ASPARAGUS AND TOMATO PANZANELLA

Asparagus and other vegetables are tossed together with Italian-style bread and drizzled with red wine vinegar and olive oil.

3 cups cubed crusty bread
¼ cup olive oil, as needed
3 cloves garlic, minced
kosher salt to taste
ground black pepper to taste
1 pound fresh asparagus, trimmed
1 English cucumber - peeled, seeded, and sliced
10 cherry tomatoes, halved
2 small yellow tomatoes, cut into wedges
1 red onion, cut into wedges
¾ cup pitted kalamata olives
¼ cup capers, drained
¾ cup fresh mozzarella balls (bocconcini)
¼ cup red wine vinegar
¼ cup extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Toss bread, 1/4 cup olive oil, and garlic in a bowl until coated. Season with salt and black pepper. Transfer mixture to a baking sheet.
  • Bake in the preheated oven until toasted, about 15 minutes, stirring and flipping bread cubes about halfway through. Allow bread to cool.
  • Fill a large bowl with iced water; set aside. Bring a pot of salted water to a boil; cook asparagus in boiling water until bright green and just tender, 2 to 3 minutes. Transfer asparagus to iced water to cool. Drain and dry on a clean towel. Cut asparagus into thirds.
  • Mix asparagus, cucumber, cherry tomatoes, yellow tomatoes, red onion, olives, capers, mozzarella balls, and bread cubes in a large bowl. Whisk red wine vinegar and 1/4 cup extra-virgin olive oil in a small bowl; season with salt and pepper. Pour vinegar dressing over bread mixture; toss to combine. Allow bread salad to rest for 20 minutes before serving.

MICHAEL SYMON'S GRILLED SKIRT STEAK WITH ASPARAGUS AND PEA PANZANELLA SALAD image

1 1/2 - 2 Skirt Steaks (about 2-3 pounds)
Salt and Pepper to taste
Extra Virgin Olive Oil
1 small French Baguette or Boule (cut into 1-inch cubes; about 4 cups)
1 bunch Green Asparagus
1 cup fresh Peas
10 large Mint leaves (torn)
1 cup Parmesan Cheese (chunked)
For the Vinaigrette:
1 Garlic clove (minced)
1 teaspoon Dijon Mustard
3 tablespoons Sherry Vinegar
1/2 cup Olive Oil
Salt and Pepper to taste

Steps:

  • Preheat your grill to medium high heat and your oven to 350 degrees F. Remove the skirt steak from the fridge 30 minutes prior to cooking. In the meantime, drizzle 3 tablespoons of olive oil over the cubed bread and season with salt and pepper. Lay the coated bread cubes out on a sheet tray and place in your preheated oven for 10 to 12 minutes, or until they are light golden brown and crunchy. Remove and set aside. Lightly oil the asparagus and season with salt and pepper. Grill 3 to 4 minutes per side until slightly charred and tender. Remove to cutting board and cut into bite-sized pieces. Season the skirt steak liberally with salt and freshly ground black pepper and drizzle on both sides with the remaining 3 tablespoons of olive oil. Place on the grill and cook for 3 to 4 minutes per side, or until medium rare. Remove to a cutting board to rest while you finish your panzanella. For the Vinaigrette: In a large bowl, whisk together the vinaigrette components. Next add the asparagus, peas, mint and toasted bread. Toss to thoroughly coat everything then add the parmesan. Give it a taste here, adding more seasoning if necessary. Slice the rested skirt steak thinly and against the grain. Place it on a platter and serve with the panzanella.

1 pound medium asparagus
Salt and freshly ground black pepper
1 seedless cucumber, peeled and cut into 1/2-inch wedges
8 cherry tomatoes, cut in half
2 small tomatoes, such as red, Green Zebra, or yellow, each cut into 8 wedges
1 medium red onion, cut into 1/4-inch-thick wedges
3/4 cup Kalamata olives, pitted
1/4 cup capers, drained
6 one-half-inch-thick slices country-style bread, crust on, torn into 1-inch chunks
2 tablespoons red-wine vinegar
2 tablespoons extra-virgin olive oil

Steps:

  • Snap off and discard the tough ends of asparagus. Bring a medium saucepan of salted water to a boil; prepare an ice bath. Cook asparagus until bright green and just tender, 2 to 3 minutes. Transfer immediately to ice bath. Drain; place on a clean kitchen towel.
  • In a large bowl, combine asparagus, cucumber, tomatoes, red onion, olives, capers, and bread; toss to combine.
  • In a small bowl, whisk together red-wine vinegar and olive oil; season with salt and pepper. Pour vinaigrette over asparagus mixture, and toss until well coated. Let sit until bread absorbs juices, and serve.

½ loaf bread, cut into 1-inch cubes
3 Tbsp plus 2 Tbsp, olive oil
1 shallot, diced
6-8 cloves garlic, minced
1 leek, finely chopped
½ bunch asparagus, cut in 1 inch pieces
1 cup peas
½ bunch chard, chopped (spinach or kale would work great too)
⅓ cup white wine (optional)
1 Tbsp thyme, dried
¼ cup fresh basil, chopped
¼ tsp pepper
¼ tsp plus 1/4 tsp salt

Steps:

  • Preheat oven to 350°F. In a large bowl, toss the bread cubes with 3 tablespoons olive oil and ¼ teaspoon salt. Place bread cubes on on baking sheet and toast in oven for 15 minutes, or until they are golden and crunchy. Set aside. Heat 2 tablespoons olive oil over medium low in a large, deep sauté pan. Sauté shallot and garlic for 5 minutes Add leeks, asparagus and 1 tablespoon water. Cover, turn heat up to medium, and cook for 1 minute. Add peas. Cover and cook for 1 minute. Add spinach. Cover and cook for 2 minutes. Add white wine. Cover and cook for 2 minutes. Add thyme, basil, pepper and salt. Place the toasted bread crumbs in a large bowl. Combine with vegetable mixture and all the pan juices. Stir and serve.

6 (1-inch) slices day-old country style bread
1/4 cup red wine vinegar
2 cloves garlic, finely chopped
Kosher salt and freshly ground pepper
1/2 cup extra-virgin olive oil
Perfectly Grilled Asparagus(attached) cut into 1-inch pieces
8 red cherry tomatoes, quartered
8 yellow cherry tomatoes, quartered
1 small red onion, halved and thinly sliced
1/2 cup pitted Kalamata olives, sliced
2 T. capers, drained
8 fresh basil leaves, thinly sliced

Steps:

  • 1. Heat your grill to high. 2. Drizzle bread with extra-virgin olive oil & kosher salt. Grill the bread on both sides until slightly charred, about 1 minute per side. Cut each slice into 1-inch cubes. 3. Whisk together vinegar, garlic, 1/2 tsp. salt, 1/4 tsp. pepper, and the oil in a large bowl until combined. Add the asparagus, tomatoes, onion, olives, capers, grilled bread, and basil and mix until combined. Season with salt and pepper. Let sit at room temperature for at least 30 minutes and up to 1 hour before serving.
