ASIAGO-PEPPER FRICO (CRISPY CHEESE WAFERS)
This is such an easy and different appetizer that can be made with a variety of cheese blends. The Asiago is especially yummy! It's from Bon Appetit magazine.

Steps:
- Preheat oven to 350 degrees.
- Line 2 large baking sheets with parchment paper. Mix cheese, black pepper, and cayenne pepper in small bowl. Spoon cheese mixture by generous tablespoons in 6 mounds on each prepared baking sheet, spacing 3 inches apart. Using fingers, spread each mond evenly to 2 1/2" round.
- Bake frico until deep golden brown and crisp, about 12 minutes. Remove from oven. Slide parchment with frico onto ork surface and cool 5 minutes. Slide thin metal spatula under frico to loosen. Cool frico completely on parchment.
- Can be prepared 1 day ahead. Store in airtight container in single layer at room remperature.

This may well be the world's easiest recipe, and it's so good! These little cheese crisps are great in salads or served alongside soup... and make any plate look fancy. If you want them to curl for an even fancier effect, let them cool around your rolling pin... gives a great shape.

ASIAGO FRICO

Yield Makes 2 dozen 4-inch fricos

Steps:
- In a medium bowl, toss cheese and flour together. Heat a medium nonstick skillet over medium-low heat. Sprinkle 1 1/2 tablespoons of the cheese mixture into the pan to form a circle about 4 inches in diameter.
- Cook until the cheese is somewhat melted but not firm, about 2 minutes. Using a spatula, turn the cheese over, and cook until it is visibly firm and just taking on a little color, 30 seconds to 1 minute.
- Transfer the frico from the pan to a paper towel, and hold it in the palm of your hand. Press an offset spatula down the middle to form a taco shape. Transfer to paper towels to cool. Repeat with remaining cheese. Store at room temperature in an airtight container for 2 to 3 days.
