1 large broccoli (or 2-3 crowns) cut into bite sized pieces
4 scallions - chopped
2 clove garlic - minced
1 Tbsp sesame oil
4 Tbsp oyster sauce

Steps:

  • 1. Combine all ingredients on a piece of heavy duty aluminum heavy duty foil - shiny side up - large enough to leave 2-3 inches of clear foil on either side and 4-5 inches top and bottom of your vegetable pile
  • 2. Bring the top and bottom edges of the foil together and fold over several times, leaving some air space between broccoli and foil.
  • 3. Repeat with each side of your foil package until a sealed pouch is formed
  • 4. Cook pouch indirectly on the grill - meaning lid closed, but on an upper rack, over a non-burning element, or to the side of your burning charcoal - for 10-12 mins, Flip the pouch over at the halfway mark. Total cooking time will vary with heat level of BBQ/fire
  • 5. When broccoli is cooked, the pouch will swell up with steam. Note - this will only work if your pouch is well sealed and you haven't accidentally poked a hole in it during handling

EASY GRILLED BROCCOLI

A simple recipe for grilled broccoli with a hint of spice if you choose. This is the prefect side dish you can throw on the grill after you pull the meat up to rest.

1 pound Broccoli, raw
1 ½ tablespoons olive oil
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch red pepper flakes

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place broccoli florets in a large bowl. Drizzle olive oil over the broccoli and toss to coat. Add salt, pepper, and crushed red pepper and toss to coat again.
  • Place broccoli in a grill basket and grill, turning occasionally, until tender-crisp, about 10 minutes.

This is my favorite way to eat broccoli. I make this on the grill but I'm sure it would be just as good in the oven.

1 (16 ounce) bag frozen broccoli
1 tablespoon cornstarch
1 teaspoon granulated sugar
1/8 teaspoon salt
1/2 cup chicken broth
2 tablespoons light soy sauce

Steps:

  • In a small bowl, combine cornstarch, sugar, and salt. Add chicken broth and soy sauce, stirring until smooth; set aside.
  • Place broccoli in a 13X9 pan greased with cooking spray.
  • Pour liquid mixture over broccoli.
  • Cover with aluminum foil and cook for 20 minutes at 400 degrees.

2 heads broccoli (1 1/2 to 2 pounds), cut into florets, stems trimmed and cut into slices 1/4-inch thick
2 teaspoons kosher salt
1/4 teaspoon black pepper
1 1/2 teaspoons ground ginger
Pinch red pepper flakes
3 garlic cloves, smashed and peeled
1/4 cup olive oil
3 scallions, chopped (about 1/4 cup)
1/4 cup coarsely chopped fresh cilantro
5 large fresh basil leaves, torn
2 tablespoons coarsely chopped fresh mint
1/4 cup rice wine vinegar
2 tablespoons fresh lime juice
2 tablespoons olive oil
2 teaspoons toasted sesame oil
1 teaspoon soy sauce
1 teaspoon fish sauce, optional
1 teaspoon sriracha hot sauce, optional

Steps:

  • Heat oven to 450 degrees. Put broccoli in a bowl and season with salt, black pepper, ginger and red pepper flakes. Toss with garlic cloves and oil. Spread broccoli on a baking sheet and roast for 15 to 20 minutes, until tender and lightly browned. Discard garlic cloves. While broccoli roasts, combine scallions, cilantro, basil and mint in a large bowl.
  • Make the vinaigrette: In a small bowl, combine rice wine vinegar, lime juice, olive oil, sesame oil, soy sauce and, if you want a stronger-flavored dish, fish sauce and sriracha. Whisk until emulsified.
  • Add cooked broccoli to the large bowl with the herbs and toss. Add vinaigrette, to taste, and toss. Serve warm or at room temperature.
