2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
1 1/2 tablespoons honey
3 tablespoons balsamic vinegar
Salt and freshly ground black pepper
2 cups (1-inch pieces) fresh asparagus
8 cups arugula
2 cups sliced fresh strawberries

Steps:

  • In a small bowl whisk the lemon juice, oil, honey, and balsamic vinegar. Season with salt and pepper, to taste. Set aside.
  • Bring a small pot of water to a boil over medium heat. Add the asparagus and cook for 3 minutes. Remove and drain on a paper towel-lined plate.
  • Put 2 cups of arugula on each serving plate, top with strawberries and asparagus and drizzle with the vinaigrette.

1/4 cup sugar
2 tablespoons cider vinegar
1 tablespoon poppy seeds
1-1/2 teaspoons sesame seeds
3/4 teaspoon grated onion
1/4 teaspoon salt, optional
1/8 teaspoon paprika
1/8 teaspoon Worcestershire sauce
1/4 cup vegetable oil
1 pound fresh asparagus, trimmed
1 pint fresh strawberries, sliced
1/4 cup crumbled blue cheese, optional

Steps:

  • In a jar with tight-fitting lid, combine the sugar, vinegar, poppy seeds, sesame seeds, onion, salt if desired, paprika and, Worcestershire sauce; shake until sugar is dissolved. 1 lb asparagus, rinsed, ends trimmed, and cut into 1 inch pieces
10 ounces fresh spinach, rinsed, trim if needed

8 ounces spinach leaves, rinsed or 2 tablespoons balsamic vinegar
8 ounces strawberries, rinsed, hulled, and sliced
1/2 cup chopped toasted walnuts

Steps:

  • To toast walnuts: place in baking pan and bake in a 350 degree oven until golden, about 10 minutes.
  • Pour 1 tablespoon olive oil into a 12- by 15-inch baking pan; Add asparagus, Sprinkle with salt, and mix to coat.

400 g fresh asparagus
200 g punnet strawberries (or whatever punnet size you get)
1 cup bean sprouts
1 avocado
1 tablespoon lemon juice
1/4 cup avocado oil
1 large crushed garlic clove (1 tsp prepared)
3 tablespoons lemon juice
freshly ground salt and pepper
3 tablespoons basil, finely chopped (my gran used parsley or whatever she had)

Steps:

  • Cook asparagus for 4 minutes until tender.
  • Refresh in a bowl of icy water to retain color.
  • Halve strawberries.

15 spears asparagus, preferably organic, woody end trimmed and spears cut into 2-inch pieces
3 teaspoons extra virgin olive oil, divided
Kosher salt and freshly ground black pepper to taste
2 teaspoons lemon juice, freshly squeezed
1/2 teaspoon country Dijon mustard
1/2 teaspoon honey
2 big handfuls baby arugula, preferably organic
1/2 cup strawberries, hulled and sliced, preferably organic
2 tablespoons blue cheese, freshly crumbled
1 tablespoon toasted almonds, sliced

Steps:

  • Preheat oven to 400°F. Toss asparagus pieces with 1 teaspoon olive oil and season to taste with salt and pepper. Lay out in an even layer on a baking sheet and roast until tender, about 15 to 20 minutes. Meanwhile, make the dressing: in a sealable jar (or small bowl) combine the remaining 2 teaspoons olive oil, lemon juice, mustard, and honey. Shake (or whisk) until emulsified; season to taste with salt and pepper. Toss the arugula with the dressing, and then gently toss in the sliced strawberries and asparagus. 2 bunches asparagus
3 tablespoons agave nectar or 3 tablespoons honey
4 tablespoons white balsamic vinegar
4 tablespoons walnut oil, or
4 tablespoons hazelnut oil
2 teaspoons chopped pistachios or 2 teaspoons pecans
sea salt
crushed pink peppercorns
salad greens

Steps:

  • Quarter strawberries, mix with 2 TBS of agave nectar or honey and let macerate for 1/2 hour or until drawing juice.
  • Prepare asparagus by breaking off tough ends, cut on the bias into 2" pieces.
  • blanch in boiling lemon water, stems first, add tips after 2 minutes, blanch for one more minute, remove from heat and plunge into ice water to maintain color, do not overcook.
  • Prepare vinaigrette by whisking 2 TBS of water, oil, vinegar, salt, pepper, honey and a TBS of the strawberry juice together, add asparagus and marinate for at least 1/2 hour.
  • Prepare 4 plates with salad greens,

1/2 cup raspberry balsamic vinegar
2 -3 cups strawberries, sliced thick
1/2 red onion, sliced very very thin
1 tablespoon caramel topping or 1 tablespoon honey, Plus more
caramel topping or honey, to drizzle
1 tablespoon hazelnut oil or 1 tablespoon olive oil
fresh grated nutmeg
salt
pepper
caramel topping, to taste
1 -2 tablespoon sliced almonds, toasted

Steps:

  • Cook asparagus in well salted boil water for 3-5 minutes. Rinse in cold water.
  • Microwave onion in a 1/8 cup of water for 1 minute and rinse well in cold water and drain.
  • Arrange asparagus on a platter.
  • Arrange strawberries over asparagus. Or toss with asparagus.
  • Reduce the balsamic vinegar to 1/4 cup, whisk in caramel or honey, oil, nutmeg, salt and pepper.
  • Add onions to the vinegar mixture.
  • Pour the mixture over asparagus.
  • Drizzle with caramel topping. Sprinkle almonds over the salad.
