This salmon is marinated in a simple but super tasty Asian marinade and then broiled/grilled to produce a gorgeous caramelisation. Fast enough for midweek, fancy enough for company!

2 salmon fillets (, skinless (approximately 0.8 - 1lb / 400 - 500g))
1 tsp fresh ginger (, finely grated)
1 garlic clove (, crushed)
1 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp sweet chili sauce ((Note 1))
Sesame seeds
Scallions/shallots (, finely sliced)
Steamed Asian Greens
Rice

Steps:

  • Combine the Marinade ingredients in a shallow bowl. Add salmon and turn to coat. Cover and marinate for 30 minutes or up to overnight.
  • Heat grill/broiler on high. Place the rack 25 cm / 10" from the heat source.
  • Place salmon on baking tray (no oil required). Scrape all the excess glaze from the bowl onto the salmon.
  • Grill/broil for 7 to 10 minutes, until the top of the salmon is beautifully caramelised. Be careful not to overcook the salmon!
  • Serve salmon sprinkled with sesame seeds, scallions/shallots with rice and steamed Asian greens on the side.

3 lbs fresh salmon fillets
2 tablespoons Dijon mustard
3 tablespoons soy sauce
6 tablespoons olive oil
1/2 teaspoon minced garlic

Steps:

  • Heat grill and brush rack with olive oil to prevent fish from sticking.
  • Whisk together the mustard, soy sauce, olive oil and garlic.
  • Drizzle about half of the marinade onto the salmon and allow it to sit about 10 minutes.
  • Place salmon skin side down on the hot grill; discard the marinade the fish was sitting in.
  • Grill salmon approximately 4-5 minutes on each side (or longer as you prefer).
  • Transfer the fish to a plate, skin-side down, and spoon the remaining marinade on top.
  • Allow fish to rest about 10 minutes.
  • Remove the skin and serve.

1 tablespoon sesame oil
1 tablespoon reduced sodium soy sauce
1 tablespoon fresh ginger, minced
1 tablespoon rice wine vinegar
16 ounces salmon fillets

Steps:

  • In a shallow glass dish, combine sesame oil, soy sauce, ginger and vinegar.
  • Add salmon and turn to coat all sides. Refrigerate for 30 to 60 minutes, turning occasionally. Preheat the grill to medium-high heat.
  • Lightly oil the grill and place the salmon on the grill. Grill about 5 minutes per side. Test for doneness by placing a knife blade into the center to see if the pink flesh has become opaque.
  • Serve warm.

1 lb halibut steaks (may use cod, sea bass or other firm white fish
2 Tbsp butter
2 Tbsp honey or brown sugar
1 Tbsp fresh lemon juice
1 Tbsp soy sauce
1 tsp dijon style mustard
1/4 tsp minced fresh ginger
2 clove garlic
1/2 tsp fresh chopped chervil or other herb of your choice
salt and pepper to taste

Steps:

  • 1. In small saucepan, combine all ingredients, except the halibut. Over medium heat, mix until sugar is dissolved.
  • 2. Put Halibut in a non metalic pan or ziplock bag, pour marinade over fish. Marinate in fridge for about 30 mins. I make a double batch of marinade and seperate, one batch for marinating and one batch for basting.
  • 3. Oil grill grate and preheat grill. Place halibut steaks on grill and cook on each side for about 5 minutes, basting with marinade while fish is cooking.
  • 4. Grill until done, halibut should be opaque through to the middle and flake easily with a fork. Discard extra marinade that has had contact with the raw fish.
  • 5. Notes: Instead of mincing the garlic and ginger, I like to grate it. Seems the grating brings more flavor. I never add the salt I have never added the herbs I have made this with the honey or the brown sugar, very little taste difference. Actually, I used Splenda brown sugar. I have used the grill, oven broiler and grill pan on top of the stove to cook the fish for this recipe. They all work fine.

side fresh salmon, boned but skin on (about 3 pounds)
For the marinade:
2 tablespoons Dijon mustard
3 tablespoons good soy sauce
6 tablespoons good olive oil
1/2 teaspoon minced garlic

Steps:

  • Light charcoal briquettes in a grill and brush the grilling rack with oil to keep the salmon from sticking. While the grill is heating, lay the salmon skin side down on a cutting board and cut it crosswise into 4 equal pieces. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl. Drizzle half of the marinade onto the salmon and allow it to sit for 10 minutes. Place the salmon skin side down on the hot grill; discard the marinade the fish was sitting in. Grill for 4 to 5 minutes, depending on the thickness of the fish. Turn carefully with a wide spatula and grill for another 4 to 5 minutes. The salmon will be slightly raw in the center, but don't worry; it will keep cooking as it sits. Transfer the fish to a flat plate, skin side down, and spoon the reserved marinade on top. Allow the fish to rest for 10 minutes. Remove the skin and serve warm, at room temperature, or chilled.

2 lbs salmon or 2 lbs halibut fillets, cut into 4 equal pieces
3 tablespoons lemon juice
2 tablespoons olive oil
kosher salt
fresh ground pepper

Steps:

  • Rinse fish and pat dry. In a bowl, whisk together lemon juice and olive oil; pour into a zip lock bag. Add fish to bag, seal and turn to coat evenly. Chill 30 minutes.
  • Meanwhiule, cut 4 pieces of heavy foil, each slightly larger than the fish. Rub ONE side of each piece with oil. Arrange foil, oiled-side up on a large baking sheet.
  • Start grill and prepare for indirect-heat cooking.
  • Drain marinade from bag and discard. Place each piece of fish on a piece of foil (for salmon, place skin side down). Sprinkle with salt and pepper.
  • Transfer fish, on foil, to grill. Cover or close lid. Cook fish until opaque but still moist looking in center, about 20 minutes.
  • With spatula, transfer fish to plates. Serve with lemon wedges.

Steps:

  • Combine dressing and onions. Reserve 1/4 cup dressing mixture for later use.
  • Pour remaining dressing mixture over fish in shallow dish; turn to evenly coat both sides of each fillets with dressing mixture.
