BEEF AND PEPPER STIR-FRY



Beef and Pepper Stir-fry image

Beef and pepper stir-fry, seared over super high heat, is an easy, delicious weeknight dish. Add this beef and pepper stir fry to your weeknight rotation!

Number Of Ingredients 17

12 ounces flank steak ((sliced into thin strips))
¼ teaspoon baking soda ((optional tenderizer))
2 teaspoons soy sauce
½ teaspoon sesame oil
1 tablespoon cornstarch
1 teaspoon vegetable oil
2 tablespoons oil
3 cloves garlic ((sliced))
8 long hot green peppers ((de-seeded and julienned into 3-inch/8cm strips))
1 long hot red pepper ((de-seeded and julienned into 3-inch/8cm strips))
1 tablespoon Shaoxing wine
½ teaspoon salt
½ teaspoon sugar
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
1/8 teaspoon white pepper
¼ cup chicken stock ((optional))

Steps:

  • Add all the marinade ingredients to the beef in a bowl, mix well, and set aside for 30 minutes at room temperature.
  • When you're ready to cook, place a wok over high heat until it's almost smoking, then add the oil. Sear the beef until it's just browned but still a little rare. Turn off the heat while you transfer the beef to a separate bowl. Leave any oil/fat in the wok.
  • Heat the wok back up over medium-high heat and add the garlic and peppers. Stir-fry for 20 seconds, then spread the Shaoxing wine around the wok to de-glaze it.
  • Stir-fry for another 20 seconds and add the beef back to the wok along with any juices from the bowl. Add salt, sugar, light soy sauce, dark soy sauce, and white pepper. Turn the heat back up to high and stir-fry for another 1 to 2 minutes, or until the peppers turn darker.
  • If you like more sauce, add the chicken stock to further de-glaze the wok and reduce the liquid slightly. The cornstarch from the marinade will help thicken the sauce. Plate and serve immediately with rice.

2 onions, diced
1 clove garlic, minced
1 ½ tablespoons curry powder
2 ½ teaspoons salt
1 teaspoon ground turmeric
1 teaspoon cayenne pepper

¼ teaspoon ground ginger
½ cinnamon stick
1 pound ground beef
2 potatoes, diced
2 tomatoes, diced

Steps:

  • Melt butter in a large wok or skillet over high heat; saute onions and garlic until onions are almost transparent, about 5 minutes.
  • Combine curry powder, salt, turmeric, cayenne pepper, black pepper, ginger, and cinnamon in a bowl.
  • Stir ground beef into onion mixture and cook, breaking beef into small crumbles, until beef is cooked through and browned, 5 to 7 minutes. Add curry mixture to ground beef mixture and stir well.
  • Mix potatoes and tomatoes into ground beef mixture, reduce heat to medium, cover wok, and cook until potatoes are tender, about 20 minutes.

A recipe I found on www.allrecipes.com that I modified to fit my allergies and our tastes. We like our oriental food saucy, so I made extra sauce and added water chestnuts for DD. This has a kick to it from the ginger, red pepper flakes and the chili paste. Makes 6 1-cup servings. This is a WW friendly recipe, if you use 96% lean ground beef. Points value per serving as calculated on the WW website is 3.

3 cups bell peppers, chopped (I used a combination of red, yellow & green)
1 large onion, thinly sliced

2 medium-size sweet red peppers
2 medium-size green peppers
1 pound lean, tender beef, like fillet of beef or flank steak
2 tablespoons cornstarch
2 tablespoons dark soy sauce
1/4 teaspoon red hot-pepper flakes
1 cup corn or vegetable oil
1 cup coarsely chopped scallions
1 teaspoon chopped garlic
1 teaspoon sugar or honey
2 tablespoons dry sherry
2 tablespoons fresh or canned chicken broth
Salt to taste, if desired

Steps:

  • Core and remove the seeds from the red and green peppers. Cut peppers into thin strips about 1 1/2 inches long.
  • Slice the meat across the grain into thin strips 1 1/2 to 2 inches long. Place in a bowl and add the cornstarch, soy sauce and pepper flakes and 2 tablespoons of the oil. (The oil keeps the meat from sticking together while cooking.) Blend well and let stand 15 minutes.
  • Heat the remaining oil in a wok or skillet large enough to hold the ingredients. When the oil is very hot add the meat and cook, stirring, about 30 seconds until separated. Drain the meat in a sieve over a bowl to catch the drippings and reserve the oil.
  • Wipe out the wok and return 2 tablespoons of the oil to it. Heat the oil and add the peppers, scallions and garlic. Cook over high heat until crisp and tender, about 1 minute. Add the sugar, wine, chicken broth and salt if desired. Add the beef and cook quickly, stirring, until just heated through. Serve immediately.

  • Slice onion thin; put garlic through press and mince ginger; stir fry in hot oil in large skillet for one minute.
  • Cut peppers in strips; add to skillet and stir fry about 5 minutes, until crisp-tender.
  • Add soy sauce, vinegar and pepper and cook another minute. Serve.
