4 slices bacon, crisply cooked and crumbled
6 new red potatoes
1 ⅓ cups mayonnaise
1 teaspoon sugar
1 tablespoon soy sauce
1 teaspoon sesame oil
⅛ teaspoon dry hot mustard
⅛ teaspoon salt
¾ cup chopped bok choy
1 red bell pepper, seeded and diced
½ cup chopped green onion
¼ cup chopped fresh cilantro

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  • Meanwhile, bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, and chop into bite-size chunks.
  • To make the dressing, mix together the mayonnaise, sugar, soy sauce, sesame oil, mustard powder, and salt.
  • Combine the potatoes, bacon, bok choy, red pepper, green onion and cilantro in a large bowl. Pour over dressing and mix well. Refrigerate for at least one hour to allow flavors to blend, and serve.

4 large sweet potatoes, peeled and cut into 1-inch cubes
Kosher salt
1/2 cup grated carrot
1 tablespoon grated ginger
2 tablespoons rice vinegar
2 tablespoons mirin rice wine
1 tablespoon low-sodium soy sauce
1 teaspoon toasted sesame oil
1/2 cup mayonnaise
Salt and freshly ground black pepper
4 cups lightly packed Israeli arugula
1/2 hothouse cucumber, finely sliced
1 cup fresh picked cilantro leaves
1 cup dates, pitted and cut in 1/2
2 cups crispy wonton strips
1 lemon, juiced
Olive oil
Splash soy sauce
Kosher salt and freshly ground black pepper

Steps:

  • Begin by peeling and dicing sweet potatoes. Bring a large pot of salted water to a boil over high heat. Add the potatoes, reduce heat and cook until just tender but still have a little bite. Drain and place in a bowl to cool.
  • Combine the dressing ingredients in a blender and puree until smooth. Season with salt and pepper. Once potatoes are cool toss with dressing and set aside on salad platter.
  • Combine ingredients in a large mixing bowl and dress with lemon juice, olive oil, to taste, a splash of soy sauce, and a little salt and pepper. Toss well and place on top of the sweet potatoes to serve as a complete salad.

This is a creamy German-style potato salad with a tremendous flavor given from Asian ingredients! I made this up on a whim and everyone loved it. I add ham, but feel free to leave it out - it won't alter the flavor much, just the texture.

1 ½ pounds red potatoes, scrubbed
½ cup frozen mixed vegetables
2 tablespoons extra virgin olive oil
1 large yellow onion, diced
1 tablespoon dried minced garlic
salt and pepper to taste
1 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
½ tablespoon sesame oil
½ tablespoon hot sauce
1 teaspoon wasabi powder
1 teaspoon ground ginger
1 teaspoon ground turmeric
1 cup cooked, cubed ham
¼ cup chopped fresh cilantro

Steps:

  • Place the potatoes in a large pot of boiling salted water, and cook about 10 minutes. Stir in the frozen mixed vegetables, and continue cooking 10 to 12 minutes, until potatoes and vegetables are tender. Transfer to a large bowl. Cut potatoes while still hot, into 1 inch pieces. Set aside to cool.
  • Heat the olive oil in a skillet. Place the onion in the skillet, and season with garlic, salt, and pepper. Cook and stir until tender.
  • In a bowl, whisk together the mayonnaise, lemon juice, Worcestershire sauce, sesame oil, hot sauce, wasabi powder, ginger, and turmeric. Season with salt and pepper.
  • Toss the cooled potato and vegetable mixture with the onions, mayonnaise mixture, ham, and cilantro until evenly coated. Chill until serving.

2 pounds very large shrimp
1/2 teaspoon salt
2 tablespoons olive oil for frying
1 grated carrot
1 tablespoon grated ginger
1 thinly sliced celery rib
1 cup sugar snap pea pods chopped
1 scallion sliced thinly
1/8 cup rice wine vinegar
1/4 cup olive oil for dressing
1 teaspoon soy sauce
1/8 teaspoon freshly grated pepper
Pancakes:
6 medium Yukon Gold Potatoes (hand grated)
1 beaten egg
1 teaspoon salt
1 teaspoon baking soda
2 tablespoons olive oil

Steps:

  • Add olive oil to 12 inch fry pan, salt shrimp and saute a few minutes on each side until white. Cool shrimp to touch and cut into large pieces. In a large mixing bowl wisk 1/4 cup olive oil, 1/8 cup rice wine viengar, soy sauce & pepper. Add grated ginger, grated carrot, thinly sliced celery, scallion and chopped sugar snap peas. Stir in sliced shrimp with remaining oil from saute pan. Hand grate 6 medium Yukon Gold Potatoes. Drain in Colander. Place into mixing bowl and stir in egg, salt, pepper and baking soda. Place 2 tablespoons of olive oil in 12 inch fry pan, heat oil. Saute pancakes 3-4 minutes on each side. Drain pancakes on paper towels. Place potato pancakes on a platter and spoon asian shrimp salad on top.

2 pounds boiling potatoes (preferably yellow-fleshed)),quartered lengthwise and cut crosswise into 3/4-inch pieces
1 fresh jalapeño pepper, minced with some of the seeds (wear rubber gloves)
2 small garlic cloves, minced
1 tablespoon sugar
1 tablespoon white-wine vinegar
1-1/2 tablespoons fresh lime juice
1 tablespoon anchovy paste
1-1/2 teaspoons vegetable oil
1/4 cup packed fresh coriander,chopped fine
1/4 cup packed fresh mint leaves,
2 ribs of celery, sliced thin crosswise

Steps:

  • In a steamer set over boiling water steam the potatoes, covered, for 10 to 12 minutes, or until they are just tender, transfer them to a bowl, and let them cool to room temperature. In a small bowl whisk together the jalapeño, the garlic, the sugar, the vinegar, the lime juice, the anchovy paste, the oil, and salt to taste and let the dressing stand at room temperature for 30 minutes. Add the dressing to the potatoes with the coriander, the mint, and the celery and combine the salad well.

1 cup mayonnaise
1 tablespoon soy sauce
1 tablespoon light brown sugar
1 teaspoon ground ginger
1 (8 ounce) can sliced water chestnuts, drained and chopped
1/2 of a large red bell pepper, diced
4 scallions, thinly sliced

Steps:

  • Place the potatoes in a large pot and add enough water to cover.
  • Add salt and bring to a boil over medium-high heat.
  • Cook for 10 to 12 minutes, or until fork-tender; drain. Let cool for 10 minutes, then cut into quarters and place in a large bowl.
  • Meanwhile, in a medium bowl, combine the mayonnaise, soy sauce, brown sugar, and ginger; mix well.

1/4 cup minced onion
3/4 cup mayonnaise
2 teaspoons ginger juice
zest of half an orange
1 tablespoon orange juice
salt and pepper to taste
1/2 cup chopped cilantro

Steps:

  • Combine potatoes, eggs and onion in a bowl. In a separate small bowl, cream together mayonnaise, ginger juice, orange zest and orange juice. Add salt and pepper. Add dressing to potatoes. Stir to blend well. Refrigerator for several hours. Adjust seasonings if necessary. May add a bit more mayonnaise, if needed.
