2 cups torn red leaf lettuce
1 1/4 cups fresh figs, quartered
1 cup trimmed arugula
2 tablespoons fresh lemon juice
2 teaspoons olive oil
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 tablespoons crumbled blue cheese

Steps:

  • Combine first 3 ingredients in a large bowl. Combine lemon juice, oil, salt, and pepper; stir well with a whisk.
  • Gently toss lettuce mixture with lemon juice mixture.
  • Sprinkle with bleu cheese.
  • Sometimes I just use field greens with this salad if I can't find the other .
  • I have also added candied pecans, yellow raisins and dried cranberries which was also a hit.

Spinach, Arugula, and Frisee Salad with Bleu Cheese Dressing, Fresh Tomatoes, and Crispy Bacon image

1 tablespoon canola oil
1 small yellow onion, cut into small dice
2 cups sour cream
1 cup prepared mayonnaise
8 ounces bleu cheese, crumbled (recommended: Point Reyes)
2 tablespoons fresh sage, finely chopped
1/2 to 1 1/2 cups buttermilk
Kosher salt and freshly ground black pepper

2 cups fresh baby spinach, washed and dried
1 cup fresh baby arugula, washed and dried
2 frisee hearts, washed and dried
1 cup seeded and small diced tomato
1 cup cooked crisp and diced bacon

Steps:

  • In a small saute pan, over medium heat, heat the oil and cook the onion until lightly browned. Lower the heat and cook until caramelized, about 10 more minutes, stirring occasionally. Remove from the heat and set aside to cool.
  • In a large bowl, combine the sour cream, mayonnaise, blue cheese, and sage. If the dressing is too thick, loosen the dressing by pouring in a little more of the buttermilk. You want the dressing to be pourable. Season the dressing with salt, and pepper, to taste.
  • Combine the spinach, arugula, frisee, tomato, and bacon in a large bowl and dress gently with a few spoonfuls of blue cheese dressing. Add more dressing to taste, but don't overdress the greens. Season the salad with salt, and pepper, to taste.

Arugula Salad with Prosciutto, Blue Cheese, and Pear image

This is a simple but elegant salad when plated correctly.

1 bunch fresh chives
½ cup olive oil
4 cups baby arugula
4 slices prosciutto, chopped, or more to taste
½ cup crumbled blue cheese (such as Point Reyes®)
2 medium Bosc pears
¼ cup balsamic vinegar glaze (such as Trader Joe's®)

Steps:

  • Coarsely chop chives and put in a food processor. Add olive oil and purée for 1 minute. Transfer to a squeeze bottle dispenser and set aside.
  • Evenly distribute arugula onto 4 medium plates. Top with prosciutto and blue cheese.
  • Peel and core pears, then cut in half. Cut each half into thin slices and add to plates in a fan shape.
  • Drizzle chive olive oil over each salad and decoratively add some to the sides of the plates. Repeat with balsamic glaze.

This is just so simple and easy to do but is full of flavour as well. I did use pine nuts when I made this and they worked out quite well. I would suggest a good robust blue for this or Gorgonzola.

60 g butter
3 tablespoons white wine vinegar
1 tablespoon palm sugar (can use brown sugar)
2 firm brown pears (quartered and cored)
1/2 cup walnuts
100 g rocket (arugula)
150 g soft blue cheese, sliced

Steps:

  • Place the butter, vinegar and sugar in a frying pan over medium heat.
  • When butter is melted add the pear and walnuts and cook for 4-6 minutes until the pear is just soft.
  • Place the rocket on serving plates and top with the pear and walnuts.
  • Spoon over the pan juices and top with the blue cheese.

Tomato, Fresh Fig and Blue Cheese Salad image

Whether you get them from your backyard garden or the local farmers' market, tomatoes are one of summer's sweetest staples. In the kitchen, one of the best things a cook can do with a surfeit of ripe summer tomatoes is not to cook them. With such tasty beauties available (and given the tomato-pleasing heat), salads make more sense. Start simply by slicing big tomatoes into rounds and cutting smaller ones into wedges and the cherry and grape varieties in half. Very gently toss them with fresh herbs, balsamic vinegar, olive oil and good salt. Use whatever you've got to hand to dress up the pile. Here, we've used some crumbled blue cheese for tang, fresh figs for sweetness and a sprinkle of toasted pine nuts for crunch.
