BACON ROASTED ASPARAGUS
What's special about this asparagus recipe? I'm so glad you asked! Well (1) it's easy, (2) the oil is infused with garlic, (3) it has B-A-C-O-N!! Need I say more?

Steps:
- Combine minced garlic in a small bowl with 3 Tbsp olive oil and set aside while preparing your asparagus and gathering the rest of your ingredients.
- Break off the fibrous ends of your asparagus by holding the base end and snapping it wherever it snaps. Discard the ends. I like this method most because it ensures that you won't have any fibrous ends. You can also use a knife to cut the ends off about 1" up from the base.
- Transfer asparagus to a rimmed baking sheet then drizzle and toss it with the garlic oil. Sprinkle lightly with salt & pepper and bake at 400°F for 13-18 mins (depending on the thickness of asparagus) or until lightly browned and easily pierced with a fork.
- While baking, saute 6 strips of bacon, drain on paper towels then coarsely chop. Serve asparagus warm and sprinkle the top with bacon.

- Cook and stir bacon in a skillet over medium heat until crisp, about 5 minutes. Discard grease.
- Melt butter in the same skillet.
- Cook and stir asparagus and shallot with salt and black pepper in melted butter and bacon. Cover skillet and cook, stirring occasionally, until asparagus are tender, about 5 minutes.
- Transfer asparagus mixture to a platter. Sprinkle with Parmesan cheese.

- Preheat oven to 400F.
- Heat olive oil, minced garlic, lemon zest, oregano, and red pepper flakes in a small pan over low heat until garlic becomes golden and oil becomes fragrant; remove from heat and allow to cool.
- Bend asparagus gently until it breaks at a natural point and discard ends.
- Toss asparagus pieces with infused olive oil and place in a single layer on a baking sheet (one with a side edge).
- Season asparagus with salt and pepper.

- Preheat the oven to 425 degrees F.
- Divide and toss the asparagus with the olive oil, salt, and pepper, and arrange in a single layer on 2 to 3 separate large rimmed baking sheets.
- Place in the oven and roast until the spears are tender and the tips are turning golden and slightly charred, 10 to 12 minutes.
- Prepare the vinaigrette while the asparagus is roasting. To a bowl, add the Dijon mustard, vinegar, salt, and pepper. Whisk in the olive oil to emulsify. Taste for seasoning and adjust, if necessary.

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. - Cook bacon in heavy large skillet over medium heat until brown and crisp. Transfer to paper towels and drain. Crumble bacon; set aside.
- Position rack in center of oven and preheat to 500°F. Arrange asparagus on large rimmed baking sheet. Drizzle with 2 tablespoons oil and turn asparagus to coat well. Sprinkle generously with salt and pepper. Roast asparagus until crisp-tender when pierced with knife, about 7 minutes. Arrange asparagus in single layer on platter.
