This recipe comes from two different cultures: Asian and American--just like me! This is a very simple recipe. I recommend deep-frying the chicken in a pot or saucepan instead of a frying pan so that it doesn't make a mess on the stove top. Enjoy!

1 chicken breast
2 1/2 tablespoons honey
2 tablespoons soy sauce
1/2 teaspoon minced ginger
cornstarch
1 egg, beaten
1 cup breadcrumbs
vegetable oil

Steps:

  • Defrost frozen chicken breast, if needed.
  • In a small mixing bowl, mix together honey, soy sauce and ginger to create your marinade.
  • Cut chicken breast into bite-sized pieces and marinate them in the honey mixture.
  • Take the chicken and cover it in cornstarch, then in the beaten egg, then in the breadcrumbs.
  • Deep-fry the chicken nuggets.
  • Serve hot or cold.

They can be breaded in advance and fried up the day of, or just bread and fry them the night before for maximum convenience. Buttermilk and panko makes them both tender and crispy, and your kids will love them

1 large egg
1/3 cup buttermilk
1 pound boneless skinless chicken breast, cut into bite-size pieces
1 1/2 cups panko bread crumbs
1/4 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper
1/2 cup canola or vegetable oil
Ranch, honey mustard or barbecue sauce for dipping, optional
Carrot, cucumber and or celery sticks, optional

Steps:

  • Whisk the egg and buttermilk in a medium bowl. Soak chicken pieces in egg mixture while you gather remaining ingredients. Meanwhile, in another shallow bowl combine panko with paprika, garlic powder, Italian seasoning, and salt and pepper, to taste. Set a rack on a cookie sheet lined with paper towels.
  • Heat oil in a large skillet over medium heat. Lift chicken from buttermilk, letting excess liquid drain back into the bowl, then dip into panko and turn to coat on all sides.
  • Carefully place chicken in oil and cook until they are golden and crispy and cooked through, about for 5 minutes per side. Transfer chicken to the rack to cool. Place in sealed container. Pack in a lunch box with their favorite veggies and ranch, honey mustard or barbecue sauce for dipping.

1 1/2 lbs boneless chicken tenders
1/2 cup seasoned rice vinegar (I prefer the roasted garlic flavor)
3 large green onions, minced
1 piece gingerroot (1 to 1 1/2 inch, minced)
2 tablespoons soy sauce
3/4 cup plain breadcrumbs (or substitute Panko crumbs for a more crispy exterior)
4 -6 tablespoons vegetable oil
salt and pepper
1/2 teaspoon Chinese five spice powder (optional)

Steps:

  • In a large bowl, toss chicken with rice vinegar, greens onions, ginger, soy sauce, 1/2 teaspoons salt, and 1/4 teaspoons pepper; chill 1/2 hour to 8 hours. Drain checken well; discard marinade. Dip chicken in crumbs OR Panko; shake off excess.
  • Heat 2 tbsps. oil in a non-stick skillet over medium-low heat. Cook 1/3 to 1/2 of the chicken without crowding until no longer pink in the center, about 2-3 minutes per side; drain on paper towels. Repeat until all chicken is used.
