1/4 cup Asian fish sauce*
1/4 cup fresh lime juice
1 teaspoon sugar
1 jalapeño chile, sliced into thin rings
1/3 cup soy sauce
1/4 cup unseasoned rice wine vinegar
1 tablespoon fresh ginger, peeled and minced
1 tablespoon fresh cilantro, chopped
2 tablespoons whole coriander seeds
1 1/2 pounds colossal (under 12 per pound; about 18), or jumbo (16 to 20 per pound; about 24 to 30) shrimp, peeled with tails left intact, deveined
9 scallions, white and light-green parts only, cut into 1-inch pieces
2 tablespoons vegetable oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly coarse-ground black pepper
*Called nuoc mam or nam pla; available at Asian markets and in the Asian foods section of some supermarkets.

about 10 (8-inch) wooden skewers, soaked in water 30 minutes

Steps:

  • In small bowl, stir together fish sauce, lime juice, and sugar. Mix well to dissolve sugar, then stir in jalapeño rings. Set aside.
  • In small bowl, stir together soy sauce, vinegar, ginger, and cilantro. Set aside.
  • Prepare grill for cooking: If using charcoal grill, open vents on bottom, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 4 to 5 seconds. If using gas grill, preheat burners on high with hood closed 10 minutes, then turn down to moderately high.
  • Using electric spice grinder, pulse coriander seeds 2 to 3 times to crack. (Alternatively, place seeds on cutting board and crush lightly with small saut pan, using gentle rocking motion.) In large bowl, combine shrimp and scallions. Drizzle with oil and toss to coat. Sprinkle with coriander, salt, and pepper and toss to coat.
  • Thread shrimp and scallions onto skewers. Grill, turning once, until just cooked through, about 3 to 4 minutes per side. Arrange on platter and serve with dipping sauces.

Grilled Asian Chicken With Cilantro & Lime Dipping Sauce image

I found an interesting recipe on Epicurious and adapted it over time. You can check out the original here (http://www.epicurious.com/recipes/food/views/Grilled-Five-Spice-Chicken-105523). I made it a bit healthier by using boneless, skinless chicken, added some spices I like to the marinade, and boosted the flavor in the dipping sauce too. I'll admit that I really don't measure anything when I cook so all of the amounts are approximate. Don't sweat it - use more or less of things as you prefer. This comes together in a snap - I make the marinade in the morning before work and let it sit in the fridge all day. Then, when I get home, I pull it out to the counter and toast the star anise immediately. The dish comes together in 15 minutes from that point.

1 lb boneless chicken tenders
2 tablespoons vegetable oil
2 tablespoons soy sauce
3 tablespoons ginger, minced
2 tablespoons garlic, minced
1 1/2 tablespoons sugar
1 teaspoon salt

1 1/2 teaspoons Chinese five spice powder
1 teaspoon ground coriander
4 star anise pods
1 garlic clove, minced
1 teaspoon crushed red pepper flakes
1 1/2 tablespoons sugar
1/3 cup soy sauce, preferably low sodium
3 tablespoons fresh lime juice
1 tablespoon lime zest
1 teaspoon asian fish sauce
1 teaspoon rice vinegar
3 tablespoons water
3 tablespoons cilantro, chopped
2 tablespoons scallions, chopped

Steps:

  • In a large bowl, combine all the ingredients except the star anise and chicken. Stir well to blend. Add the chicken pieces and toss. Cover with plastic wrap or transfer to a zip log bag and marinate in the refrigerator for at least 4 hours (and ideally overnight).
  • Thirty minutes before cooking, remove the chicken and the marinade from the refrigerator, and allow to sit out at room temperature. Place the star anise pods in a dry, hot pan over medium high heat and toast for about 3 minutes. Remove from the pan and pound or grind in a spice grinder into a powder. Add the star anise powder to the chicken and marinade and stir well. Meanwhile, make the sauce by mixing all ingredients together in a small bowl.
  • Cook the chicken on a traditional grill for about ten minutes, or use a stovetop grill pan, sprayed with a little non-stick cooking spray. Alternatively, you could even broil the chicken on high, turning a couple of times for even browning.
  • Transfer to a serving platter and serve with the dipping sauce. This chicken is great with some rice to soak up the extra sauce and an Asian-style slaw, steamed sugar snap peas, or broccoli sautéed with some sesame seeds and red pepper strips. My husband loves this simple dish and it's a big hit with my kids too! It's also a great crowd pleaser at an outdoor BBQ. It's like comfort food, made just a little more exotic than usual!

six 1 1/4-pound live lobsters
3 garlic cloves
1/3 cup Asian fish sauce
1/3 cup fresh lime juice
1/3 cup packed brown sugar
3 tablespoons water
1 1/2 teaspoons Asian chili paste
1/4 cup packed fresh cilantro leaves
1/4 cup packed fresh mint leaves
Garnish: lime halves

Steps:

  • Bring an 8-quart kettle three fourths full with water to a boil for lobsters.
  • Mince garlic and in a bowl stir together with fish sauce, lime juice, brown sugar, water, and chili paste. Dipping sauce may be made up to this point 1 day ahead and chilled, covered.
  • Plunge 2 lobsters headfirst into boiling water and cook 3 minutes (lobsters will be only partially cooked). Transfer lobsters with tongs to a colander to drain and cool. Return water to a boil and cook remaining 4 lobsters in same manner.
  • When lobsters are cool enough to handle, twist off tails and break off claws at body of each lobster, discarding bodies. With kitchen shears halve tails (including shells) lengthwise. (Do not remove tail or claw meat from shells.) Lobsters may be prepared up to this point 1 day ahead and chilled, covered. (If making ahead, chill lobster immediately and keep chilled until ready to grill.)
  • Prepare grill.
  • Chop cilantro and mint and stir into dipping sauce. Measure out 1/4 cup dipping sauce to use for basting lobster tails. Grill claws on a rack set 5 to 6 inches over glowing coals, covered, turning them occasionally, until liquid bubbles at open ends, about 5 minutes, and transfer to a serving platter.
  • Arrange tails on grill, cut sides up, and brush with basting sauce. Grill tails, covered, basting occasionally, 6 minutes, or until meat is opaque.Serve lobster with dipping sauce and lime halves.

1 green onion, green part only, minced
2 teaspoons black sesame seeds, toasted (see note)

Steps:

  • 1. Combine all of the ingredients in a bowl. Cover and refrigerate for 30 minutes or longer to allow the flavors to meld.
  • 2. Use immediately, or store in the refrigerator in a tightly sealed glass container for up to 5 days.

1 clove garlic
2 fresh Thai bird chilies
2 1/2 tablespoons sugar
1/3 cup soy sauce, preferably Chinese style
2 1/2 tablespoons fresh lime juice with pulp
1/4 cup water, or to taste

Steps:

  • 1. Place the garlic, chilies and sugar in a mortar and pound into a paste. (You can also chop the garlic and chilies by hand.) Transfer to a small bowl and add the soy sauce, lime juice and water. Stir until well blended. This sauce will keep up to 3 weeks if stored in the refrigerator in a tight-lidded jar.
