2 teaspoons vegetable oil
1 cup chopped onion
2 teaspoons garlic
1 cup nonfat chicken broth
3 cups black beans
2 tablespoons soy sauce
1/8 teaspoon red pepper flakes
1/8 teaspoon coriander
2 tablespoons orange juice
4 tablespoons low-fat sour cream
2 tablespoons chopped scallions

Steps:

  • Sauté onions and garlic in oil for 5 minutes.
  • Add the next 5 ingredients plus ¾ cup water.
  • Bring to a boil.
  • Simmer for 20 minutes.
  • Puree ¾ of the soup and return.
  • Stir in orange juice.
  • Simmer 5 minutes.

2 t vegetable oil
1 C chopped onions
2 t chopped garlic
1 C nonfat, reduced-sodium chicken broth
3 C canned black beans, rinsed and drained
2 T reduced-sodium soy sauce
1/8 t crushed red-pepper flakes
1/8 t coriander
2 T orange juice
4 T reduced-fat sour cream
2 T chopped scallions

Steps:

  • 1. Heat the oil in a 4 -5 qt pot over M heat. Add the onions and garlic and cook 5 minutes, stirring occasionally. Add broth, beans, soy sauce, red-pepper flakes, coriander, and 3/4 C water. Bring the soup to a boil reduce the heat, and simmer, uncovered, 20 minutes. 2. Puree about 3/4 of the soup in a blender or food processor until smooth. Return the pureed soup to the pot and stir in the orange juice. Simmer soup for 5 minutes. 3. Top soup with the sour cream and scallions.
