1 clove garlic, minced

1/2 teaspoon Vietnamese chile paste
8 cups chicken broth
12 ounces boneless, skinless chicken breast, cut crosswise into thin strips
4 cups chopped Chinese vegetables or Napa cabbage
1 (5-ounce) package rice noodles, prepared according to packing directions
1/2 cup chopped fresh cilantro leaves
6 scallions, thinly sliced on the bias

Steps:

  • Mix soy sauce, mirin, 1 teaspoon of the sesame oil, garlic, ginger, sugar, vinegar, and chile paste in a small bowl.
  • Heat the broth in a medium saucepan. Add the soy sauce mixture, the chicken, and the vegetables and bring to a boil. Simmer for two minutes or until chicken is cooked through. Add the remaining 1 teaspoon sesame oil. Taste and adjust seasonings.
  • Pour over prepared Chinese noodles. Garnish with cilantro and scallions.

4 boneless skinless chicken breasts
60ml sake (if you don't have sake, use vodka)
thumb-sized piece ginger , peeled and sliced into matchsticks
3 spring onions , finely sliced on the diagonal, and white and green parts separated
150ml soy sauce
4 tsp sesame oil
2 garlic cloves , grated
600g thick white noodles (such as udon)
2 large long red Serrano chillies , seeds left in and sliced on the diagonal
1 large egg , beaten
small pack coriander
2 tbsp toasted sesame seeds
seaweed flakes, to serve (optional)

Steps:

  • Slice the chicken breasts into strips about 1cm wide and the full length of the breast. Briefly marinate the chicken in the sake and leave to one side for a few mins.
  • Mix the ginger with the whites of the spring onions, soy sauce, sesame oil and garlic.
  • Put 2 litres of water in a saucepan and bring to the boil. Pour in the ginger soy mixture, reduce the heat and cook just below a simmer for 5 mins.
  • Add the chicken and sake mix, noodles and chillies to the stock and turn the heat up. As soon as the broth comes to the boil, turn off the heat. Slowly pour the egg into the broth, stirring all the time. Add the green parts of the spring onions and stir through. Leave to sit for 2 mins.
  • Ladle the soup evenly into six bowls. Sprinkle with the toasted sesame seeds and coriander, with a few seaweed flakes, if you like.

1 tablespoon sesame oil
3 medium carrots, sliced
2 celery ribs, chopped

6 cups chicken broth

1/4 cup chili garlic sauce
1 package (14 ounces) wonton wrappers, cut into 1/4-inch strips
2 cups sliced fresh shiitake mushrooms

Steps:

  • In a Dutch oven, cook chicken in oil over medium heat until no longer pink. Remove and keep warm. In the same pan, saute the carrots, celery and onion until tender. 2 carrots, roughly chopped
2 stalks celery, thinly sliced
3 tablespoons finely chopped peeled fresh ginger
3 scallions, sliced
Kosher salt and freshly ground pepper
1 pound thin chicken cutlets
4 cups low-sodium chicken broth
4 pods star anise
4 ounces spaghetti, broken into thirds
16 frozen mini wontons or 12 frozen vegetable dumplings
4 cups baby spinach

Steps:

  • Heat 1 tablespoon sesame oil in a large pot over medium-high heat. Add the carrots, celery and ginger; stir in the scallions, reserving 2 tablespoons scallion greens. Season the vegetables with a pinch each of salt and pepper and cook, stirring occasionally, until the ginger softens, about 2 minutes.
  • Season the chicken with salt and pepper and add to the pot along with the chicken broth and star anise. Cover and bring to a simmer over high heat, about 5 minutes. Reduce the heat to maintain a simmer, cover and cook until the chicken is just cooked through, 6 to 8 minutes. Remove the chicken with tongs and transfer to a cutting board; let cool slightly, then shred.

Chicken is the favoured meat of choice for most Asian soups & a simple, but rich stock is key to success. This curried soup combines them with coconut milk plus simple ingredients & an easy prep to create a tasty soup course (or 1-dish meal at your option). To allow for health issues & pers pref(s), no salt or soy sauce is added to the soup, but soy sauce is served at the table for individual use. The amt of curry paste also allows for pers pref(s). (Times do not include time for meat & stock to cool separately) - Edited to Add: This recipe owes its connection to the featured countries of ZWT-9 to the use of coconut milk which I found to be common to all the countries plus the Thai curry paste ingredient.

1 whole chicken (rinsed well & cut in usual pieces)
2 (14 ounce) cans coconut milk
1/4-1/2 cup Thai curry paste (may use red or green, may sub curry powder as needed)
4 carrots (scraped or peeled & cut in 1/4 inch coins)
4 white onions (coarsely cut in bite-size pieces)
4 ounces snow peas (optional add to soup)
8 ounces rice noodles
1/4 cup cilantro (coarsely chopped for garnish, may use chopped parsley or sliced green onion)
soy sauce (optional add at table)

Steps:

  • Rinse chicken pieces well and place in bottom of large stockpot or Dutch oven. Cover with water and simmer 45 minutes (covered).
  • Remove chicken to large bowl or platter. Allow both chicken and stock to fully cool.
  • While stock and chicken are cooling, prepare carrots and onions as directed and set aside.
  • When stock has fully cooled, skim any foamy residue or congealed fat from surface of stock and discard. Strain stock through a fine sieve and return to stockpot.
  • When chicken has fully cooled, remove and discard skin. Debone chicken, shred chicken meat as you go and return chicken meat to stockpot.
  • Add 2 cans coconut milk, carrot coins, onion pieces and 1/4 cup (red or green) Thai curry paste to stockpot (or curry powder to taste if using). Stir well to combine flavors.
  • Taste soup and adjust heat level - curry flavour according to your preferences with the addition of more curry paste (If using curry powder, you have already done this in Step 6 above).
  • Over low heat, slowly return soup to a simmer and cook (uncovered) for 20 minutes.
  • While soup is in final cooking stage, prepare rice noodles per package directions, drain well, rinse and set aside.
  • If using snow peas as optional add, rinse well and add to simmering soup when 1 min of cooking time remains. When cooking is complete, remove soup from heat source & serve immediately.
  • Place equal amount of rice noodles in the bottom of individual soup bowls, ladle soup over noodles, garnish as desired and serve with a small dish of soy sauce on the table.

4 large garlic cloves, minced
1 1/4 inches fresh ginger, minced
1 large egg, beaten

1/2 teaspoon fresh ground black pepper
1 lb ground chicken
1/2 lb ground pork
1 cup plain breadcrumbs
12 cups frankie's chicken stock
1 teaspoon garlic powder

1 whole star anise
4 dried shiitake mushrooms
3 medium carrots, sliced
3 baby bok choy, quartered lenghtwise
8 ounces thin rice sticks

Steps:

  • Preheat the oven to 400°F. Line a baking pan with aluminum foil and set aside. Finely chop 1 scallion and slice the other 2 into 1 inch bias. In a large bowl, whisk together the chopped scallions, garlic, ginger, egg, soy sauce, oil, five spice, salt and pepper. Add in the chicken, pork and bread crumbs and mix well. Form the mixture into ¾ inch meatballs and place on the prepared baking pan. Place in the oven and bake for about 8 to 10 min, or until lightly browned. Remove and set aside.
  • In the meantime, in a Dutch oven, over high heat, bring the stock to a boil. Lower heat to low, add in the garlic powder, ground ginger, star anise and mushrooms and simmer gently for 10 to 15 min, or until the mushrooms are hydrated and tender. Remove the star anise. Add in the carrots, bok choy and meatballs and simmer until tender, about 10 minute.
  • Cook the rice sticks according to package directions. Drain and evenly divide the noodles amoung 6 large bowls. Thinly slice the mushrooms then arrange the carrots, bok choy, mushrooms and meatballs on top of the noodles. Ladle in the broth, garnish with remaining scallions and serve.

1 tablespoon vegetable oil
10 button mushrooms, sliced thin
10 small oyster mushrooms, sliced thin
1 (3 ounce) package enoki mushrooms, roots removed
¼ cup chopped onion
¼ cup chopped celery
¼ cup chopped green bell pepper
¼ cup chopped carrot
3 cloves garlic, smashed
salt and pepper to taste
2 (14.5 ounce) cans chicken broth
1 (15 ounce) can cream-style corn
1 (5 ounce) can chunk white chicken (such as Swanson®), drained
1 tablespoon rice wine vinegar
2 teaspoons Chinese five-spice powder
1 tablespoon cornstarch
½ cup cold milk
15 leaves fresh Thai basil, chopped

Steps:

  • Heat the vegetable oil in a large pot over medium-high heat. Stir in the button mushrooms, oyster mushrooms, and enoki mushrooms; cook and stir until lightly browned. Add the onion, celery, green bell pepper, carrot, and garlic. Season with salt and pepper. Cook and stir for 3 to 4 minutes. Mix in the chicken broth, cream-style corn, chicken, rice wine vinegar, and five-spice powder, and bring to boil. Cover and reduce heat to medium-low. Simmer for about 20 minutes. Mix cornstarch with the milk in a small bowl, and stir into the soup. Stir until soup has thickened. Garnish each serving with chopped basil.

1 half chicken, breast and leg meat
4 cups low sodium canned chicken stock, warmed
1/2 cup soy sauce
2 tablespoons minced ginger
2 scallions, sliced
2 cloves garlic, minced
1/2 pound fresh spinach, chopped
2 tablespoons peanut or vegetable oil
1 carrot, shredded
4 ounces Angel hair pasta

Steps:

  • Remove chicken meat from bones and cut into 1 inch pieces. In a bowl combine soy sauce, ginger and garlic. Add chicken and stir to coat. Marinate for 30 minutes. In a heavy saucepan, heat oil over medium high heat. Add chicken pieces, reserving the marinade. Quickly cook the chicken, stirring constantly. Add the reserved marinade and bring to a simmer. Add hot chicken stock and bring to a simmer. Stir in scallions, spinach and carrot. Break pasta into 4'' pieces and add to the pot. Let simmer for 10 minutes. Serve immediately.

Coarse salt and ground pepper
8 ounces rice noodles
2 cans (14.5 ounces each) reduced-sodium chicken broth
1 piece fresh lemongrass (3 inches), smashed, or 3 sticks dried lemongrass
1 piece peeled fresh ginger (1 inch), cut into matchsticks
2 boneless, skinless chicken breast halves (6 to 8 ounces each), thinly sliced crosswise
8 ounces snow peas, trimmed and halved
2 tablespoons fresh lime juice, plus lime wedges for serving
1/4 cup fresh mint leaves
Asian chile sauce (such as Sriracha), for serving (optional)

Steps:

  • In a large pot of boiling salted water, cook noodles according to package instructions. Drain noodles. In a saucepan, combine chicken broth, lemongrass, ginger, and 3 cups water. Bring to a boil; reduce to a simmer, cover, and cook until fragrant, 10 minutes.
  • Using a fine-mesh sieve, strain broth and return to saucepan. Add chicken and snow peas and simmer until chicken is cooked through and snow peas are crisp-tender, 2 to 4 minutes.
  • Remove soup from heat and stir in lime juice. Season with salt and pepper. To serve, pour soup over noodles. Top with mint, lime wedges, and chile sauce if desired.

3 1/2 cups chicken broth (for a lighter chicken flavor use 2-1/2 cups broth and 1 cup water)
2 cups sliced fresh mushrooms
1/2-3/4 cup sliced bamboo shoot, drained
3 slices fresh peeled gingerroot
3 garlic cloves, minced
2 teaspoons soy sauce
1/2 teaspoon crushed red pepper flakes (or adjust to heat level)
1 lb boneless skinless chicken breast, cut into thin strips
1 tablespoon sesame oil
3 tablespoons rice wine vinegar or 3 tablespoons red wine vinegar
2 tablespoons cornstarch (for a thicker consistency use 3 tablespoons)
1 large egg, beaten
2 large green onions, chopped

Steps:

  • In a medium saucepan combine the chicken broth, mushrooms, bamboo shoots, sliced ginger, garlic, soy sauce and chili flakes; bring to a boil, reduce heat to low and simmer while you assemble the other ingredients.
  • Place the chicken strips in a bowl and toss with the sesame oil.
  • In another bowl stir together the cornstarch and vinegar; set aside.
  • Increase the broth heat to medium-high and return to a full boil; add in the coated chicken slices and return to a boil again, then drizzle in the egg while stirring slowly to create long strands of egg.
  • Stir in the vinegar/cornstarch mixture; simmer over medium heat stirring occasionally until the chicken is cooked through and the broth has thickened slightly (about 3-4 minutes).
  • Garnish the top with chopped green onions.

I love one-dish meals and this fantastic soup fits the bill. Adjust the heat to your taste and substitute other noodles like rice noodles if you like. For those who don't like cilantro use basil in a smaller amount, and please don't leave out the lime juice! Adapted from a Food and Wine cookbook.

1 tablespoon oil
1 tablespoon sesame oil
1 onion, chopped
2 celery ribs, sliced 1/4 inch
4 garlic cloves, minced
1 tablespoon fresh ginger, minced
2 tablespoons chili powder
1/8 teaspoon red pepper flakes (add more if you like a lot of heat)
1 1/2 quarts chicken broth
1 cup crushed tomatoes (from a can)
1 1/2 lbs boneless skinless chicken thighs, cut into bite-sized pieces
3 tablespoons fish sauce (nam pla or nuoc mam)
1/2 cup cilantro leaf, chopped
3/4 lb spaghettini or 3/4 lb rice noodles
1/2 lb bok choy, sliced 1/4 inch (add more if you like)
1/2 lime, juice of
1/4 cup fresh cilantro, chopped, for garnish

Steps:

  • In a large pot heat oils over medium heat.
  • Add onion, celery, garlic, ginger, chili powder and red pepper flakes. Reduce heat to medium low and cook for 5 minutes, stirring now and then.
  • Add the broth, tomatoes, chicken, fish sauce, 1/2 cup cilantro and bring to a simmer. Cook, covered, for 1/2 hour.
  • While the soup cooks bring a pot of water to boil and cook the spaghettini to al dente. Drain.
  • Add spaghettini, bok choy and lime juice to the soup. Cook for 5 minutes.
  • Garnish with the 1/4 cup cilantro and serve.

This is an authentic, 'home-style' dish served in Taiwanese homes. You can vary the easy-to-buy ingredients however you want to yield as many servings as you want. Try adding a couple of tablespoons of whole kernel corn. Super easy to make, kids can do it too! Tender noodles coupled with subtle chicken broth, all with succulent pieces of chicken, exotic shitake mushrooms and a slow-simmered egg ... my favorite rainy-day meal!

4 ounces dry Chinese noodles
1 (14.5 ounce) can chicken broth
6 shiitake mushrooms, sliced
2 green onions, chopped
1 skinless, boneless chicken breast half
2 eggs

Steps:

  • Bring a large pot of water to a boil. Stir noodles into boiling water and cook until al dente, 8 to 10 minutes. (For a chewier texture, shock the noodles by pouring 1 cup cold water into the pot when it starts to foam, then letting it come to a boil again to finish cooking.) Drain and divide into two serving bowls.
  • Meanwhile, bring chicken broth to boil in a medium saucepan with mushrooms and green onions. Cut chicken into bite-sized pieces and stir into boiling broth. When broth returns to a boil, crack eggs into broth. Continue to cook until chicken is no longer pink and eggs are cooked, about 10 minutes. Pour the chicken soup over the noodles in the bowls and serve immediately.
