12 ounces good feta cheese, 1/2-inch diced
1 cup (4 ounces) whole fresh mint leaves, julienned

  • Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.

Watermelon Salad With Arugula And Feta Recipe by Tasty image

Here's what you need: small watermelon, fresh arugula, feta cheese, fresh lime juice, water, honey, salt, extra virgin olive oil

Provided by Joey Firoben

Categories     Lunch

Yield 6 servings

Number Of Ingredients 8

1 small watermelon
3 cups fresh arugula
4 oz feta cheese, crumbled
3 tablespoons fresh lime juice
1 tablespoon water
2 tablespoons honey
salt, to taste
3 tablespoons extra virgin olive oil

Steps:

  • Using a sharp knife, cut off the top and bottom of the watermelon to reveal the red flesh and create flat surfaces on both sides. Stand the watermelon upright, and slice off the remaining peel so only the red core remains.
  • Cut the watermelon into roughly 1-inch (2 cm) cubes and transfer to a large bowl.
  • In a small bowl, whisk together the lime juice, water, honey, and salt.
  • While whisking, gradually add the oil in a very slow, steady stream to create an emulsification. Set aside.
  • Add the arugula, feta, and honey lime dressing to the large bowl with the watermelon.
  • Toss the salad until well-combined, then divide between serving bowls.
  • Enjoy!
