaspoon poppy seed (optional)
1 teaspoon Worcestershire sauce
8 -10 cups coleslaw mix (or 8-10 cups equal amounts red and green cabbage)

Steps:

  • In a small bowl, combine the mayonnaise, pineapple, milk, ketchup, sugar, poppy seeds if desired and Worcestershire sauce.
  • Place the coleslaw mix in a large bowl; and add dressing and toss to coat.
  • Cover and refrigerate for 2 hours.

1 unpeeled red apple, cored and chopped
1 unpeeled Granny Smith apple, cored and chopped
1 carrot, grated
½ cup finely chopped red bell pepper
2 green onions, finely chopped
⅓ cup mayonnaise
⅓ cup brown sugar
1 tablespoon lemon juice, or to taste

Steps:

  • In a large bowl, combine cabbage, red apple, green apple, carrot, red bell pepper, and green onions. In a small bowl, mix together mayonnaise, brown sugar, and lemon juice. Pour dressing over salad.

Growing up, I had never eaten or even heard of a creamy cole slaw dressing...this was the only one my Mom ever made...to this day I love it. A nice change from the mayo based recipes not to mention this one works better for cook outs or picnics where you don't want milk or mayo based salads. If you want it sugar free - just use sugar subsitute

1/2 cup vinegar
1 teaspoon salt
1 teaspoon dry mustard

1 head cabbage

  • Finely shred cabbage.
  • Mix dressing ingredients well and pour over finely shredded cabbage.
  • Allow to sit for several hours in the fridge before serving.

1 medium onion, chopped
1 cup sugar
1 cup vegetable oil
1/2 cup cider vinegar
1/3 cup mayonnaise
1 teaspoon salt
1/2 teaspoon celery seed
1 medium green cabbage, cored and shredded

Steps:

  • In a medium bowl, combine the onion and sugar and let stand for 30 minutes.
  • In a separate bowl, combine the oil, vinegar, mayonnaise, salt, and celery seed and add to the onion mixture.
  • Pour the mixture into a jar with a tight lid.
  • Shake the jar to blend the dressing.
  • Put the cabbage in a large serving bowl and add the onions, pour on the dressing, and toss well.
  • Do not overdress.
