1 cup (packed) fresh mint leaves
2 tablespoons chopped peeled fresh ginger
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons oriental sesame oil
4 6-ounce salmon fillets with skin
4 cups thinly sliced Napa cabbage

Steps:

  • Prepare barbecue (medium-high heat). Thinly slice enough mint to measure 2 tablespoonfuls. Place in bowl. Whisk in next 4 ingredients. Set dressing aside.
  • Place salmon in glass pie dish. Add 4 tablespoons dressing and turn to coat. Sprinkle salmon with salt and pepper. Marinate salmon 15 minutes. Grill fillets until barely opaque in center, about 4 minutes per side.
  • Meanwhile, toss sliced cabbage with remaining mint leaves and remaining dressing. Season to taste with salt and pepper. Divide slaw among 4 plates. Place salmon atop slaw and serve.

1 lb asparagus
4 cups green cabbage, very finely shredded
1 cup red cabbage, very finely shredded
1 small carrot, very finely shredded
1/4 cup parsley, freshly snipped
1/4 small red onion, thinly sliced
1 tablespoon toasted sesame oil
2 tablespoons sweetened rice vinegar
1/4 teaspoon white pepper, freshly ground

Steps:

  • Snap off and discard fibrous stem ends of asparagus.
  • Rinse asparagus; drain.
  • Bring 1 inch of water to boiling in a medium saucepan.
  • Place asparagus in steamer basket; cover and steam for 4 minutes or until asparagus is crisp-tender.
  • Drain; gently rinse with cool water.
  • Combine green cabbage, red cabbage, carrot, parsley and onion in a large bowl.
  • Mix sesame oil, rice vinegar and salt together in small bowl; add to cabbage mixture and toss to coat.
  • Divide asparagus spears among six salad plates; top with cabbage mixture.

1/2 C. vegetable oil
2 T. rice vinegar
2 T. sugar
1/2 tsp. salt
1/4 tsp. black pepper
1 pkg ramen noodles, broken into small pieces
1/2 head of cabbage, coarsely chopped
2 T. toasted sesame seeds
1/3 C. toasted slivered almonds
4 scallions, coarsely chopped

Steps:

  • In a large bowl, combine the oil, vinegar, sugar, salt and pepper with the flavor packet from the noodles, stirring well. Add the chopped cabbage, ramen noodles, sesame seeds, almonds and scallions, tossing lightly to combine. Let he slaw rest at least 10 minutes; covered and refrigerated ti can hold for several hours. Serve at room temperature
