This recipe is part of a personal quest of coming up with easy, fat free alternatives to artery-clogging old school heavies. If you substitute or vary ingredients sensibly, it will probably be hard to go wrong. Garlic and salt should be adjusted to taste.

2 lbs baby yukon gold potatoes
16 ounces fat free sour cream
1 teaspoon minced garlic clove
1/2 teaspoon salt

Steps:

  • Wash and boil potatoes in water until appropriately tender.
  • While potatoes are boiling, add sour cream, garlic and salt to suitably-sized bowl and stir until well combined.
  • Preheat oven to 350°F.
  • Drain potatoes and mash using masher.
  • Add sour cream mixture to mashed potatoes and mash and stir until well combined.
  • Transfer everything to oven-safe baking/serving dish (depth of potatoes should be about 3 inches).
  • Bake for 15 minutes to serve hot.

Best ever creamy mashed potatoes image

Make everyone's favourite side dish, creamy mashed potatoes. This simple recipe results in fluffy, comforting mash that the whole family will love

1 kg floury potatoes (like Maris Piper), cut into chunks
50g Yeo Valley Organic salted butter, plus 1 tbsp
50g whole milk

Steps:

  • Tip the potatoes into a large pan, cover with cold water and sprinkle with a generous pinch of salt. Set the pan over a high heat and bring to the boil. Once boiling, reduce the heat to a simmer and cook for 15-20 mins until the potatoes are very tender - they should be able to be easily pierced with the tip of a knife. Drain well, then return to the pan and leave to steam-dry for 5 mins.
  • Pass the potatoes through a ricer into a large bowl for a lump-free mash (you may need to do this in batches). Alternatively, mash with a potato masher until smooth, then press through a sieve using the back of a spoon to get rid of any remaining lumps.
  • Tip the 50g Yeo Valley Organic salted butter, the milk and some seasoning into the bowl with the hot mash. Beat everything together with a wooden spoon or spatula until the butter has melted and the mixture is smooth and creamy. Add a splash more milk to loosen, if needed. Top with the remaining 1 tbsp butter and leave it to melt for a few seconds before serving.

A lot of flavor and nutritionion without the fat of butter and cream. YAY, mashed spuds again! Feel free to use some fat free chicken broth with or for the water if you like.

4 medium baking potatoes, scrubbed (about 1 1/2 pounds)
1 1/4 cups water
4 garlic cloves, minced
4 tablespoons parsley, chopped
3 dashes Tabasco sauce
1 teaspoon salt
1 teaspoon yellow mustard
2 teaspoons grainy mustard
2 teaspoons prepared horseradish
1/4 cup nonfat sour cream

Steps:

  • Pare the potatoes or leave skin on, according to taste.
  • Cut into 1 inch cubes, and place in heavy medium saucepan.
  • Add water, garlic, parsley, Tabasco and salt, bring to a boil over medium-high heat.
  • Reduce heat, cover and let cook for about 20 minutes, stirring and breaking potatoes up with a fork.
  • Add more hot water if potatoes seem too dry.
  • Continue stirring and mashing potatoes for about 5 minutes until the water is absorbed and the potatoes are soft and lumpy.
  • Remove from heat, stir in the mustards, horseradish and sour cream.
  • Note: If there are any leftovers, use for a great potato salad by adding chopped onion, celery, pickles, hard cooked eggs and some fat-free mayonnaise or sour cream. As good as mashed potatoes (But Fat Free!) uses a unique combination of garlic, Tabasco, mustard and horseradish to spice up an American favorite.
