2 tablespoons white wine vinegar
1 tablespoon reduced-sodium soy sauce
2 teaspoons olive oil
1/2 teaspoon dried parsley flakes
1/4 teaspoon sugar
1/8 teaspoon ground ginger
1 medium cucumber, thinly sliced
2 red onion slices, quartered

Steps:

  • In a small bowl, whisk the vinegar, soy sauce, oil, parsley, sugar and ginger. In a serving bowl, combine cucumber and onion. Add dressing and toss gently to coat. Refrigerate until serving.

Cool, crunchy cucumbers served with sweet tomatoes and red onion, coated in a sweet and salty asian vinaigrette :)

1/4 Cup Canola oil
2 tbsp Rice wine Vinegar
1 tbsp sodium reduced soy sauce
1 tsp garlic powder
1/2 tsp dried ginger
Pepper, to taste
2 Large tomatoes, sliced thin
1 Cucumber, sliced thin
1/4 red onion, sliced into thin sticks
Salt, to taste

Steps:

  • Combine the oil, vinegar, soy sauce, garlic powder dried ginger and pepper and half the green onion; mix well (I just shake it well using a mason jar).
  • As always, don't add the salt until you're ready to serve the tomatoes because the salt will make them smushy.
  • Layer the tomatoes, cucumbers and onion on a platter the drizzle the vinaigrette over the veggies evenly.
  • Let the vinaigrette sit for about 20 minutes the season it with salt and pepper; give it a mix.
  • Taste and adjust seasoning,
  • Serve immediately.

2 English seedless cucumbers
1/3 cup salt
water
1 1/3 cups sugar
1 cup white vinegar
1 teaspoon salt

Steps:

  • Trim off each end with shape knife making thin 1/8" slice from front to back. Repeat these steps until done. Place into a large bowl with 1/3 cup salt and water to cover the cucumber slices. Soak in the salt water for 30 minutes and drain the cucumber pieces and running cold water to wash off the salt water. Place into a colander to drain.
  • In a mixing bowl combine the sugar, vinegar and salt mixing well. In a serving dish add in the cucumber slices and sugar and vinegar mixture and combine together and place into refrigerator overnight. Serve chill.
