Found this on the back of a Full Circle frozen Mahi Mahi fillet package. If you are low on time and need a quick, easy and tasty recipe, this will make you happy. The package recommends steamed jasmine rice and warm bok choy to round out the meal.

2 mahi mahi fillets, thawed
3 tablespoons soy sauce
1 crushed garlic clove
3 tablespoons balsamic vinegar
3 tablespoons olive oil
3 tablespoons honey
1 tablespoon grated fresh gingerroot
salt and pepper

Steps:

  • In a shallow glass dish, stir together the honey, soy sauce, vinegar, ginger, garlic and 2 tablespoons olive oil.
  • Season mahi mahi fillets with salt and pepper, and place them in the shallow dish.
  • Cover, refrigerate for 20 minutes to marinate.
  • Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat.
  • Reserving the marinade, remove fish and saute in pan for 4 to 6 minutes per side, turning only once, until fish flakes easily with fork.
  • Remove fillets to a serving platter and keep warm.
  • Pour reserved marinade into the skillet and bring to a boil to thicken to a glazed consistency.
  • Spoon glaze over fish and serve immediately.

1 1/4 cups white rice
3 scallions, thinly sliced (white and green parts separated)
2 tablespoons minced peeled ginger
1 1/2 pounds skinless center-cut mahi mahi fillet (1 1/2 inches thick)
1/4 teaspoon ground white pepper, plus more to taste
4 heads baby bok choy, halved lengthwise
2 carrots, sliced 1/4 inch thick
3 tablespoons vegetable oil
1 Fresno or red jalapeno chile pepper, sliced (remove seeds for less heat)
2 cloves garlic, minced
Kosher salt
2 tablespoons low-sodium soy sauce

Steps:

  • Cook the rice as the label directs. Meanwhile, fill a large skillet halfway with water; bring to a boil over medium-high heat. Set the bottom of a stackable bamboo steamer in the water. Sprinkle the scallion whites and 1 teaspoon ginger on a plate that will fit in the steamer basket; set the fish on top and sprinkle with 1/4 teaspoon white pepper. Set in the steamer basket; cover and cook 8 minutes.
  • Line another steamer level with parchment; add the bok choy and carrots and set on top of the fish basket. Cover and cook until the fish is cooked through and the vegetables are tender, about 7 more minutes.
  • Meanwhile, heat the vegetable oil in a saucepan over medium heat; add the chile, garlic, the remaining ginger and 1/2 teaspoon salt. Cook, swirling the pan, until the garlic and ginger start browning, 2 minutes.
  • Remove the baskets. Drain any liquid from the fish; cut into 4 pieces. Drizzle the fish and vegetables with the chile oil and soy sauce; top with the scallion greens and season with white pepper. Serve with the rice.

Steps:

1 cup coconut milk
1/2 cup chicken stock
1 tsp fish sauce
1 tbsp lime juice
1 2 inch piece ginger
1 serrano or jalepeno pepper, seeded
1 tbsp chopped garlic
3/4 cup chopped fresh cilantro
1/2 thai basil, chiffonade
4 6 oz portion mahi mahi
1 leek, white part only thinly sliced
1 red bell pepper, julienned
2 large carrorts, peeled and julienned
1 lime, sliced into rings
1/4 cup chopped cilantro for garnish

Steps:

  • Combine first 9 ingredients in food processor and process into rough chop. Place fish filets in glass baking dish and pour marinade over. Cover and refrigerate for 30 minutes to 1 hour. Preheat over to 400. Remove fish from marinade and reserve. Add the vegetables to the marinade. Cover and bake 15 minutes until crisp tender. Drain marinade into small saucepan and place over medium low heat to reduce. Pat fish dry and strain vegtables. In the center of a piece of parchment or aluminum foil, place 1/4 of the vegetables, top with fish and lime slices. Fold parchment into packages and place on baking sheet. Bake for 15 minutes. Remove the packets to individual serving plates, cut open to reveal and garnish with cilantro and a wedge of lime. Top with additional sauce if desired (or use the reserved sauce to add to cooked rice).

This is a quick and easy dinner solution. This comes from another website. Update: After a number of reviews I have changed the ingredients list. When I made this, I too thought the cloves were strong but DH liked it so I posted. I have since changed the ingredient list and reduced the amount of cloves and nutmeg. Please feel free to adapt as necessary for preference. Thanks everyone for your input.

1 -1 1/2 lb mahi mahi fillet
1 cup crushed pineapple in juice, drained and juice reserved
1/8-1/2 teaspoon ground cloves
1/4-1/2 teaspoon ground nutmeg
1/2 cup coconut, toasted

Steps:

  • Preheat oven to 350°F.
  • Cut fish fillets into serving size portions allowing 4 to 6 ounces per serving.
  • In bowl, mix pineapple, cloves and nutmeg.
  • Spray an oven proof baking dish with non-stick cooking spray.
  • Place fish in prepared dish, top with pineapple mixture and drizzle a half to one full tablespoon of pineapple juice over each serving.
  • Cover with foil and bake 10 to 12 minutes, uncover and top with coconut. Bake 5 minutes more or until fish flakes easily.
